Available in PDF, EPUB and Kindle. Book excerpt: "An invaluable guide for beginning bakers." –Sam Sifton, The New York Times In 2009, journalist Samuel Fromartz was offered the assignment of a lifetime: to travel to France to work in a boulangerie. So began his quest to hone not just his homemade baguette—which later beat out professional bakeries to win the “Best Baguette of D.C.”—but his knowledge of bread, from seed to table. For the next four years, Fromartz traveled across the United States and Europe, perfecting his sourdough in California, his whole grain rye in Berlin, and his country wheat in the South of France. Along the way, he met historians, millers, farmers, wheat geneticists, sourdough biochemists, and everyone in between, learning about the history of breadmaking, the science of fermentation, and more. The result is an informative yet personal account of bread and breadbaking, complete with detailed recipes, tips, and beautiful photographs. Entertaining and inspiring, this book will be a touchstone for a new generation of bakers and a must-read for anyone who wants to take a deeper look at this deceptively ordinary, exceptionally delicious staple: handmade bread.

Book excerpt: This volume advances the claim that the FAO International Treaty on Plant Genetic Resources for Food and Agriculture (ITPGRFA) adopted in 2001 is the only existing international agreement with the potential to promote food security, conservation of biodiversity and equity. However, for germplasm-rich countries, national interests come into conflict with the global interest. This work shows that the pursuit of national interests is counterproductive when it comes to maintaining genetic resources, food-security and rent-seeking and that optimally, the coverage of the FAO Treaty should be widened to apply to all crops.

The levels of explanation and detail vary from chapter-to-chapter and so the reader will probably find the book most helpful to consult for key topics of interest. . . The breadth of the book means that students, academics and interested practitioners should find areas that will appeal. Frederick Chen, European Intellectual Property Review Together the essays cover some of the most topical issues in IP and related fields, and should therefore be of immense interest and value to any serious student of the subject. The Commonwealth Lawyer It is an extremely thought-provoking book, crammed full of excellent papers which are genuinely original, and push forward the boundaries of their retrospective topics. . . the book is without doubt worth purchasing for anyone interested in IP theory, pharmaceuticals or traditional knowledge. . . the papers are of incredibly good quality. . . a few of those alone make the book worth purchasing. My impromptu rating system will therefore award it 5 out of 5 stars. James Griffin, Communications Law This book covers an extensive range of critical issues in modern Intellectual Property (IP) law under three broad headings: Technology, Market Freedom and the Public Domain; Intellectual Property and International Trade; Traditional Knowledge, Technology and Resources. Uniting contributions at the cutting edge of IP research, the authors, all former or current members and associates of the Queen Mary Intellectual Property Research Institute, University of London, address a number of diverse topics in relation to existing copyright, trademark and patent law. They examine political and juridical issues in fields such as geographical indications and traditional knowledge, agriculture and information technology, pharmaceuticals and access to medicines, human rights and IP strategy. The book will appeal to academics, researchers, students, and to practitioners concerned with all areas of intellectual property.

Available in PDF, EPUB and Kindle. Book excerpt: Of the global population of more than 7 billion people, some 800 million do not have enough to eat today. By 2050, the population is expected to exceed 9 billion. It has been estimated that some 15% of food production is lost to plant diseases; in developing countries losses may be much higher. Historically, plant diseases have had catastrophic impact on food production. For example: potato blight caused the Irish famine in 1845; brown spot of rice caused the Great Bengal Famine of 1943; southern corn leaf blight caused a devastating epidemic on the US corn crop in 1970. Food security is threatened by an ongoing sequence of plant diseases, some persistent for decades or centuries, others more opportunistic. Wheat blast and banana xanthomonas wilt are two contrasting examples of many that currently threaten food production. Other emerging diseases will follow. The proposed title aims to provide a synthesis of expert knowledge to address this central challenge to food security for the 21st century. Book excerpt: Plant genetic resources provide a basis for food security, livelihood support and economic development as a major component of biodiversity. The Second Report on the State of the World’s Plant Genetic Resources for Food and Agriculture demonstrates the central role plant genetic diversity continues to play in shaping agriculture growth in the face of climate change and other environmental challenges. It is based on information gathered from Country Reports, regional syntheses, thematic studie s and scientific literature, documenting the major achievements made in this sector during the past decade and identifying the critical gaps and needs that should urgently be addressed. The Report provides the decision-makers with a technical basis for updating the Global Plan of Action on Conservation and Sustainable Use of Plant Genetic Resources for Food and Agriculture. It also aims to attract the attention of the global community to set priorities for the effective management of plant genet ic resources for the future. Purchase a print copy.
