Book excerpt: Bee Keeping with ZEST by Bill Summers This is a book like no other on the subject of honey bees. It addresses the author s belief and that of his colleague (Dave Durrant) that the welfare of honey bees in a traditional hive fails to provide for their needs as biological systems. This realisation led to the design of the ZEST hive which does do so. It deploys a longitudinal external envelope, with top bee entry and trickle ventilation, made from lightweight insulated building blocks and plastic lattice frames within which the bees draw out their wild honeycomb. The former is DIY from builders merchants and the latter available in boxes of 12. The external envelope is not just a lightweight insulated one, but is sufficiently heavy to provide the bees with a thermal lag of an envelope that is easily thermo-regulated to 35deg, the fundamental requirement of their brood. From the honey bee perspective the ZEST hive overcomes all the problems of other hive designs and frame types. An unintended consequence of the ZEST hive design has been to eliminate varroa. The ZEST is functionally free of it. This is witnessed by the hive debris. The cause seems to be the smaller natural cell size and natural warmth of the hive envelope, both of which speed the biological process of honey bee pupation. The time available for the varroa to mature in the pupating cells is reduced. Their numbers fall to zero rather than rises exponentially. This book and its thesis will prove to be seminal in the drive to solve the problems of honey bee health in all its aspects and manifestations. There has been a recent doubling of beekeepers in the country caused by the ecologically minded seeking to assist honey bees in a better environment. This can be applauded. This book is to assist them and their bees. The ZEST hive is democratic. Anyone can have one. It is cheap, appropriate and amenable to a more self-sufficient way of life. It is a living sustainable system, not a product. It can be entirely D.I.Y. No one owns it. It can be free. Take it. Use it. Have fun. The ZEST hive does a great deal more with a great deal less.

Book excerpt: Beekeepers require a user friendly hive that helps the bees keep warm in Winter, stops them over heating in the Summer and reduces the risk of varroa and bee related diseases. It must be economical to buy, easy to construct, have minimal maintenance and storage issues, be a hive that is sustainable, that gives the bees space to grow colonies quickly and to have ample frame area for honey storage. I have looked at every possible beehive on the market at the moment (Oct 2014) and there is only one model that delivers these attributes. Bees need a ZEST for life. Tim Eggins

Book excerpt: If you've been toying with the idea of keeping bees but don't know where to start, where to get the bees from, how to set it up, how to set up your beehives for optimal honey production, how to maintain the health of your colony and much more, keep reading… You Are about to Discover How to Start Keeping Bees for Honey or Wax, From Scratch, Even If You've Never Done Anything Like It Before! Bees are probably the most important insects in the world, not just for their honey and wax but because they play an important part in pollination, which means without them, we would probably not have the juicy fruits we munch on. It is no wonder that commercial bee keeping is said to add $15-$20 billion in economic value every single year! This probably explains why raising bees is quickly becoming more and more popular by the day- and it's not just because it is an interesting hobby, but also because it is one of the best ways to save, make money, boost your plant garden and still get the cleanest and safest bee products (honey and wax) straight to your table. And hey, that's not the best part. These insects are some of the most independent animals on the planet. In fact, they prefer to be left alone. It is more or less a set, provide optimal conditions for them to thrive by keeping off pesticides, and forget – the bees will fend for themselves and won't require any other input from you! And they will reward you handsomely for that with tons of honey, wax and pollinated plants! Yeah, well… all that sounds appetizing, but how would I get started? I've never done this before… You wonder? Good concern. You've probably also asked yourself this: How do I acquire the bees? How do I set up a colony? What do bees eat; how do I feed them? Is honey a profitable product? How do I avoid stings; can I harvest honey and wax without having to tolerate one or two stings? If you've been having such questions and concerns, then you need this beginners' guide to beekeeping. This book will take you through everything you need to know about this easy practice right from selecting the bee itself, setting up your colony, feeding them, avoiding common problems and selling honey- just to mention the least. More precisely, this book will teach you: The history and evolution of beekeeping, and what research says about the practice The different types of beekeeping The benefits and risks of beekeeping How to select the right type of bee and set up the bee colony The types of hives and how to choose the right one for you How to buy, transport and feed new bees What you need to look at as you inspect your beehive What you need to know about bee stings How to avert and solve common problems What you need to know about honey prices and market demand What you need to know about the colonies' activities in different seasons How to harvest honey and beeswax …And much more! So if you've been desiring to establish your own beautiful hives but have been a bit apprehensive about starting because you couldn't figure out how to do so without risking your money, time and life, then I believe you now have a better reason to get started today! Even if you are scared and confused, this book will alleviate your fears and give you the much needed confidence to get started and succeed at it!

Book excerpt: A comprehensive cookbook and guide to honey “packed with good recipes [from] one of the absolute best food writers around” (Mollie Katzen, author of Moosewood Cookbook). Honey is a lot like olive oil: How do you know what type to select at the farmers’ market or store? Are all honey bears created equal? What makes one variety different from another? Which is better for baking or best for savory dishes? Why is one darker than another, and what does that mean? These questions and more are answered in Taste of Honey. Marie Simmons reveals the life of a bee, and how the terroir of its habitat influences both the color and flavor of the honey it produces. Then she explains how these flavor profiles are best paired with certain ingredients in over sixty sweet and savory recipes including: Snacks and Breakfast: Flatbread with Melted Manchego, Rosemary and Honey; Honey, Scallion and Cheddar Scones; Honey French Toast with Peaches with Honey and Mint Main Dishes: Crispy Coconut Shrimp with Tangy Honey Dipping Sauce; Salmon with Honey, Miso and Ginger Glaze; Baby Back Ribs with Chipotle Honey Barbecue Sauce Salads and Vegetable Side Dishes: Pear, Stilton and Bacon Salad with Honey Dressing and Honey Glazed Pecans; Mango and Celery Salad with Honey and Lime Dressing; Roasted Eggplant Slices with Warmed Feta and Honey Drizzle Sweets: Honey Pear Tart with Honey Butter Sauce; Chunky Peanut Butter and Honey Cookies; Honey Zabaglione; Honey Panna Cotta; Micki’s Special Honey Fudge Brownies Each recipe includes a guide for the type of honey that will work best with it, and ideas to experiment with. In addition, there are fast, simple things to do with honey at the end of each recipe chapter; a glossary covering forty different varietals of honey; information about its healing properties; and tidbits about bees and honey through history. Photos by Meg Smith capture the intimate life of the bee and its activity producing honey—along with the gorgeous food you can make with it. “Holy honey! Taste of Honey, with its lush photos and delectable recipes, not only teaches how to best use single-origin honey in the kitchen, it reminds us that honey is an almost magical substance, connecting us to our landscape, and to the hardworking honey bee. Marie Simmons’s book has made robbing the hive even sweeter.” —Novella Carpenter, author of Farm City “I’m a honey collector, too, but unlike Marie, I tend to stick to a drizzle of honey over cheese, toast, or hot cereal and the occasional dessert. There are so many more ideas here for using honey . . . And I do hope that the appeal of honey itself with lead us to care more for our struggling bee populations.” —Deborah Madison, author of Local Flavors

Book excerpt: One woman's charming and personal account of abandoning the rat race to live blissfully as a beekeeper and honey entrepreneur plus everything you'd ever want to know about bees. Ten years ago, Marina Marchese fell in love with bees during a tour of a neighbor's honeybee hives. Surprised to find that allowing docile honeybees to crawl across her hands instilled a serene tranquility and comfort, Marina quit her job, acquired her own bees, built her own hives, harvested honey, earned a certificate in apitherapy, studied wine tasting in order to transfer those skills to honey tasting, and eventually opened her own business. Today, Red Bee Honey sells artisanal honey and honey-related products to shops and restaurants all over the country. "Honeybee" is not only a warm and inspiring story of one woman's intimate experience with honeybees (arguably the most industrious creatures on earth) but it is also bursting with fascinating and practical information about all aspects of bees, beekeeping, and honey, including life inside the beehive and the role of the queen, drones, and workers; how bees make honey; pollination and its importance in sustaining life; building a beehive; hiving and keeping honeybees; harvesting honey and comb; healing with honey and the practice of apitherapy; and much, much more. Available in PDF, EPUB and Kindle. Book excerpt: In Zest for Learning: Developing curious learners who relish real-world challenges, Bill Lucas and Ellen Spencer explore the ways in which teachers can help their pupils to find their passions, develop independence and challenge themselves to become more expansive learners. Young people need more than subject knowledge in order to thrive they need capabilities. The Pedagogy for a Changing World series details which capabilities matter and how schools can develop them. A key capability is zest: the curiosity and desire to experience new things. Zest for Learning offers a powerful new synthesis of thinking about what it takes for young people to flourish both in education and in the wider world, especially at a time when preparing them for life beyond school often calls for brave leadership. This could be encouraged through, for example, greater engagement with sports and the arts, by collaborating with external bodies such as the Scouts and Guides or the Duke of Edinburgh's Award scheme or by working with libraries, museums, faith groups and environmental associations. In this book Bill and Ellen offer a framework for zest: a practical guide for teachers, underpinned by theory. They draw on a number of areas of knowledge and practice that each have something to contribute to the concept of zest for learning, bringing together ideas in concrete and actionable ways. Zest for Learning connects the co-curriculum with the formal curriculum, building both theoretical and practical confidence in the kinds of pedagogies which work well. Bill and Ellen have infused the book with a wide range of ideas for getting pupils to love learning so much that they will be able to learn whatever they want to throughout their lives. The authors also go further by presenting case studies that illustrate the successful integration of the co-curriculum with the formal curriculum at various educational institutions, and by providing an A to Z of practical ideas and activities for developing zest in young learners. Suitable for all teachers and leaders, in both primary and secondary settings.
