Book excerpt: A elaboracao de escalas de maturacao de frutos de mamoeiro 'Sunrise Solo' e 'Golden' permitiu estudo comparativo entre as cultivares em que se constatou que o mamao 'Golden'perde sua firmeza mais previamente e alcanca teores de solidos soluveis medios inferiores em relacao ao mamao 'Sunrise Solo'. Esta constatacao sugere que o mamao 'Golden' deva ser colhido mais verde para suportar melhor o transporte e o manuseio, alem de se estabelecer qual o teor ideal de solidos soluveis para ser adotado como ponto de colheita, diferente do estabelecido para as demais cultivares do grupo Solo. A relacao entre clorofilas totais e carotenoides totais de casca explicou o porque da dificuldade de se diferenciar os estadios de maturacao em mamao 'Golden', o que pode estar trazendo problemas de classificacao adequada e homogeneidade na embalagem. Apesar de nao terem sido observadas diferencas no metabolismo dos frutos que justificasse sua adocao, a atmosfera controlada contendo 3% de 02 e 3% de CO2 promoveu melhor controle de doencas em mamao produzido na epoca mais seca e de temperaturas mais amenas do ano, mas nao se constataram diferencas em relacao ao controle, no periodo mais quente e umido do ano, em Linhares-ES. Frutos armazenados sob atmosfera controlada contendo 3% de 02 e 6% de CO2 apresentaram maior incidencia de doencas, especialmente Pinta Preta. Desta forma, realizou-se experimento adicionando-se saches contendo cinco gramas de permanganato de potassio as caixas de embalagem, objetivando-se otimizar a eficiencia da atmosfera 3% de 02 e 3% de CO2. Foi verificado maior controle de doencas em mamao 'Sunrise Solo', quando se adotou as tecnicas associadas. No entanto, a incidencia de doencas em mamao 'Golden' aumentou ao se armazenar sob atmosfera controlada, mas a colocacao dos saches amenizou o problema. Caracterizou-se, portanto, que se deve implementar tecnologias respeitando-se a fisiologia de cada cultivar. Por ultimo, observou-se a evolucao das taxas de emissao de etileno e dioxido de carbono, as temperaturas de 10o C e 25o C. Nao se verificaram diferencas significativas entre as cultivares nas duas temperaturas estudadas. a evolucao das regressoes de quinto grau das taxas de emissao de etileno e de dioxido de carbono correlacionadas com o indice de cor de casca, de mamao armazenado a 25o C, com picos coincidentes com o amadurecimento e o sobreamadurecimento dos frutos.
