Book excerpt: Afin de valoriser énergétiquement les déchets graisseux et huileux d’origine animale et végétale, il est nécessaire de faire varier leurs propriétés physiques. L’émulsification avec l’eau est considérée comme étant une technique prometteuse car elle permet d’obtenir une combustion complète et peu polluante. A la base de ces avantages il y a le phénomène de micro-explosion. L'objectif de ce travail est de contribuer à approfondir les connaissances sur les paramètres influant sur la micro-explosion, tels la taille de la phase dispersée dans l'émulsion. Les émulsions (μ-émulsion) sont d’abord caractérisées en fonction de la distribution de la taille de la phase dispersée par technique optique. En suite, grâce à une technique à capture d’imagine, il a été réalisé l’étude expérimentale de l'explosion des gouttelettes de d’eau dans l’huile, soumise à l’effet Leidenfrost. Les résultats montrent une nette dépendance à la taille des gouttelettes d'eau dispersées, des effets de la fragmentation par le phénomène de micro-explosion. En plus, une condition d’optimum a été identifiée. L'influence de la température de vaporisation de l’eau dispersée dans l’émulsion est ensuite étudiée au moyen de la calorimétrie différentielle. Cette approche révèle une dépendance monotone à la taille de la phase aqueuse dispersée mettant en évidence l’existence d’un état métastable. Enfin, en utilisant une technique optique appelée ombroscopie et un système d'acquisition de la température, l’évolution du phénomène de la micro-explosion synchronisée à l'histoire thermique de la goutte est étudié. In fact, this process is very old. In older industries such the food and agricultural, this technique has been extensively used.
