Book excerpt: El objetivo de esta investigación fue desarrollar una herramienta computacional, que permita evaluar la conveniencia de la aplicación de aguas residuales de las industrias alimentarias y de bebidas sobre campos de cultivos, como tratamiento natural y complemento a la fertilización de los suelos agrícolas. Para lograr este objetivo se estableció un procedimiento que relaciona, mediante modelos matemáticos, las características de dichas aguas residuales, de los suelos y de los cultivos agrícolas; utilizando el suelo como bioreactor para la filtración y degradación de compuestos bio-orgánicos. Como resultado, se desarrolló el programa STAR ASA 2010, que estima la carga hidráulica, la superficie requerida para la aplicación, el tiempo necesario entre aplicaciones y la cantidad de nutrientes que van a ser aplicados al suelo. Para comprobar el funcionamiento del programa, se realizó un caso de estudio, con información de una industria con insumos de caña de azúcar, obteniéndose las estimaciones de los parámetros adecuados para la aplicación de sus aguas residuales a suelos de cultivos. A partir del uso del programa STAR ASA 2010 en el caso de estudio, se determinó que es posible la aplicación de sus aguas residuales en los suelos de cultivo previstos, siempre que este proceso se realice bajo los parámetros establecidos por el programa, los cuales permiten mantener la calidad del suelo y evitar la contaminación de las aguas subterráneas. Además, se determinó que la aplicación de estas aguas residuales sobre campos de cultivo, contribuye a la fertilización nitrogenada del suelo. Sin embargo, se debe aclarar que este resultado no se puede generalizar a otras industrias sin un análisis previo. Finalmente, en este caso de estudio, se pudo determinar que el costo del tratamiento propuesto, representa un ahorro del 27 y 64% del costo de una planta de tratamiento convencional, siendo una alternativa económicamente viable para esta industria.
