Para ello se elaboraron vinos coinoculados (inoculación simultanea de levaduras y bacterias) y vinos no coinoculados (inoculación de levaduras y una vez acabada la fermentación alcohólica inoculación de bacterias lácticas). A lo largo del proceso de vinificación y una vez terminados los vinos, se llevo a cabo el seguimiento y comparación analítica. Finalmente se realizaron dos estudios de consumidores, en los que participaron más de 400 personas, para poder determinar de manera más fiable la aceptación por parte de los consumidores de los vinos coinoculados.[Resumen del autor].
