Book excerpt: Excerpt from Course of Study in Domestic Science for Elementary Grades Level measurements are used: (1) So as to secure the exact amounts required by the recipe. (2) So that all materials will be in exact proportion to one another. So that the same recipe, carefully used, will always produce the same result. To measure a cupful of dry material, put the material in the cup with a spoon, being careful not. To pack it, heap slightly and scrape off the extra material with the blunt edge of a case knife. To measure a spoonful, heap slightly and scrape off extra material with a knife as mentioned above. To measure a half spoonful, level and divide in half by cut ting through the middle lengthwise. A quarter spoonful is measured by first dividing in half and then cutting through the middle crosswise. About the Publisher Forgotten Books publishes hundreds of thousands of rare and classic books. Book excerpt: Excerpt from Domestic Science: Principles and Application, a d104book for Schools This textbook is arranged to meet the needs of schools having a two-year course in Domestic Science, and an effort has been made to present the fundamental principles, together with their application, in a simple, natural sequence that is adapted to the needs of the large majority of public and private schools. A text of this kind does away with the keeping of elaborate notebooks on the part of the pupils, saves for more important things the time used in dictating notes, and makes the work more permanent and uniform through out. The arrangement of the subject matter by lessons does not necessarily limit the course to 64 lessons. If the students are old enough, additional reading may be used to supplement the subject matter, and several recipes are given under each application to afford plenty of practical work for classes having more than one lesson each week. The usual length of the class period is 1% hours, and one recipe is all that can be done well in that time. The liquid candle grease will return to solid form when cooled; dissolved salt may be recovered by evaporating the water; steam may be collected and condensed into form of water again. These are called physical changes. That part oi' the melted candle which was burnt will not return to its original form. Burnt sugar will never be sweet and white again. The ashes can not be changed into wood. These changes are changes in the composition of matter, and are called chemical changes. Book excerpt: Excerpt from Domestic Science: A Book for Use in Schools and for General Reading The author has endeavored to bring together, in a 'simple manner, such topics as have a direct bearing upon the science of domestic Operations. His object has been to direct attention to daily household affairs, affairs indeed, which to many are too common to be deemed worthy of earnest thought. The kitchen and the pantry may be made a laboratory for the elucidation of many important facts of science; and as interest is aroused in the necessary labors of the household, much of the unwelcome air of drudgery will vanish from such work. As it is plain that the duration of our mortal existence permits the exploration of but a small fraction of the domain of knowledge, careful judgment should be exercised in the selection of subjects of study; the practical and utilitarian aspect of modern systems of education testifies to the wide recognition this fact has received among the people in general. In this book, no effort has been made to secure an unduly elaborate or an exhaustive treatment; a large work would be poorly adapted for class use, and much detail might discourage the general reader in his study. Liberal reference has been made to the works of recognized authorities on the subjects treated; in such cases, acknowledgment has been made in the body of the work. A few passages are reprints of articles that have appeared over the author's signature in local periodicals. Book excerpt: Excerpt from Public School Domestic Science N eminent authority says: Up to the age of sixteen even a lucid statement of principles is received by all but a few pupils as dogma. They do not and cannot in any adequate sense realize the reasoning process by which scientific conclusions are reached. They are taught not only facts but classifications and laws, and causes in relation to their effect. These are not, in the majority of cases, elaborated by the pupil. The teaching of them accordingly degenerates into a statement of facts, and the learning of them into an act of memory. Book excerpt: Excerpt from The Teaching of General Science Never before in this country has there been so insistent a demand for a more thorough and more comprehensive system of instruction in practical science. Forced by recent events to compare our education with that of other nations, we have suddenly become aware of our negligence in this matter. Now industrial and educational experts and commissions are united in demanding a change. While on the whole there has been a steady increase in the amount of time given to science work in the secondary and elementary schools, the attention paid to it, especially in the elementary schools, has been somewhat spasmodic, and its administration has been more or less chaotic. This is not due to lack of interest on the part of school officials but to their dissatisfaction with the methods of instruction employed. There is no doubt that superintendents would gladly introduce more science if they felt sure that the educational results would be commensurate with the time expended. This is indicated by a recent survey of about one hundred and fifty cities in seven states of the Central West. The survey shows that two-thirds of them have nature-study in the elementary schools and that all are requiring some science for graduation from the high school. The average high school is offering three years of science. Since 1900 there has been a greater increase in the percentage of students enrolled in science in the high schools than in any other subject with the one exception of English. Moreover, greater attention is now being paid to the training of teachers in methods of presentation of science. Book excerpt: Excerpt from An Elementary Course of Food Chemistry The course requires an elementary knowledge of general chemistry. It is intended primarily for students of domestic science who desire a knowledge of food chemistry applicable to the chemical problems involved in cookery and household science. It is advisable to use the simplest possible apparatus in the experimental work. Much needless waste of time can be saved by the elimination of complex apparatus. Most of the exercises can be completed in an ordinary laboratory period of an hour and a half. Since organic chemistry is not a prerequisite of the course it is necessary to introduce some preliminary work in this subject before proceeding with the chemistry of the food-stufis. A few experiments on the hydrocarbons and their derivatives precede the study of the fats, carbohydrates, and proteins. The subject matter is ar ranged in accordance with the presentation in most books of organic chemistry. Special reference reading in Perkin and Kipping's Organic Chemistry, (london, 1907) and in Noyes' Organic Chemistry, (n. Y., 1903) is indicated at the beginning of each experiment. Any text book of organic chemistry may be used in connection with class room instruction. In the bibliography thebooks which are of most importance for general refer ence are marked with an asterisk. Book excerpt: Excerpt from The School Kitchen Textbook Lessons in Cooking and Domestic Science, for the Use of Elementary Schools When the author's Boston School Kitchen Text-Book was written in 1887, instruction in cooking in the public schools of America was in the experimental stage, the only work which had been done being in a Boston schoolroom under philanthropic management. At the request of the founder of this experimental school the Boston School Kitchen Text-Book was written to show that an economical course of study and practice in cookery could be arranged for the public schools. At that time there were practically no schools for the training of teachers of cookery and the literature of the subject was almost non-existent. The book, therefore, was designed to aid the teacher as well as the pupil and that it has accomplished this double purpose has been proved by its use in the many cooking courses now established in this country, as well as abroad. For some time a revision of the Boston School Kitchen Text-Book has been demanded to meet the requirements of the new era of school instruction and of housework, for we now find public school instruction in cooking and sewing in the schools of all sections ; training schools and colleges for teachers; a literature worked out by scientists, and a wide public demand for such vocational instruction. The present volume is not a revision of the Boston School Kitchen Text-Book; it is a new book embodying the results of scientific investigation and research, as well as the experience of successful teachers in the schools. The main food groups, the processes of cookery, the simpler chemical elements and their action are discussed with special reference to elementary work both in the home and the school. Many recipes are given so that it is possible for the teacher to select one to illustrate the principle contained in any lesson. Available in PDF, EPUB and Kindle. Book excerpt: Excerpt from Science in the School: A Course of Experimental Science and Nature-Study, With Teaching Hints As a final result of his school training the pupil should have laid the foundations at least of an intelligent knowledge of living things, and of their relation to one another and to their surroundings, and should have become acquainted with the methods by which such questions are investigated. But this involves a preliminary study of matter and of the forces acting upon it in other words, before biological study can be successfully attempted some knowledge of physics and chemistry is necessary. The amount need not be very great, but the method of acquiring it must be sound. Further, to obtain any proper appreciation of physical and chemical changes, fairly accurate quantitative work is essential, and this involves, though only as a means to an end, a preliminary training in the making of exact measurements. A knowledge of the methods of measuring extension (length, area, volume), mass, density, time, circular movement, degree of heat, and the like, and practice in using the instruments of precision by which these are reckoned make a necessary first claim 011 the young student. Book excerpt: Excerpt from Common Things and Elementary Science in the Form of Object Lessons The object of the author in publishing this volume is to supply teachers with a manual of matter and method on Common Things and the Elements of Science, thus providing materials for courses of lessons on Elementary Science as a class subject. Three points have been kept in view in pre paring the lessons; first, the production of full and accurate information; second, the arrangement of the matter in its teaching order; and third, the indication of the method by which the ideas are to be worked out. In many cases the particular experiments to be performed, the questions to be put, and the diagrams to be used are given. It has, of course, been necessary to make a selection of subjects in each section of the book, preference, therefore, has been given to those which are likely to come under a child's notice in his daily life, the study of which will help to cultivate careful observation and intelligent inquiry; habits which will tend to make the individual exact in his statements, correct in his judgments, and useful in his future avocations. The subjects chosen embrace all those mentioned in the Code. All the lessons have been worked out from original sources; those on manufactures and minerals, from notes made while visiting factories and mines. The statistics have been taken from the latest official returns. About the Publisher Forgotten Books publishes hundreds of thousands of rare and classic books.
