Book excerpt: Excerpt from Economic Aspects of the Fresh Plum Industry Nearly all plums are consumed in the fresh state. Only 4 to 8 per cent are canned, the bulk of which come from California. The early California plums usually bring high prices in New York when they first come on the market. As the supplies increase prices rapidly decline. The later varieties bring some recovery in prices, especially when the supplies become limited towards the end of the season. The varieties bringing the highest prices at New York from 1925 to 1927 were Kelsey, Wickson President, Beauty, and Formosa. The Diamond and Tragedy rank high among those on which complete records are available since 1917. In selecting varieties for planting, however, it should be noted that there are considerable variations from year to year in the rank held by the different varieties, and further, that other factors such as adaptability of the variety to the region, cost of production per crate, the problem of pollination, ' and labor distribution, must be considered as well as the price the variety is likely to bring. Ed to be about 6 percent larger than in 1938 and about 18 percent larger than the' recent 10-year average, according to the Bureau of Agricultural Economics. Larger crops of apples, peaches, strawberries, apricots, plums, fresh prunes and cherries more than offset smaller crops of citrus, pears, grapes, prunes for drying and olives; Supplies of summer oranges are also smaller than a year earlier. 'with the exception of grape products, carry over supplies of most canned and dried fruits are indicated to be smaller than the relatively large stocks in 1938 and it is probable that the demand for fruits for pro cessing will be more favorable than last year. Carry-over stocks of grape products are indicated to be relatively large. The current demand for fruits in'the fresh market appears to be improved over that in the summer of 1938 and the prospect is for a further slight upward trend during the remainder of the year. Hui and his editorial team have assembled over forty respected academicians and industry professionals to create an indispensable resource on the scientific principles and technological methods for processing fruits of all types. The book describes the processing of fruits from four perspectives: a scientific basis, manufacturing and engineering principles, production techniques, and processing of individual fruits. A scientific knowledge of the horticulture, biology, chemistry, and nutrition of fruits forms the foundation. A presentation of technological and engineering principles involved in processing fruits is a prelude to their commercial production. As examples, the manufacture of several categories of fruit products is discussed. The final part of the book discusses individual fruits, covering their harvest to a finished product in a retail market. As a professional reference book replete with the latest research or as a practical textbook filled with example after example of commodity applications, the Handbook of Fruits and Fruit Processing is the current, comprehensive, yet compact resource ideal for the fruit industry.

Available in PDF, EPUB and Kindle. Book excerpt: Privatization is under attack. Beginning in the 1980s, thousands of failing state-owned enterprises worldwide have been turned over to the private sector. But public opinion has turned against privatization. A large political backlash has been brewing for some time, infused by accusations of corruption, abuse of market power, and neglect of the poor. What is the real record of privatization and are the criticisms justified? 'Privatization in Latin America' evaluates the empirical evidence on privatization in a region that has witnessed an extensive decline in the state's share of production over the past 20 years. The book is a compilation of recent studies that provide a comprehensive analysis of the record of and accusations against privatization, with important recommendations for the future. Seven countries are investigated: Argentina, Bolivia, Brazil, Chile, Colombia, Mexico, and Peru. This book will be vital to anyone interested in the privatization debate but especially to those involved in civil service reform, corporate governance, economic policy, finance, and anticorruption efforts. 'Privatization is important but controversial. While economists typically favor it, others are skeptical. This book provides strong scientific evidence that privatization has been beneficial for many Latin American countries, although some privatizations failed and some groups in society lost out. As usual, the devil is in the details: how privatization is carried out and what reforms accompany it are crucial to its success. The book is definitely an invaluable contribution to the privatization debate.' --Oliver Hart, Andrew E. Furer Professor of Economics, Harvard University
