Available in PDF, EPUB and Kindle. Book excerpt: The aim of food processing is to produce food that is palatable and tastes good, extend its shelf-life, increase the variety, and maintain the nutritional and healthcare quality of food. To achieve favorable processing conditions and for the safety of the food to be consumed, use of food grade microbial enzymes or microbes (being the natural biocatalysts) is imperative. This book discusses the uses of enzymes in conventional and non-conventional food and beverage processing as well as in dairy processing, brewing, bakery and wine making. Apart from conventional uses, the development of bioprocessing tools and techniques have significantly expanded the potential for extensive application of enzymes such as in production of bioactive peptides, oligosaccharides and lipids, flavor and colorants. Some of these developments include extended use of the biocatalysts (as immobilized/encapsulated enzymes), microbes (both natural and genetically modified) as sources for bulk enzymes, solid state fermentation technology for enzyme production. Extremophiles and marine microorganisms are another source of food grade enzymes. The book throws light on potential applications of microbial enzymes to expand the base of food processing industries.
Book Synopsis Enzymatic Production of Prebiotic Galacto-Oligosaccharides by : Sanaullah Iqbal
Download or read book Enzymatic Production of Prebiotic Galacto-Oligosaccharides written by Sanaullah Iqbal and published by LAP Lambert Academic Publishing. This book was released on 2012 with total page 136 pages. Available in PDF, EPUB and Kindle. Book excerpt: Prebiotic galacto-oligosaccharides (GOS), which are non-digestible carbohydrates and are produced by transgalactosylation of lactose catalyzed by -galactosidase, have been found to modulate the colonic micro flora by stimulating the growth of probiotics and suppressing adverse microbial activities and have received much attention in last few years. The prebiotic efficacy of GOS is largely dependent on glycosidic linkages among monosaccharides and GOS mixtures typically result in better growth of that strain that had served as -galactosidase source. In the present book, -galactosidases from different lactobacilli and other sources have been characterized in detail for various biochemical properties and their transgalactosylation abilities have been evaluated. To overcome the problem of less activity, genes of -galactosidases were cloned and expressed in different expression systems. The mixtures of GOS were characterized using different analytical techniques including HPLC and capillary electrophoresis."

Book excerpt: A growing awareness of the relationship between diet and health has led to an increasing demand for food products that support health beyond simply providing basic nutrition. Digestive health is the largest segment of the burgeoning functional food market worldwide. Incorporation of bioactive oligosaccharides into foods can yield health benefits in the gastrointestinal tract and other parts of the body that are linked via the immune system. Because oligosaccharides can be added to a wide variety of foodstuffs, there is much interest within the food industry in incorporating these functional ingredients into healthy food products. Moreover, other areas such as pharmaceuticals, bioenergy and environmental science can exploit the physicochemical and physiological properties of bioactive oligosaccharides too. There is therefore a considerable demand for a concentrated source of information on the development and characterization of new oligosaccharides with novel and/or improved bioactivities. Food Oligosaccharides: Production, Analysis and Bioactivityis a comprehensive reference on the naturally occurring and synthesised oligosaccharides, which will enable food professionals to select and use these components in their products. It is divided into three sections: (i) Production and bioactivity of oligosaccharides, (ii) Analysis and (iii) Prebiotics in Food Formulation. The book addresses classical and advanced techniques to structurally characterize and quantitatively analyse food bioactive oligosaccharides. It also looks at practical issues faced by food industry professionals seeking to incorporate prebiotic oligosaccharides into food products, including the effects of processing on prebiotic bioavailability. This book is essential reading for food researchers and professionals, nutritionists and product developers working in the food industry, and students of Food Science with an interest in functional foods.

Book Synopsis Novel enzymes for functional carbohydrates production by : Wanmeng Mu
Download or read book Novel enzymes for functional carbohydrates production written by Wanmeng Mu and published by Springer Nature. This book was released on 2021-03-20 with total page 289 pages. Available in PDF, EPUB and Kindle. Book excerpt: This book focuses on the latest research and new techniques in the field of functional carbohydrate-related enzymes. Carbohydrates are a key form of energy for most organisms. The “good” carbohydrates generally refer to functional carbohydrates. In addition to the low or moderate energy-supplying function, they have more nutritious value than traditional carbohydrates and some of them also have health-promoting effects especially prebiotic actions. Several enzymatic methods for the synthesis of such carbohydrates have been discovered and developed in the recent decades, providing a new range of application areas for these novel enzymes. This book addresses the classification of functional carbohydrate-related enzymes and the overall development in food enzyme in Chapter 1. Chapters 2-5 describe the isomerases or epimerases involved in the production of rare sugars, such as D-allulose, D-mannose, D-tagatose, and D-allose. While the studies of the enzymes related to fructo-oligosaccharides (FOS) and galacto-oligosaccharides (GOS) dominate the scientific literature in the field of enzymatic production of health-functional oligosaccharides, some enzymes also show promise for the emerging oligosaccharide production, which are introduced in Chapters 6-8. Chapters 9-12 summarize the new enzymatic technologies and applications in fructan- and glycan-related industries. The last Chapter gives an overall prospective on the trends of enzymatic functional carbohydrate production. This book is a valuable resource for researchers and graduate students in the fields of biotechnology, enzyme engineering, and carbohydrate production, as well as the health industry.
Book Synopsis Chemo-enzymatic Synthesis of Oligosaccharides and Carbohydrate Mimetics by : Hongmei Huang
Download or read book Chemo-enzymatic Synthesis of Oligosaccharides and Carbohydrate Mimetics written by Hongmei Huang and published by . This book was released on 1995 with total page 610 pages. Available in PDF, EPUB and Kindle. Book excerpt: Chapter I: Design and synthesis of SLe sp{\rm x} Mimetics. The design and synthesis of several SLe sp{\rm x} mimetics are described. In mimetic A, an ethylene glycol linkage bridges the fucose and galactose moieties, and a carboxymethyl group replaces the sialic acid. In mimetic B, a scD-tartaric acid derivative replaces the trans-3,4-dihydroxyl groups of the glucosamine, and links the fucose and carboxypentyl groups. These compounds were tested as inhibitors of the binding of SLe sp{\rm x} to E-selectin. Mimetic C contains a macrocyclic structure which restricts the conformation by linking the fucose and galactose moieties. Mimetic D is a glycopeptide derived from the structure of B. Mimetics C and D are expected to show better binding activities than compound A and B, respectively. Chapter II: Enzymes in organic chemistry. (1) A strategy was developed for the enzymatic solid-phase synthesis of tetrasaccharide rm NeuAc\alpha2 \to 3Gal\beta1 \to 4GlcNAc\beta1 \to 3Gal, an inhibitor of the attachment of H. pylori to mucous cells. The conversion for each step was found to be > 98%. (2) Several oligosaccharides containing negatively charged groups, sulfates or carboxylates, were synthesized for the substrate specificity study of glycosyltransferases potentially responsible for the biosynthesis of the natural ligand(s) for L-selectin. (3) Preliminary research is reported on the application of galactose oxidase for the synthesis of a potential substrate for alpha -2,3-fucosyltransferase VII, as well as other oligosaccharides. An improved procedure was developed for the GOase catalyzed oxidation of weak substrates to nearly completion. (4) A kinetics study of the lipase resolution of alcohol 82, and other nucleophiles, was performed for comparison to the antibody 21H3 catalyzed transesterification. The product inhibition and solvent effects were also discussed. (5) The regioselectivity of the transesterification of disaccharides catalyzed by enzymes such as subtilisin was investigated. Conditions were optimized to obtain either a 6 sp\prime -monoacetylated compound or a 6,6 sp\prime -diacetylated compound as the major product.
