Book excerpt: L’utilisation des fluides frigoporteurs diphasiques solide-liquide (coulis de glace) est une solution intéressante pour répondre aux nouvelles sécuritaires et environnementales concernant l’industrie du froid. Toutefois, la question de la production de la phase solide dispersée demeure un inconvénient de ce type de technologie, du fait que le générateur est coûteux en termes d’investissement et maintenance. Dans ce travail de thèse, nous étudions deux techniques d’échange par contact direct, qui pourraient permettre d’obtenir une installation moins onéreuse et plus performante. Ces techniques sont l’évaporation sous vide et l’injection directe. Cette étude porte sur le dimensionnement du générateur. Concernant l’évaporation sous vide, nous avons déterminé par le calcul et par l’expérience les courbes d’équilibre glace-liquide-vapeur pour différentes solutions aqueuses susceptibles d’être utilisées dans la production des coulis de glace. Par ailleurs, nous traitons de manière formelle et expérimentale le problème de l’évaluation du débit d’évaporation sous vide. Quant à l’injection directe, après avoir mené une étude bibliographique assez complète sur l’évaporation d’un fluide dans un milieu non miscible, nous évaluons expérimentalement les échanges de chaleur entre les deux fluides, ce qui nous permet de construire un modèle simplifié. Nous avons complété ce travail avec quelques expériences effectuées sur un prototype de générateur à injection directe.

Dans ce premier temps, nous avons étudié l'influence de la rugosité Ra d'une paroi sur la rupture de surfusion. Les résultats montrent que le degré de surfusion évolue selon une loi puissance de la rugosité. Nous avons étudié dans un deuxième temps la cristallisation en écoulement à l'aide d'un échangeur tubulaire transparent. Les enregistrements vidéo nous ont permis de déterminer les différentes étapes de la production de coulis de glace à l'aide d'un échangeur tubulaire et de mesurer les différentes vitesses de rétro-diffusion du front de cristallisation observées. Enfin nous avons développé un modèle numérique capable de simuler la cristallisation de solutions avec rupture de surfusion qu'elles soient statiques dans une cellule cylindrique ou en écoulement dans un tube. Ce travail financé par l'ADEME (Agence De l'Environnement et de la Maîtrise de l'Énergie) et la région Pays-de-Loire contribue à l'avancement sur l'étude des générateurs de coulis de glace qui est aujourd'hui le prinicipal verrou de cette technologie.

Afin d’en contrôler les performances, des connaissances sur les aspects phénoménologiques de la rupture de surfusion sont nécessaires, et plus particulièrement sur les effets dynamiques et thermiques de la cristallisation au moment de la rupture de surfusion. Dans ce contexte, l’ouvrage présente des études expérimentales sur la rupture de surfusion de l’eau. Dans un premier temps, des visualisations ont permis de visualiser la manière dont le coulis de glace est obtenu. Dans un second temps, une étude de la cristallisation d’une masse d’eau soumise à différents degrés de surfusion dans un canal capillaire a permis d’analyser l’aspect thermique du phénomène et l’évolution dynamique de l’interface liquide-solide. Dans une dernière partie, le développement d’une simulation numérique décrivant les phénomènes thermiques et dynamiques qui se manifestent à la rupture de surfusion est présenté.
