Excerpt: ...upon the size of the chest and the amount of ice in it. It will sometimes be as low as 40, or even lower, but never quite reaches the freezing point; at other times it will run up to 500, and as the ice melts the temperature rises to that of the outer air. Food preserved in an ice chest is far less thoroughly protected than in cold-storage plants. The use of the ice chest is simply a means of checking the development of bacteria, but it by no means stops their growth. At the temperature of 400 most bacteria, if they grow at all, grow very slowly, and the food may therefore be preserved for quite a long period, although it is sure in the end to undergo certain forms of putrefaction. The type of putrefaction that occurs in material kept in an ice chest is usually somewhat different from that which occurs in the same material at an ordinary room temperature. The common putrefactive bacteria grow readily at high temperatures, but hardly at all at the temperature of the ice chest. Other types of bacteria, however, grow more readily at the lower than at the higher temperatures, and meat or other food kept in the refrigerator will in the course of time undergo a type of decay due to the microorganisms favored by the low temperature. This decayed meat appears somewhat different from decayed meat at higher temperatures and has a different odor, --a fact indicating a different type of putrefaction. Certain peculiar kinds of decay are seen at these low temperatures which are hardly found under other conditions. Occasionally, for example, fleshy foods, particularly those from salt water, like lobsters or fish, develop a peculiar phosphorescence if kept in an ice chest. If examined in the dark they will be seen to glow with a somewhat brilliant..

A number of years elapsed before what are now universally acknowledged to be the Obvious requirements of such investiga tions were put in practice, namely, that the first thing to be ascertained is the point from which to start before any con elusions can be drawn. This requirement was gradually defined with greater precision, and at last, as we shall see later, a point was reached which satisfies this demand in a higher degree than has hitherto been the case in the allied branches of science. A microscope capable of magnifying to the extent of 1000 diameters is, as a rule, necessary for the investigation Of micro organisms. F or the yeast and mould fungi the only preparation generally required consists in placing a drop of the liquid con taining the organisms on an Object-glass, and spreading it out in a thin layer by means of a cover - glass. When cultivated on solid substances, a very small portion of the growth is first mixed with a drop of water. Spoiling is not due directly to the action of air or of heat and it is not simply a chemical or a physical change. When vegetable materials ferment, decay, or turn sour, the spoilage is due to the growth of certain microscopic living organisms, or germs. These all belong to the vegetable kingdom and are divided into three groups: molds, yeasts, and bacteria. Familiar exam ples of each group are the blue-green mold of spoiled fruits, the yeast used in bread making, and the bacteria of the scum, or mother, of vine gar. What we see in compressed yeast, for instance, is simply a mass consisting of millions of germs. Individual germs are too minute to be seen without a microscope. Their activities cause the molding of jellies, the swelling and souring of canned fruits, the spoiling of canned vege tables, and the putrefying of meats. The character of the material largely determines which type of spoiling will occur. Acidity is favor able to yeasts and molds. Fruits may therefore spoil by yeast fermenta tion or become moldy. Most bacteria prefer a medium with little or no acid. Decay of vegetables or meats is therefore usually due to the action of bacteria. Neither fruits nor acid vegetables are favorable to the growth of most bacteria. Yeasts, molds, and bacteria are widely distributed and occur in the air, in water, on fruits and vegetables, and in great abundance in soil and dust. Hence at the time of canning not only the fruit or vegetable but also, the sirup or brine and the containers are more or less heavily contaminated with all manner of microorganisms.
