More MFT was formed with ascorbic acid compared to the analogous system containing ribose. It is suggested that in the ribose/cysteine system much of the cysteine was bound up in a semi-stable thiazolidine, thus limiting the formation of H2S and the subsequent conversion of norfuraneol to MFT.
