Book excerpt: Ce travail s'inscrit dans le cadre de l'étude des potentialités de l'évaporation osmotique pour la concentration des jus de fruit. Il a pour principaux objectifs de quantifier l'impact du procédé sur la qualité aromatique des concentrés et d'appréhender les mécanismes prédominants sur les transfert de composés d'arôme. Les cinétiques de transfert de 4 composés d'arôme dans des solutions modèles ont été mesurées lors d'expériences conduites sur 2 installations pilotes (10 m2 fibres creuses, 40 cm2 plane). D'importants phénomènes d'adsorption ont été mis en évidence sur les installations. Ils peuvent être limités en choisissant un matériau adapté pour les canalisations. Les transferts transmembranaires de composés d'arôme dépendent fortement de leurs caractéristiques et des conditions opératoires. La rétention des composés d'arôme est favorisée lorsque la teneur en extrait sec soluble (ESS) du jus et sa température sont élevées. Par contre l'effet de la vitesse de circulation dépend de l'ESS du jus. En vue d'étudier les mécanismes qui régissent les transferts de composés d'arôme, des modèles de transfert ont été développés. La résistance aux transferts en phase liquide côté solution extractante est prédominante lorsque l'ESS côté jus est inférieure à 30%. Au delà, c'est la résistance opposée côté jus qui devient prépondérante. Ces premiers travaux portant spécifiquement sur les transferts de composés d'arôme mettent en évidence la complexité des phénomènes mis en jeu. Dans une perspectives d'utilisation industrielle, une étude complémentaire sur jus de fruit réels doit notamment être envisagée.
