Book excerpt: There's no region of the country more cherished and unique when it comes to food than the South. Southerners celebrate our food traditions. They are totems of our collective identity. Our grits, our fried chicken, our sweet tea, our butterbeans, our biscuits: These are powerful symbols of not just of Southern tastes but also of Southern values, of the kind of simple, honest-to-goodness home cooking, prepared with generosity of spirit and served up with generosity of ladle. These recipes are what distinguish and bind Southern culture. No Taste Like Home embraces the cultural identity of towns large and small all throughout the South and provides readers with recipes, stories, and highlights of all the unique regional flavors -- from the Heartland of Dixie to Cajun Country, from The Coastal South to Bluegrass, Bourbon and BBQ Country and all points in between. Organized geographically, the cookbook focuses on each of 6 regions in the South. Every chapter will include highlights of specific towns and contain essays describing, literally, the flavor of the place. The highlighted towns will offer multiple recipes as well as musings from notable locals, and "locally famous" chefs. Just some of the recurring editorial features include: a travelogue introduction discussing regional specialties and folklore Standout recipes from local chefs and "almost famous" home cooks Musings from locals about their town "Hometown Flavor" features on Southern iconic ingredients that are commonly used in the regional cuisine "What We're Craving" features highlighting a local restaurant or town-specific dish that locals crave when they're not at home "Local Know-how" features of insider secrets from the locals, from how to pick the freshest produce, to the best way to prepare their own recipes

Book excerpt: Global Gastronomic Adventures Presents A Real Taste of Southern Cooking ( Southern cooking Recipe Cookbook) When I started this project - Global Gastronomic Adventures - I didn't think it will get me this far, I didn't think it will become a way of getting to know cultures through food. My goal at first was to discover new and interesting recipes and the story behind them, but I realized that food speaks a lot about nations, about cultures and about individuals themselves and it is the perfect way to learn about countries in the deepest possible way. Food speaks a lot about history, speaks a lot about the struggles people have been through in some cases and speaks a lot about their joy if we look at festive dishes. Global Gastronomic Adventure is truly a way of getting to know the world and its meanings and I invite you to join me in this adventure, focusing on United States in this book. United States' cuisine has many influences and is different from region to region, but we will focus on the Southern cooking because I find it to be one of the most interesting. Southern cooking is a mix of the Native American cuisine and African American, but also English, German and French and that makes it a very versatile cuisine. The Southern states are Alabama, Florida, Georgia, Kentucky, Louisiana, Mississippi, North Carolina, Oklahoma, South Carolina, Virginia, West Virginia and Texas. People living here seem to have a real culture and those born there will always consider themselves Southerners. They are easy to spot usually anyway due to their distinctive accent and dialects. The main ingredients for Southern cuisine seem to be squash, corn, tomatoes, flour, milk/dairy and eggs. Corn seems to be a staple of the region and it makes sense if we think that it was the Native Americans who introduce corn to the Europeans back in the days. European brought Beef in the United States and thus it began a real food adventure for the Southern Americans. The American Civil War had a huge impact on the Southern cooking and the foods people ate. Crops were destroyed during the war and food was hard to find. People had to go back to simple, common ingredients and they couldn't afford wasting a thing. Although the states began to recover slowly the following years, people kept eating simple and cheap, this kind of food being known as "soul food" at that time. Southern food still remains the same nowadays, despite the modern world. People enjoy their simple living and their food reflects it perfectly. However, simple ingredients doesn't mean lacking flavor or taste. Quite the opposite actually. Food is delicious, loaded with simple, yet interesting flavors and nothing is wasted. Follow me in this journey and you will see it for yourself. Put your apron on and get a bit of Southern food in your own kitchen. Southerners are proud of their culture and food and the truth is their recipes are delicious and easy to make, as well as versatile, perfect for the modern world we live in, despite all its technologies. Simple foods are known for being some of the best and this book will guide you through a bit of Southern food history, showing you how to make the most famous Southern foods, but also a few unusual combination. The book includes 10 delicious, fail proof recipes, using easy to find ingredients and unexpected flavors. Be bold and try some of these, it's a piece of history in one bowl and it's incredibly delicious.

Available in PDF, EPUB and Kindle. Book excerpt: Old Southern Cookery: Recipes from America’s First Regional Cookbook Adapted for Today’s Kitchen gives new life to a beloved book that has spanned two centuries. Using the historic recipes from Mary Randolph’s 1824 bestselling cookbook, The Virginia House-Wife or Methodical Cook (considered by many culinary historians to be the first real American cookbook––and all describe it as the first regional cookbook), the authors have chosen the best of the original recipes to show how home cooks can prepare the food using contemporary methods. In translating these historic cooking methods to today’s kitchen techniques, headnotes contain pertinent historic facts about such things as butchery, firewood cooking, spices used, European origins of certain recipes, dishes brought by slaves to the New World, and even how our cooking utensils have evolved through two centuries.

Available in PDF, EPUB and Kindle. Book excerpt: NEW YORK TIMES BESTSELLER • The definitive cookbook on French cuisine for American readers: "What a cookbook should be: packed with sumptuous recipes, detailed instructions, and precise line drawings. Some of the instructions look daunting, but as Child herself says in the introduction, 'If you can read, you can cook.'" —Entertainment Weekly “I only wish that I had written it myself.” —James Beard Featuring 524 delicious recipes and over 100 instructive illustrations to guide readers every step of the way, Mastering the Art of French Cooking offers something for everyone, from seasoned experts to beginners who love good food and long to reproduce the savory delights of French cuisine. Julia Child, Simone Beck, and Louisette Bertholle break down the classic foods of France into a logical sequence of themes and variations rather than presenting an endless and diffuse catalogue of dishes—from historic Gallic masterpieces to the seemingly artless perfection of a dish of spring-green peas. Throughout, the focus is on key recipes that form the backbone of French cookery and lend themselves to an infinite number of elaborations—bound to increase anyone’s culinary repertoire. “Julia has slowly but surely altered our way of thinking about food. She has taken the fear out of the term ‘haute cuisine.’ She has increased gastronomic awareness a thousandfold by stressing the importance of good foundation and technique, and she has elevated our consciousness to the refined pleasures of dining." —Thomas Keller, The French Laundry
