Available in PDF, EPUB and Kindle. Book excerpt: The European Food Safety Agency (EFSA) has identified acrylamide as a public health concern due to its relation with the appearance of different types of cancer, and continued efforts are required to reduce exposure to acrylamide (EFSA, 2015). During the last few years, EFSA has maintained a high level of supervision to monitor the acrylamide levels in processed products, urging companies to implement effective mitigation strategies for reducing formation of this contaminant. Recently, the European Commission has published a regulation that sets mitigation measures for the reduction of this compound in foods, identifying new benchmark levels for a number of food categories (European Commission, 2017). The Regulation 2158/2017 compels food processors and food business operators in Europe to reduce the presence of acrylamide in their products, applying measures proportionate to the size and nature of the establishments. With the goal of providing information that contributes to our understanding for this process contaminant and exposure through dietary routes, this Special Issue explores the recent advances on the study of acrylamide in foods, including novel insights into the chemistry of its formation and elimination, effective mitigation strategies, conventional and innovative monitoring techniques, risk/benefit approaches, and exposure assessment.

Book Synopsis Potato Production Worldwide by : Mehmet Emin Calıskan
Download or read book Potato Production Worldwide written by Mehmet Emin Calıskan and published by Academic Press. This book was released on 2022-10-22 with total page 492 pages. Available in PDF, EPUB and Kindle. Book excerpt: Potato is a crop grown on all inhabited continents of the globe. It is included in the top five crops of the world, used as staple food in several countries, and the number of people daily consuming the potato may surpass one billion. Despite the high quantities of seed potato produced worldwide, there are yield gaps due to challenges such as abiotic stresses, pests, climate change and poor production practices. A region-wide critical analysis of yield declining factors can help formulate management strategies that can improve potato yields. Bridging yield gaps in potato will ultimately ensure the role of this crop in securing current and future food security. Potato Production Worldwide presents information on this global crop from its history, morphology, and taxonomy to the growth and development of the potato crop, including the latest strategies in addressing today’s biotic and abiotic challenges. This book identifies the reasons for yield gaps in various potato production regions of the world, as well as presenting the best production practices, pest management strategies and approaches to deal with climate change from the perspective of potato production. Chapters provide important insights into potato production cultures and approaches in the major potato production countries. Potato Production Worldwide will be a valuable resource for researchers, scientists and students seeking a comprehensive view of successful potato production. Provides comprehensive information on the origin, history, taxonomy, morphology, ecophysiology, growth and development of the potato Addresses production practices, including irrigation, nutrient management, harvesting and post-harvest techniques Explores the impact of Abiotic stresses (drought, chilling, salinity etc.) and their management

Download or read book Marschner's Mineral Nutrition of Plants written by Zed Rengel and published by Academic Press. This book was released on 2022-12-09 with total page 817 pages. Available in PDF, EPUB and Kindle. Book excerpt: An understanding of the mineral nutrition of plants is of fundamental importance in both basic and applied plant sciences. The fourth edition of this book retains the aim of the first in presenting the principles of mineral nutrition in the light of current advances. Marschner's Mineral Nutrition of Plants, 4th Edition, is divided into two parts: Nutritional Physiology and Plant–Soil Relationships. In Part I, emphasis is put on uptake and transport of nutrients in plants, root–shoot interactions, role of mineral nutrition in yield formation, stress physiology, water relations, functions of mineral nutrients and contribution of plant nutrition to food nutritional quality, disease tolerance, and global nutritional security of human populations. In view of the increasing interest in plant–soil interactions. Part II focuses on the effects of external and internal factors on root growth, rhizosphere chemistry and biology, soil-borne ion toxicities, and nutrient cycling. Now with color figures throughout, this book continues to be a valuable reference for plant and soil scientists and undergraduate and graduate students in the fields of plant nutrition, nutritional physiology, and soil fertility. Offers new content on the relationship between climate change, soil fertility and crop nutrition Keeps overall structure of previous editions Includes updates in every chapter on new developments, ideas and challenges

This book was released on 2006-10-30 with total page 536 pages. Available in PDF, EPUB and Kindle. Book excerpt: Although the aim of cooking foods is to make them more appetizing and microbiologically safe, it is now known that cooking and food processing at high temperatures generate various kinds of toxic substances, such as heterocyclic amines and acrylamide, via the Maillard reaction. Summarising the latest research in this field, this important collection discusses both the formation of health-hazardous compounds during heat treatment of foods and practical methods to minimise their formation.Part one analyses the formation of hazardous compounds in heat-treated foods such as meat, potatoes, cereal and coffee. Part two discusses the health risks posed by heat-induced toxicants. It includes chapters on bio-monitoring, exposure assessment and risk assessment, as well as chapters on the risks of specific compounds. The final part of the book is concerned with the key area of minimising the formation of harmful compounds in food products. This can be achieved by controlling processing conditions and modifying ingredients, among other methods. With its distinguished editors and international team of contributors with unrivalled academic and industry experience, Acrylamide and other hazardous compounds in heat-treated foods, is invaluable for all those concerned with this crucial safety issue throughout the food industry.
