Book excerpt: This research examines the effect of a nutrition education intervention to change attitudes and other factors associated with eating breakfast and consuming low-fat dairy and whole-grains. Adolescents (n = 106) 11 to 15 years old were recruited from afterschool programs in Los Angeles County, California. Participants in the treatment group (n = 57) met once weekly for 60 minutes during seven weeks. The curriculum focused on changing attitudes, subjective norms, and perceived behavioral control toward eating breakfast along with including low-fat dairy and whole grains. The first three lessons focused on basic nutrition concepts. The later lessons focused on identifying barriers and overcoming barriers, goal-setting, and identifying methods to stay motivated. Questionnaires were administered at baseline and post-intervention. Data were analyzed using SAS statistical analysis program (v. 9.2). Eighty-eight percent of participants were Hispanic, 55% were girls, and mean age was 12 years. One-hundred six adolescents completed the questionnaire at baseline and 75 completed it at post-intervention. Cronbach alpha statistic for subjective norms and attitudes toward eating breakfast, consuming low-fat dairy and whole-grains were 0.67 and higher for each dependant variable. Intention was significantly predicted by attitudes, subjective norms, and perceived behavioral control; however, as these models do not differentiate change, additional models were run with interactions between group (treatment versus control) and the change variables. Registered dietitians nutritionists (RDNs) are involved in adolescent obesity interventions intended to reverse or decrease immediate and long term complications. Qualitative methodology was used to identify perceived usefulness of RDNs to change adolescent nutrition behaviors in an obesity intervention study: Wellness Incentive to Health (WITH) program. Ten participants (adolescents between 15-17 years of age, 2 males and 8 females) were interviewed. A questionnaire guide was developed to ask participants about their knowledge of RDNs, the benefits of having RDNs in the program, and what they learned from RDNs. Participant interviews lasted approximately 30 minutes, were audio-recorded, and transcribed. Audio transcriptions were systematically coded and analyzed to identify central themes. Nine of ten participants reported little to no knowledge about RDNs before participating in the WITH program. Four overarching themes were identified and formed the Adolescent Nutrition Learning Model from participant responses: 1) RDNs Provide Nutrition Information (i.e. why and how food benefits the body, information about healthy cooking and preparation of food; and information about healthier food behaviors (i.e. portion sizes, reading labels, and recognizing satiety); 2) Adolescents Prefer Hands-On Activities (i.e. cooking activities, tasting foods, going out to restaurants, and working in groups); 3) Adolescents described their Change in Behavior from Concepts Learned (i.e. learned how to eat healthy in social adolescent settings); and 4) Adolescents disliked logging food. Registered dietitian nutritionists in an adolescent obesity intervention program were perceived to have provided valued nutrition expertise and an Adolescent Nutrition Learning Model may be useful in guiding nutrition education for teens.

Book excerpt: The increasing incidence of obesity and nutrition related chronic diseases is becoming a public health concern. It is important for health professionals to understand how they can best educate the public in order to prevent this epidemic from worsening. The aim of this study was to evaluate whether an interactive nutrition education program is effective in prompting dietary behavior changes in adolescent females. The subjects of this study were 9 Caucasian adolescent females from Reading, Pennsylvania. The mean age was 11.6 years old. The subjects were interviewed to obtain twenty-four hour recalls to use as baseline data and as a nutrition needs assessment. They were also asked a set of general nutrition knowledge questions. An interactive nutrition education program was designed to meet the nutrition concerns of the particular audience. The initial twenty-four hour recalls showed the average adolescent participant's diet was deficient in milk, fruits, vegetables, and complex carbohydrates. Subjects participated in a nutrition education intervention that consisted of learning about nutrition, planning snacks, and goal setting. The intervention was designed to facilitate goal setting and behavior changes that would increase the consumption of the deficient food groups. Twenty-four hour food recall data was collected after the nutrition education program and compared to the initial data to determine whether the students implemented behavior changes that would affect their nutritional intake. After the nutrition education program, the average number of grain and meat servings increased. The average number of fats, oils, sweets, and dairy products decreased. There was a slight decrease in the average number of servings from the fruit group and a slight increase the average number of vegetable servings. The nutrition intervention resulted in 8 out of the 9 subjects creating and remembering their individual nutrition intake goaL Five of the students met their individualized nutrition goals on the day the food recall data was collected. Nutrition knowledge did not change due to the intervention. The majority of subjects were able to name the food groups and state the recommended number of servings for the food groups before and after the intervention. The difference in number of servings from the food groups before and after the intervention was slight; therefore, it was difficult to relate the change in intake to the effectiveness of the education session. This intervention was effective in motivating students to think about nutrition goals. The majority of students actually implemented their individual goals. An expansion of the sample size for this study would help to improve the analysis of individualized goals. A larger sample of goals would enable the nutrition goals to be categorized and evaluated based on the food group or food choices they influence.
