Available in PDF, EPUB and Kindle. Book excerpt: Excerpt from Diet in Relation to Normal Nutrition I beg to present the following Report on Diet in relation to Normal Nutrition, by Dr. J. M. Hamill, one of the Medical Officers of the Ministry. The sound nutrition of the individual and the community is the foundation of the public health. Though not wholly dependent upon the amount or quality of the food consumed, it is obvious that the food of a people is of primary importance in nutrition; other factors are effective mastication, the proper use of the dietary selected, and the capacity of the body to assimilate and make full use of the food consumed, which capacity is largely determined by a sufficiency of exercise, rest and fresh air. Whilst these important matters should not be neglected, the primary necessity is of course a satisfactory diet, and that is the subject of the present Memorandum. Book excerpt: Excerpt from Diet in Health and Disease The continued appreciation of the profession as evidenced by their using this book has added greatly to the endeavor to make the fifth edition of more value than the preceding ones. There are scarcely any subjects in medicine that have received the same amount of attention of recent years as dietetics and the study of nutrition. The literature is voluminous and it would neither be possible nor profitable to try to include everything that has been brought forward. There are many differences of opinion among authorities on many questions which can only be settled by future study and in many cases the views expressed are diametrically op posed. Much of our knowledge on nutrition is fragmentary and the exact value of many contributions cannot be estimated until further investigations have been made. Dietetics has always been a sub jcet much influenced by fads and fancies and much of the literature has little value in consequence. The authors have endeavored to give fully the various facts relat ing to the composition of foods, to indicate as far as possible in the space of one volume the scientific basis, when there is any for the various diets and. To give at the same time practical directions and diet lists which can be used without extensive training. Book excerpt: Excerpt from Proper Nutrition: Food and Its Relation to Our Body Health and What It Needs Health is the normal process of all life functions in the organs of our body. What is necessary for the maintenance of that life process, (Health)? The answer is air, light, water, action and rest. The human being has forgotten how to regulate these life necessities according to quality and quantity, while the more fortunate lower animal has at least its instinct as a guide. Natural Science must, therefore, replace the missing instinct in us, as long as ignorance in diet is one of the causes of abnormal condition in our bodies. Some may ask, why is it if wrong supply is the cause of wrong function in our body, that this logical thought is overlooked and only the effect is recognized? Almost ninety percent, of every hundred want to be given remedies rather than do their own thinking and learning the cause in order to remove it. If our grandfathers had their whiskey, meat and potatoes every day and our grandmothers lived to be ninety-four years old and drank six cups of coffee each day along with cake and pie, why should we condemn these foods and change our diets? These and like questions are asked not only by the laity but also by our so-called Health Students. About the Publisher Forgotten Books publishes hundreds of thousands of rare and classic books. Diseases inflicting “modern” humans are unheard of in most of these study groups. Dr. Weston Andrew Price, DDS, was called the “Isaac Newton of Nutrition” and the “Darwin of Nutrition.” This edition of Dr. Price’s classic is modernized with the epub format. It is easier to read on smartphones and tablets. It also includes updated statistics and additional images. Dr. Price shows that illness, disease, behavior, criminality, anemia, voice, and even cheek-line, are all within the domain of Nutrition. “If civilized man is to survive, he must incorporate the fundamentals of primitive nutritional wisdom into his modern lifestyle.” —Dr. Weston A. Price, DDS

Book excerpt: Excerpt from Food and Fitness, or Diet in Relation to Health TO a large extent health is a matter Of educa tion. I have been engaged for a long series Of years in a study Of the feeding Of the live-stock Of the farm, both on its scientific and practical sides, and I find that the knowledge displayed by owners Of horses, cattle, sheep, swine, and poultry is much more profound than that which applies to themselves. In relation to stock the Object Of the feeder is to provide what will ensure health and a profitable return. He supplies not what an animal would Choose if it could, but what he thinks is the best for his purpose. With regard to himself it is quite the reverse. He consumes not what is the best food for his system, but what pleases his palate, eating as Often and as much as he likes. Argument is futile, demonstration is hopeless, for most people insist that all things are good for their stomachs, or that one man's meat is another man's poison. The number Of deaths, between 60 and 70, Of men who should live many years longer, from diseases attributable to excessive eating, or to eating improper foods, is probably greater than that which is due to the consumption Of alcohol. During the present year the author had the pleasure of presenting an interpretation of this literature in the Thomas Clarence Cutter Lectures at the Harvard Medical School. Believing that the publication of these lectures would serve to answer many of the questions which have been asked in numerous letters from the public, they have been edited and presented in their present form. The very gratifying reception accorded to these lectures and the almost total neglect of the subject of dietetics in ordinary medical education have induced the author to publish them in their present form. While the book has been specially designed to meet the require ments of students and practitioners of medicine, it is hoped that it may also prove intelligible and interesting to anyone desiring to acquire some knowledge of foods and the difficult problems, of nutrition. Book excerpt: Excerpt from Total Dietary Regulation in the Treatment of Diabetes A therapeutic advance should mean a raising of the general level of clinical results, in the sense of saving life in some proportion of cases formerly fatal, and prolonging it to greater or less extent in the more hopeless cases. Expectations of an actual cure, in the sense of a restoration of the normal power of food assimilation, will necessarily be disappointed in most cases under any dietetic treatment, and the need of some more potent therapy than diet is a keen stimulus to research. The method of treatment here presented has never been proposed as such a cure, and amelioration of the existing condition and preservation of life and usefulness at the price of continued pre cautions have been recognized as the limit of present attainment in diabetes. As set forth in the text, the mistakes incident to the development of a new method have reduced the general results below the theoretical ideal. The severity of the test is evident, however, from the grave character of the cases chosen and their known fate under former practice. The experience as a whole is believed to sus tain both the theoretical principle and its practical value for the dietetic treatment of diabetes. Book excerpt: Excerpt from Human Vitality and Efficiency Under Prolonged Restricted Diet It has not been the custom of the Nutrition Laboratory to direct its researches primarily for economic and sociological purposes; yet in View of its long-continued study of people with a low intake of food and conceivably low metabolism, and the not remote possibility that America might be obliged to undergo privations similar to those in Germany, although probably in less degree, it seemed eminently fitting for the Laboratory to study a question so important from the stand points of patriotism, economy, and physiology, as the effect upon the metabolism of a reduction in diet. The extensive research which is reported in this publication is, in the last analysis, a furthering of the initial problem studied by the Nutrition Laboratory, i. E., a search for conditions resulting in subnormal metabolism. It was planned in detail in the spring of 1917 and carried out during the winter of 1917 - 18 with a selected group of normal individuals whose body-weight was lowered as a result of quantitative reductions in their diet. Before giving the details and discussing the results of this research, a general history will be given of the experimental work leading up to the present study, together with brief abstracts and a critique of the work of other investigators on metabolism with a low intake of food. Book excerpt: During the past decade, tremendous growth has occurred in the use of nutrition symbols and rating systems designed to summarize key nutritional aspects and characteristics of food products. These symbols and the systems that underlie them have become known as front-of-package (FOP) nutrition rating systems and symbols, even though the symbols themselves can be found anywhere on the front of a food package or on a retail shelf tag. Though not regulated and inconsistent in format, content, and criteria, FOP systems and symbols have the potential to provide useful guidance to consumers as well as maximize effectiveness. As a result, Congress directed the Centers for Disease Control and Prevention (CDC) to undertake a study with the Institute of Medicine (IOM) to examine and provide recommendations regarding FOP nutrition rating systems and symbols. The study was completed in two phases. Phase I focused primarily on the nutrition criteria underlying FOP systems. Phase II builds on the results of Phase I while focusing on aspects related to consumer understanding and behavior related to the development of a standardized FOP system. Front-of-Package Nutrition Rating Systems and Symbols focuses on Phase II of the study. The report addresses the potential benefits of a single, standardized front-label food guidance system regulated by the Food and Drug Administration, assesses which icons are most effective with consumer audiences, and considers the systems/icons that best promote health and how to maximize their use.

This remark may be said to apply truly to every subject, but to none with greater force than that of diet.' We must all eat to live, and one would have thought that by this time such a universal habit would have become quite automatic, or at least encompassed by such stereotyped rules that there was no room for doubt as to its practice.
