Book excerpt: "This book follows the individuals that worked and made a living in this [canning and packing] flourishing industry. Some individuals only lasted 1 to 2 years at the height of demand. others saw their business grow to be great, large enterprises. The industry grew rapidly as the development of inventions progressed and the influx of foreign persons migrating to Baltimore. In 1888, it was reported there were 225 packers in Baltimore. They were not all listed in the Baltimore Directories. Transportation improvements allowed many canneries to move to the southern and western states. Some even moved their entire employment force with them. The growing season was longer and the supply met the country's growing demand for food items."--Introduction.

Available in PDF, EPUB and Kindle. Book excerpt: Baltimore has a long, colorful history that traditionally has been focused on famous men, social elites, and patriotic events. The Baltimore Book is both a history of "the other Baltimore" and a tour guide to places in the city that are important to labor, African American, and women's history. The book grew out of a popular local bus tour conducted by public historians, the People's History Tour of Baltimore, that began in 1982. This book records and adds sites to that tour; provides maps, photographs, and contemporary documents; and includes interviews with some of the uncelebrated people whose experiences as Baltimoreans reflect more about the city than Francis Scott Key ever did.The tour begins at the B&O Railroad Station at Camden Yards, site of the railroad strike of 1877, moves on to Hampden-Woodbury, the mid-19th century cotton textile industry's company town, and stops on the way to visit Evergreen House and to hear the narratives of ex-slaves. We travel to Old West Baltimore, the late 19th-century center of commerce and culture for the African American community; Fells Point; Sparrows Point; the suburbs; Federal Hill; and Baltimore's "renaissance" at Harborplace. Interviews with community activists, civil rights workers, Catholic Workers, and labor union organizers bring color and passion to this historical tour. Specific labor struggles, class and race relations, and the contributions of women to Baltimore's development are emphasized at each stop. Book excerpt: The seafood industry on the coast of Mississippi has attracted waves of immigrants and other workers—oftentimes folks who were either already acquainted with maritime livelihoods or those who quickly adapted to the resources of the region. For generations the industry has provided employment and sustenance to Coast peoples. Deanne Love Stephens tells their stories and identifies key populations who have worked this harvest. Oyster and shrimp processing were the most significant of these trades, and much of the Gulf Coast's history follows these two delicacies. Harvesting, processing, and marketing oyster and shrimp products built the Mississippi seafood industry and powered the growth of the entire coastal region. This book is the first to offer a broad view of the many ethnic groups and distinct populations who toiled in the oyster and shrimp industries. Relying heavily upon contemporary newspapers, oral histories, and interviews to create a rich picture of the industry and its workers, the author presents the history of laboring people who daily toiled in factories and often went unheard and unrecognized. Stephens provides an overview of significant early developments and the beginnings of the industry, considering the development of railroad expansion, lighthouse construction, and ice technology. She covers significant state and federal legislation that both defined and protected marine resources, illustrating the depth of the industry’s importance as Mississippians wrestled with adequate protective measures to preserve oyster and shrimp resources throughout the nineteenth and twentieth centuries.

Available in PDF, EPUB and Kindle. Book excerpt: The first synthesis of the archaeological heritage of Baltimore Below Baltimore provides the first detailed overview of the rich archaeological heritage of the people and city of Baltimore. Drawing on a combined five decades of experience in the Chesapeake region and compiling 70 years of published and unpublished records, Adam Fracchia and Patricia Samford explore the layers of the city’s material record from the late seventeenth century to the recent past. Fracchia and Samford focus on major themes and movements such as Baltimore’s growth into a mercantile port city, the city’s diverse immigrant populations and the history of their foodways, and the ways industries—including railroads, glass factories, sugar refineries, and breweries—structured the city’s landscape. Using insights from artifacts and the built environment, they detail individual lives and experiences within different historical periods and show how the city has changed over time. Synthesizing a large amount of information that has never before been gathered in one place, Below Baltimore demonstrates how urban archaeology can approach cities as larger collective artifacts of the past, where excavations can uncover patterns of inequality in urbanization and industrialization that connect to social and economic processes still at work today.

Book excerpt: Canning is the most important factor in the fishery industry today, but information concerning the principles of canning fishery products has not been assembled, nor has a description of modern canning methods been previously available. This report is a reference handbook on problems in the commercial canning of fishery products. In addition to discussing the scientific principles on which canning is based, it outlines the various engineering problems faced by the canner, and gives a detailed description of the methods used today in the commercial canning of 48 varieties of fish and shellfish packed commercially in hermetically sealed containers. Information on spoilage and methods used in the examination of fishery products is of use to the laboratory worker. The discussion on fishery products as food is of benefit to producers, brokers, dealers, food technologists, home economists, consumers, and all others interested in foods and their use.
