Book excerpt: A large portion of cold atom researches have been devoted to finding novel systems by taking advantage of the high manipulability of cold atom experiments. From the original Bose-Einstein condensates, to the recent realization of Harper-Hofstadter models, cold atoms have kept feeding the world with surprises of realizing systems that were once thought to be purely theoretical constructions. Such trend of research have propelled this thesis to seek for possible new physics based on current cold atom technologies, and to discuss its unique properties. In the first part, we will discuss the local spin ordering for systems made of large spin fermions. This is a generalization of the usual magnetic ordering for spin-1/2 systems, and we shall see that the large spin characters have made qualitative difference. Here we provide a general tensorial classification for fermionic systems of arbitrary spin, and discussed their general character and associated topological defects in the Majorana representation. We have also identified a series of highly symmetric “Platonic solid states” that are stable against perturbations, and have good chance of being observed in experiments. The second part focuses on another topic, which is the eects of background manifold on the quantum systems residing on it. We will first examine the vortex physics for Bose condensates confined on non-trivial 2D surfaces with synthetic gauge fields. In particular, we discuss in detail the cylindrical surface as an example where two types of vortices and a peculiar “necklace” pattern show up as a result of the confining geometry. Then we discuss the topic of Hall viscosity, a unique dissipationless viscosity coeffcient that is related to the adiabatic change of space geometry. We relate it to the density response of a system, and therefore provide an alternative way to compute and measure such a quantity.

In this doctoral dissertation we theoretically explore exotic phases of ultracold quantum gases, with a special focus spin-imbalanced attractive Fermi gases in lower dimensional situations. Chapter 2 reviews the mean-field theory approach to pairing in twocomponent Fermi gases. Applications of this theory are illustrated in Chapter 3, where we discuss mostly well-known results of mean-field theory applied to imbalanced Fermi gases. Adapted from the author's prior publications, Chapters 4, 5 use the theory developed in Chapters 2, 3. In Chapter 6 we discuss the physics of Fermi gases, squeezed into one spatial dimension. In this and Chapter 7, we go beyond mean-field theory, approaching the problem through the Bethe ansatz, exact solutions to few-body problems and Fermi-Bose mappings ("fermionization"). We also show results from a joint effort with the experimental group of Randy Hulet at Rice University to experimentally realize and probe a strongly interacting one dimensional paired Fermi gas. In Chapter 8, after a brief introduction to rapidly rotating two dimensional Bose gases, we introduce a new protocol to create few atom fractional quantum Hall states. Finally, in Chapter 9 we study the effects of two-body losses on lattice Bose gases with hardcore interactions in one and two spatial dimensions.

The Efimov scenario is a prime example of how fundamental few-body physics features universally across seemingly disparate fields of modern quantum physics. Initially postulated for nuclear physics more than 40 years ago, the Efimov effect has now become a new research paradigm not only in ultracold atomic gases but also in molecular, biological and condensed matter systems. Despite a lot of effort since its first observations, the scaling behavior, which is a hallmark property and often referred to as the “holy grail” of Efimov physics, remained hidden until recently. In this work, the author demonstrates this behavior for the first time for a heteronuclear mixture of ultracold Li and Cs atoms, and pioneers the experimental understanding of microscopic, non-universal properties in such systems. Based on the application of Born-Oppenheimer approximation, well known from molecular physics textbooks, an exceptionally clear and intuitive picture of heteronuclear Efimov physics is revealed.

Book excerpt: This thesis explores the physics of non-equilibrium quantum dynamics in homogeneous two-dimensional (2D) quantum gases. Ultracold quantum gases driven out of equilibrium have been prominent platforms for studying quantum many-body physics. However, probing non-equilibrium dynamics in conventionally trapped, inhomogeneous atomic quantum gases has been a challenging task because coexisting mass transport and spreading of quantum correlations often complicate experimental analyses. In this work, the author solves this technical hurdle by producing ultracold cesium atoms in a quasi-2D optical box potential. The exquisite optical trap allows one to remove density inhomogeneity in a degenerate quantum gas and control its dimensionality. The author also details the development of a high-resolution, in situ imaging technique to monitor the evolution of collective excitations and quantum transport down to atomic shot-noise, and at the length scale of elementary collective excitations. Meanwhile, tunable Feshbach resonances in ultracold cesium atoms permit precise and dynamical control of interactions with high temporal and even spatial resolutions. By employing these state-of-the-art techniques, the author performed interaction quenches to control the generation and evolution of quasiparticles in quantum gases, presenting the first direct measurement of quantum entanglement between interaction quench generated quasiparticle pairs in an atomic superfluid. Quenching to attractive interactions, this work shows stimulated emission of quasiparticles, leading to amplified density waves and fragmentation, forming 2D matter-wave Townes solitons that were previously considered impossible to form in equilibrium due to their instability. This thesis unveils a set of scale-invariant and universal quench dynamics and provides unprecedented tools to explore quantum entanglement transport in a homogenous quantum gas.
