Strong men, we know, lived before Agamemnon; and strong wine was made in the fair province of Champagne long before the days of the sagacious Dom Perignon, to whom we are indebted for the sparkling vintage known under the now familiar name. The chalky slopes that border the Marne were early recognised as offering special advantages for the culture of the vine. The priests and monks, whose vows of sobriety certainly did not lessen their appreciation of the good things of this life, 10 and the produce of whose vineyards usually enjoyed a higher reputation than that of their lay neighbours, were clever enough to seize upon the most eligible sites, and quick to spread abroad the fame of their wines. St. Remi, baptiser of Clovis, the first Christian king in France, at the end of the fifth century left by will, to various churches, the vineyards which he owned at Reims and Laon, together with the "vilains" employed in their cultivation. Some three and a half centuries later we find worthy Bishop Pardulus of Laon imitating Paul's advice to Timothy, and urging Archbishop Hincmar to drink of the wines of Epernay and Reims for his stomach's sake.

Book excerpt: A field guide to the new world of wine, featuring an overview of today’s most exciting regions and easy-to-use advice on properly tasting wine, discovering under-the-radar gems, and finding the perfect bottle for any occasion. Highlighting wines from old world regions such as France, Italy, Spain, and Germany to new world wines from the United States, Australia, New Zealand, Chile, and more, The Essential Wine Book tells you what to drink and why. Beginning with foundational information about how wine is made, how to taste it, and how to understand terroir, wine expert and journalist Zachary Sussman then gives an overview of the most important and interesting wine regions today—both established and still emerging. For instance, the great French wines of Burgundy and Champagne are already well known, but for affordable bottles you can easily find at your local wine shop, Sussman profiles up-and-coming producers in other regions, including the Jura, Languedoc-Roussillon, and more. In a similar vein, California's Napa Valley has for decades been the source of America's most prestigious wines, but here you'll learn about other areas of the state that are gaining recognition, from Lodi to the Santa Rita Hills. You'll find user-friendly "just the highlights" notes for each region, as well as recommendations for producers and particular bottles to seek out. Diving deep into what makes each region essential and unique, this comprehensive guides gives new wine drinkers and enthusiasts alike an inside track on modern wine culture.

Following is a quotation from the Preface--"The present is the first instance in which the history of any wine has been traced with the same degree of minuteness as the history of the still and sparkling wines of the Champagne has been traced in the following pages. And not only have the author's investigations extended over a very wide range, as will be seen by the references contained in the footnotes to this volume, but during the past ten years he has paid frequent visits to the Champagne-to its vineyards and vendangeoirs, and to the establishments of the chief manufacturers of sparkling wine, the preparation of which he has witnessed in all its phases. Visits have, moreover, been made to various other localities where sparkling wines are produced, and more or less interesting information gathered regarding the latter."This edition does not include the illustrations that appeared in the original publication.

Bubbly, as we affectionately call it, is a symbol of luxury and decadence and the go-to drink whenever there is an important toast. This history from Becky Sue Epstein is a celebration of the world’s most celebratory drink. Here, Epstein chronicles champagne’s story, from the world’s first sparkling wine, produced in Limoux, Languedoc, in 1531 by monks at an abbey in Saint-Hilaire to the celebrities who made champagnes famous and continue to do so today— from Dom Perignon to the widow Veuve Cliquot. Most important, Epstein fully explains the distinction between champagne and sparkling wine. In this informative chronicle, she answers whether French champagne is really better than other sparkling wines and elucidates the science behind that characteristic fizz and bubble. She takes the reader on a tour of vineyards in wine regions around the world and teaches the correct techniques for storing and serving champagne and sparkling wines. Whether you prefer magnums of Cristal or the affordable thrill of Cold Duck, Champagne is an invaluable complement to any bubbly glass and an informative, elegant gift for connoisseurs, beginners, and wine lovers of all kinds.

The major reason for all the confusion is the use of the term “Champagne” appearing on labels of sparkling wines that come from places other than the province of Champagne in northeastern France. Without them, any wine—even a very good one—calling itself champagne, is just an imposter. Baffled by bubbly? Let wine expert Ed McCarthy clear away the confusion.
