The buttermaker of to-day is require-d not only to manufacture butter having good workmanship, but also to control the composition of his product within very narrow limits. Economic conditions demand that the moisture content be not less than per cent, while butter containing more than per cent water or less than 80 per cent fat is illegal. The trade and consuming public in Canada are becoming more critical every year regarding the salt content of butter. The British market has always demanded a mild salted butter, not exceeding 2 per cent. Butter is composed chiefly of milk fat with some water and salt and the efficient buttermaker will so arrange these constituents in his butter that the product will bring the greatest returns and conform to legal standards. It is not a difficult matter to make butter showing good workmanship, providing no attempt is made to control the composition. Similarly, it is fairly simple to control the composition of butter at the expense of good workmanship. The art of present day commercial buttermaking comprises a combination of these two factors - the control of the composition, and the manufacture of butter having good flavour, body, texture, colour, and proper incorporation of salt and moisture.
