Understanding the phenomena of complex fluid drops with respect to drying is important for technology and a lot of research in academia and industry is poured into this topic. This book addresses this industrially important area and provides a thorough grounding to the field. Addressing the fundamental underpinnings of wetting, spreading and drying, the book then takes the reader through key applications grouped into themes, including colloidal droplets (used in printing) and biological (e.g. bloodstain analysis for forensics). With a section on modelling and simulation to balance experiment with computational tools, this book will appeal to anyone working in complex fluids across classical fluid mechanics, soft matter, and chemical, biological and mechanical engineering

Book excerpt: This five-volume series provides a comprehensive overview of all important aspects of modern drying technology, concentrating on the transfer of cutting-edge research results to industrial use. Volume 5 is dedicated to process intensification by hybrid processes that combine convective or contact heat transfer with microwaves, ultrasound or radiation. Process intensification by more efficient choice, distribution, and flow of the drying medium - such as impinging jet drying, pulse combustion drying, superheated steam drying, drying in specially designed spouted beds - are thoroughly discussed. Moreover, methods that favorably affect the process by changing the structure of the drying product, e.g. foaming, electroporation, are treated. Emphasis is placed on drying, including freeze-drying, of sensitive materials such as foods, biomaterials and pharmaceuticals. Book excerpt: It is a pleasure to present this volume consisting of a selection of papers presented at the 4th International Drying Symposium (IDS) held in Kyoto, July 9-12, 1984, under the sponsorship of the Society of Chemi cal Engineers, Japan. This book includes full texts of the ten keynote lectures and several papers which were presented in the technical sessions in the 4th IDS. As editors we had the arduous and unpleasant task of selecting papers for this volume. We were delighted with the high quality manuscripts sub mitted. We are grateful to the authors for their efforts in meeting the manuscript guidelines and also the deadlines. Aside from quality, we have attempted to maintain in this volume a balance of coverage in terms of topics as well as geography. Space restrictions prevented us from presenting all the high quality papers for publication in DRYING 85. Numerous papers of archival interest have been released for general publication in international journals. Several will no doubt appear in Drying Technology - An International Journal. Many others will find their way into other standard engineering journals as well. Over 120 papers from 30 countries were included in the Proceedings volumes distributed to all registrants in Kyoto. Numerous individuals, professional societies and organizations have contributed, directly or indirectly, to the success of the 4th IDS and hence to DRYING 85 as well. We wish to acknowledge in particular the monumental efforts of the Secretary of the 4th IDS, Professor M. Okazaki.

Book excerpt: Drying Principles and Practice presents the fundamental principles that underlie drying arts as a basis for explaining the behavior of a drying plant. This book begins with an introductory chapter, followed by an account of the phenomena that causes the influence of moisture on its host material and manner in which moisture may be expelled by heat into the humid surroundings. The quantitative description of the way a moist material dries and how it dries under commercial conditions are also provided. The remainder of this text is devoted to surveying less-common methods of drying, moisture-measurement techniques, dryer-control systems, and aspects of the choice and design of industrial dryers. This publication is valuable to engineers, but is also a good source for senior undergraduate and postgraduate students engaged in studies of heat with mass transfer.

Book excerpt: Drying is by far the most useful large scale operation method of keeping solid foods safe for long periods of time, and is of fundamental importance in most sectors of food processing. Drying operations need to be precisely controlled and optimized in order to produce a good quality product that has the highest level of nutrient retention and flavor whilst maintaining microbial safety. This volume provides an up to date account of all the major drying technologies employed in the food industry and their underlying scientific principles and effects. Various equipment designs are classified and described. The impact of drying on food properties is covered, and the micro-structural changes caused by the process are examined, highlighting their usefulness in process analysis and food design. Key methods for assessing food properties of dried products are described, and pre-concentration and drying control strategies are reviewed. Thermal hazards and fire/explosion detection and prevention for dryers are discussed in a dedicated chapter. Where appropriate, sample calculations are included for engineers and technologists to follow. The book is directed at food scientists and technologists in industry and research, food engineers and drying equipment manufacturers.

Book excerpt: The development of nanomaterials plays a fundamental role in current and future technology applications, particularly nanomaterials that have multiple functionalities. This book provides a broad overview of the effect of nanostructuring in the multifunctionality of different widely studied nanomaterials. This book is divided into four sections constituting a road map that groups materials sharing certain types of nanostructuring, including nanoporous, nanoparticled, 2D laminar nanomaterials, and computational methods for characterizations of nanostructures. This structured approach in nanomaterials research will serve as a valuable reference material for chemists, (bio)engineers, physicists, nanotechnologists, undergraduates, and professors.
