Available in PDF, EPUB and Kindle. Book excerpt: Data were analyzed using the MIXED procedure of SASutilizing animal as the experimental unit. Significance was determined at P [greater than] 0.05. Hot carcass weight tended (P = 0.14) to be lower for the 100 mg/hd/d group compared to the control. Dressing percent tended (P = 0.19) to be lower for the 200 mg/hd/d group compared to the control. There were no differences in ribeye area, or percent intramuscular fat. There was a trend (P = 0.11) for percent fat-free lean to increase as ractopamine-HCl dose increased. Ractopamine-HCl had minimal effects on meat tenderness overall for the nine muscles evaluated. The 200 mg/hd/d VAL type I fiber increased in cross sectional area and diameter. SMB and VAL fibers underwent a fiber-type shift from type I fiber to type II fiber in the 200 mg/hd/d group. In conclusion, feeding ractopamine-HCl at the 100, 200, or 300 mg/hd/d level to cull beef cows has little to no effect on carcass characteristics in comparison to feeding with the exclusion of ractopamine-HCl, but ractopamine did have some minimal effects on total fat-free lean percentage and WBSF values. An unexpected histological change was observed in muscle fiber which has not been reported in cull cows treated with ractopamine-HCl.

Book excerpt: Sixty cull cows were utilized to investigate the effects of feeding a single or sequence of [Beta]-adrenergic agonists ([Beta]-AA) on performance, mRNA expression, carcass traits, economics, meat palatability, and ground beef color. Treatments included: 1) concentrate fed for 74 d (C); 2) concentrate fed for 49 d then supplemented with ractopamine-HCl for 25 d (RH); 3) concentrate fed for 51 d then supplemented with zilpaterol-HCl for 20 d (ZH); 4), concentrate fed for 26 d then supplemented with RH for 25 d followed by ZH for 20 d (RH + ZH). No differences existed among treatments for performance or carcass characteristics. However, cows supplemented with ZH (ZH and RH + ZH treatments) had increased LM areas (P = 0.18) compared to control and RH cows. Sequential feeding of RH followed by ZH had no influence on [Beta]2-adrenergic receptor (AR) mRNA expression. However, [Beta]2-AR mRNA was increased (P

Available in PDF, EPUB and Kindle. Book excerpt: New Aspects of Meat Quality: From Genes to Ethics provides a reference source that covers what constitutes meat quality in the minds of consumers, marketers, and producers in the 21st century, using the same scientific authority as texts on traditional meat quality values. Traditional measures in meat quality, such as texture, waterholding, color, flavor/aroma, safety/microbiology, and processing characteristics are still important, however, additional quality attributes now have huge importance in the purchasing intentions of consumers in many countries. These include, amongst others, animal welfare, the impacts of meat on human health, quality assurance schemes, organic/free range, ethical meat production, and the desirability of genetically modified organisms. The book is divided into three main sections, with the first section covering the developments in our understanding of how muscle structure affects the eating qualities of cooked meat. The second section highlights recently developed techniques for measuring, predicting, and producing meat quality, and how these new techniques help us minimize variability in eating quality and/or maximize value. The final section identifies the current qualities of consumer and public perceptions, and what is sustainable, ethical, desirable, and healthy in meat production and consumption. Brings together top researchers in the field to provide a comprehensive overview of the new elements of meat quality Provides a reference source that covers the new aspects of meat quality with the same scientific authority as texts on traditional meat quality values“/li> Edited by an extremely well respected expert in the field who is an Associate Editor of the journal Meat Science (published by Elsevier), the largest global journal within this area

Book excerpt: Air Emissions from Animal Feeding Operations: Current Knowledge, Future Needs discusses the need for the U.S. Environmental Protection Agency to implement a new method for estimating the amount of ammonia, nitrous oxide, methane, and other pollutants emitted from livestock and poultry farms, and for determining how these emissions are dispersed in the atmosphere. The committee calls for the EPA and the U.S. Department of Agriculture to establish a joint council to coordinate and oversee short - and long-term research to estimate emissions from animal feeding operations accurately and to develop mitigation strategies. Their recommendation was for the joint council to focus its efforts first on those pollutants that pose the greatest risk to the environment and public health.

It frames the great importance of feed efficiency to the industry and details the latest findings of the many scientific disciplines that intersect and aim to improve efficient and sustainable production of nutritious beef. The vast majority of production costs are directly tied to feed. With increased demand for grains to feed a rapidly increasing world population and to supply a new demand for alternative fuels, feed costs continue to increase. In recent years, the negative environmental impacts of inefficient feeding have also been realized; as such feed efficiency is an important factor in both economic viability and environmental sustainability of cattle production. Feed Efficiency in the Beef Industry covers a broad range of topics ranging from economic evaluation of feed efficiency to the physiological and genetic bases of efficient conversion of feed to high quality beef. Chapters also look at how a fuller understanding of feed efficiency is leading to new selective breeding efforts to develop more efficient cattle. With wide-ranging coverage from leading international researchers, Feed Efficiency will be a valuable resource for producers who wish to understand the complexities, challenges, and opportunities to reduce their cost of production, for students studying the topic and for researchers and professionals working in the beef industry.

Book excerpt: Quality of feed nutrition is influenced not only by the content but also by some other aspects such as, feed presentation, hygiene, anti-nutritional factors, digestibility and palatability. Feed additives provide a mechanism by which such dietary deficiencies can be addressed and also benefits not only associated with the nutrition and thus the growth rate of the animal concerned, but also its health and welfare. Feed additives could modify animal metabolism in specific and direct ways by improving production efficiency (weight gain or milk yield); improving carcass composition in growing animals; increasing milk yield in lactating animals; and decreasing animal waste per production unit. This book discusses the impacts of feed additives on animal metabolism, health and production.

Book excerpt: In the past decade, animal scientists have learned that administering recombinantly derived somatotropin (growth hormone) to cows improves milk production and that giving beta-adrenergic agonists to meat animals improves productivity and leanness. In order for these metabolic modifiers to yield benefits, however, sound management of the animals' nutrition is necessary. This volume reports on how these substances work in the animals' metabolism, what effects they might have on nutrient requirements of domestic livestock, and what information should be developed further by investigators. The book explores the current understanding of the biology, structure, mechanisms of action, and treatment effects of somatotropin, beta-adrenergic agonists, and anabolic steroids. A companion volume to the Nutrient Requirements of Domestic Animals series, this authoritative volume will be required reading for animal scientists, researchers, veterinarians, livestock farmers, and faculty and students in university animal veterinary science programs.
