Book excerpt: Excerpt from Decline in Egg Quality During the Marketing Process The second set of conditions differed only by the fact that the eggs were kept in a burlap cooler on the farm and in a merchandising cooler at the warehouse. The eggs showed a fairly steady decline in quality as indicated by the two indicators commonly used by the trade, namely yolk shadow and air cell. The same general decline was found upon breaking flue eggs. A study of eggs in retail stores disclosed a wide range of quality. This was doubtless a result of differences in age of eggs, temperature or other keeping conditions, and perhaps of variations traceable to hereditary conditions. This book was released on 2018-03 with total page 20 pages. Available in PDF, EPUB and Kindle. Book excerpt: Excerpt from The Poultry and Egg Situation: May-June, 1949 Egg prices rose during May. U. S. Farm prices, averaging cents per dozen, were cents higher than in April, and the increase for tep grade eggs in metropolitan markets was even greater. The greater increase in the price of top-grade eggs is probably a result of warmer weather which reduces the proportion of high-quality eggs in the general run of eggs brought to market. The l.icente rise in farm eog prices from April to May is larger than usual. In two of the years since 1940, the May price has been lower than the April figure, and in only one other recent year, 1939, did the rise exceed 1 cent. In part the rise may have been affected by the one half of 1 percent decline in April egg production compared with March this year. The usual production trend from March to April has been an increase of about 5 percent in farm egg production. The relatively large diversion of eggs to hatcheries, suggested as a factor in the price increase, was more than offset by the relatively small volume of eggs put in storage. Book excerpt: Excerpt from Equipment and Methods for Measuring Egg Quality For many years research workers have been experimenting with methods of determining the interior quality of eggs that are more objective than the time honored system of segregating quality by candling. At the present time a method of marketing a pack of uniformly high quality eggs has been developed by private and governmental marketing agencies. The crux of this plan is the use of an objective quality-measuring method, such as that described in this report, together with constant temperature and humidity controls. This new approach is now feasible because large numbers of eggs are being produced by hens that are bred, fed, and managed in a manner conducive to the production of uniformly high quality eggs, and egg handling methods are being used which effectively retain the high initial quality. Book excerpt: Excerpt from Agricultural College Extension Service Bulletin, Vol. 12: Care of Eggs for Market Increased demand for eggs has been accompanied by an increase in their cost to the consumer and a demand on the part of the consumer for a product of higher quality. This demand for higher quality, to gether with the requirements of the pure food laws of the State and Federal governments, has made it necessary for the poultryman to study carefully the factors which determine, the market value of eggs, to pro duce eggs of better quality and to handle them with better care, in or der that they may reach the consumer with a minimum of deterioration and loss. Improvement in the quality of market eggs and the care with which they are handled is as important to the producer as is increased production. The production of eggs of better quality and. The intro duction of better methods of handling will eliminate the enormous loss in price because of the poor quality of a large number of the eggs marketed; it will eliminate the loss in transportation Charges on worthless eggs; it will make unnecessary the large army of graders, and candlers now required to sort the good from the bad and prepare them for market; and it will increase consumption, because of the elimination of doubt ful eggs. Available in PDF, EPUB and Kindle. Book excerpt: Excerpt from The Care of Market Eggs Eggs are a perishable food product. They do not improve with age and no amount of handling or manipulation will enhance their quality. The poor qua lity of the average market egg has been attributed by many persons to its retention in cold storage. This is an erroneous idea, for while the quality will not improve, yet if the eggs are full and fresh and sweet when placed in a well equipped and properly managed cold storage, there is not, during the time they are ordinarily held, sufficient change in quality to render them unfit for food. Marked improvement has been made in the methods of handling other kinds of food stuffs. The same old, antiquated methods of handling eggs that prevailed many years ago, prevail today. This bulletin is a preliminary attempt to analyse the situation and point out ways and means of improvement. Available in PDF, EPUB and Kindle. Book excerpt: Excerpt from Care and Marketing of Eggs It has been pointed out repeatedly that the 'case - count' system of buying eggs has been largely the cause of the general unsatisfactory condition of the trade. For many years eggs have been purchased by number without regard to quality. This has been decidedly unfair to the farmers and other producers who have taken pains to market good. Clean. Fresh eggs, and through placing no premium on good eggs the system referred to has really become an incentive to the continu ance of careless and dilatory methods. It has made possible the disposal of eggs in all stages of decomposition. And has encouraged farmers and local buyers to hold eggs at certain seasons of the year when they have no satisfactory places for storing them. This whole subject has been thoroughly discussed at recent meetings of produce dealers. Of the Provinces of Ontario and Quebec. Officials from both the Federal and Ontario Departments of Agriculture were present at these meetings, and endeavoured strongly to present the imperative need of a radical change in the system of handling and marketing eggs. Book excerpt: Excerpt from Egg Marketing in the Los Angeles Area In any market there tends to be a degree of regularity in the flow of products through given sets of handlers as the products move from producer to consumer. The term trade channels has been applied to this series of steps or succession of dealers involved. These trade - chan nels are not clear-cut or fixed; instead they are indefinite and always in the process of change. Perhaps the most important reason why trade channels are not clear cut is that every dealer must frequently go to other than his regular sources for eggs of some size or quality and must sell to other than his regular outlets because supply and demand conditions change so rapidly. Thus a distributor whose main business is in the sale of local eggs to a group of independent grocery stores, hotels, and restaurants gets the contract to supply a milk distributor with cartoned grade-aa eggs. Then comes a sudden hot spell that reduces quality. The result is that he cannot supply all the grade-aa eggs needed by his customers, in cluding particularly the milk distributor, without lowering the quality of the next lower quality, grade A, sold to other customers. Rather than lose favor with the latter, he buys some high-quality eggs through a broker, and from these he candles out the needed eggs of grade aa. He then has to find other outlets for the rest of the eggs, and thus makes a second change from his regular trade channels. Five hundred and eighty-six cases of eggs were shipped from nine counties in 1936, after trial shipments from one county in 1935. From these tests the follow ing observations and conclusions were made. About the Publisher Forgotten Books publishes hundreds of thousands of rare and classic books.
