Available in PDF, EPUB and Kindle. Book excerpt: Mammalian Protein Metabolism, Volume II focuses on the processes, methodologies, and reactions involved in mammalian protein metabolism, including toxicities, amino acid imbalance, and digestion and absorption. The selection first offers information on the nutritive value of dietary proteins, amino acid toxicities and imbalances, and protein requirements. Discussions focus on the protein requirements of adults, infants, and children, amino acid requirements, protein requirements in pregnancy, amino acid imbalance, mixed diets, and nutritive value and maintenance. The text then ponders on protein metabolism and requirements in pregnancy and lactation and protein metabolism and requirements in the newborn. The publication examines protein metabolism and requirements in the elderly; anomalies of amino acid metabolism; and physical injury and its effects on protein metabolism. Topics include general disturbance of protein metabolism following physical injury, nature of inflammatory reaction, acquired disturbances of amino acid metabolism, plasma proteins, nitrogen balance, digestion and absorption, and protein withdrawal. The text then elaborates on protein metabolism and tumor growth, experimental protein-calorie deficiency, and the clinical aspects of protein malnutrition. The selection is a dependable source of data for researchers interested in mammalian protein metabolism.

Book excerpt: The nutritional quality of a protein depends on the proportion of its amino acids-especially the essential amino acids-their physio logical availability, and the specific requirements of the consumer. Availability varies and depends on protein source, interaction with other dietary components, and the consumer's age and physiological state. In many foods, especially those from plants, low levels of various essential amino acids limits their nutritive value. This is particularly important for cereals (which may be inadequate in the essential amino acids isoleucine, lysine, threonine, and tryto phan) and legumes (which are often poor sources of methionine). Moreover, these commodities are principle sources of protein for much of the earth's rapidly growing population. At the current annual growth rate of about 2 percent, the world population of about 4 billion will increase to 6.5 billion by the year 2000 and to 17 billion by the year 2050. Five hundred milliQn people are presently estimated to suffer protein malnutrition, with about fifteen thousand daily deaths. The ratio of malnourished to adequately nourished will almost surely increase. For these reasons, and especially in view of the limited availability of high quality (largely animal) protein to feed present and future populations, improvement of food and feed quality is especially important.

Book excerpt: Having examined the new, exciting information about the role of the intestine in the utilization of proteins and their products of digestion, the focus turns to the consequences that catabolic stress and immunologic stimulation have on the qualitative and quantitative aspects of the protein/amino acid metabolism. These aspects are considered with relation to the support of body protein and amino acid homeostasis and requirements in patients with injury, severe infection, gastrointestinal malfunction, cancers and renal disease. Finally, as there is clearly a knowledge gap in this area of clinical/enteral nutrition, the opportunities for future research are highlighted. Written by leading nutritional scientists and clinical investigators, this publication will help practitioners as well as clinical and basic scientists to understand the opportunities enteral nutrition offers in the clinical management of patients.

Available in PDF, EPUB and Kindle. Book excerpt: This volume presents information regarding the mechanisms of protein absorption under normal and pathologic conditions, in addition to reviewing changes that occur at various stages of life. General modifiers of intestinal absorption, such as the processing of foods, the nutritional status of the individual, and disease, are explored with reference to both proteins and minerals. Inorganic macronutrients, namely calcium, magnesium and phosphorus, are discussed in relation to protein ingestion. The book also explores the concept of essential trace elements (e.g., iron, zinc, copper, and iodine) and their link to protein sufficiency. The relationship of ultratrace elements with the content of proteins in food is examined, and the book offers a fresh view of the role of certain elements, particularly zinc, on the conformation of proteins linked to DNA, hormone receptors, and gene products. Protein Nutrition and Mineral Absorption is packed with 2,300 references, 100 figures and graphs, plus 25 tables. Nutritionists and physicians will find this book to be an invaluable reference source for rationalizing nutritional interventions and diet modifications for their patients.

Book excerpt: Abstract: Since protein is so important in the study of nutrition, a symposium was held to examine aspects of protein metabolism in animals, including protein biosynthesis, absorption and turnover. Rates of synthesis and degradation of proteins, as well as the absorption of amino acids from the gastrointestinal tract of ruminants can now be measured. The contents of digested protein and amino acids in feed rations function as indicators for animal protein synthesis; the level of feed intake affects protein production, especially intakes of nitrogen and energy. Digestibilities of amino acids of different feeds containing crude protein are compared. Calculations of nitrogen requirements for cattle have been determined. Protein utilization is influenced by energy losses during urea formation and excretion, and maximal organic digestion depends on ammonia and pH levels. Long term feeding experiments demonstrated the amounts of protein needed for a given production. Production of animal protein in response to human protein demands are discussed.

Book excerpt: In the years since the third edition of this indispensable reference was published, a great deal has been learned about the nutritional requirements of common laboratory species: rat, mouse, guinea pig, hamster, gerbil, and vole. The Fourth Revised Edition presents the current expert understanding of the lipid, carbohydrate, protein, mineral, vitamin, and other nutritional needs of these animals. The extensive use of tables provides easy access to a wealth of comprehensive data and resource information. The volume also provides an expanded background discussion of general dietary considerations. In addition to a more user-friendly organization, new features in this edition include: A significantly expanded section on dietary requirements for rats, reporting substantial new findings. A new section on nutrients that are not required but that may produce beneficial results. New information on growth and reproductive performance among the most commonly used strains of rats and mice and on several hamster species. An expanded discussion of diet formulation and preparationâ€"including sample diets of both purified and natural ingredients. New information on mineral deficiency and toxicity, including warning signs. This authoritative resource will be important to researchers, laboratory technicians, and manufacturers of laboratory animal feed.
