Available in PDF, EPUB and Kindle. Book excerpt: One of the main concerns of the food industry is the need for high-quality fresh fruits and fruit products with good sensory quality, long shelf life, and high nutritional value. To meet these demands, new processing technologies are under investigation and development. Advances in Fruit Processing Technologies incorporates fundamentals in food processing as well as the advances made in recent years to improve final product quality. With contributions from a panel of international researchers who present a blend of classical and emerging technologies, the book explores: Ozone, ultrasound, irradiation, pulsed electric field, vacuum frying, and high-pressure processing Ultraviolet and membrane processing Enzymatic maceration, freeze concentration, and refrigeration The effect of processing on sensory characteristics and nutritional value New trends in modified atmosphere packaging The use of fruit juices as a vehicle for probiotic microorganisms Prebiotic oligosaccharides as an alternative for dairy products Incorporating a series of case studies on the application of various technologies, the book reviews their advantages, limitations, successes, and failures. The contributors also examine the implications of food processing technologies on waste production, energy use, and resource requirements. This comprehensive survey of methods for optimizing fruit quality is an ideal resource for those in the fruit and vegetable industry looking for innovations that can improve efficiency, reduce waste, and cut costs.

Book Synopsis Innovative Processing Technologies for Foods with Bioactive Compounds by : Jorge J. Moreno
Download or read book Innovative Processing Technologies for Foods with Bioactive Compounds written by Jorge J. Moreno and published by CRC Press. This book was released on 2016-08-05 with total page 326 pages. Available in PDF, EPUB and Kindle. Book excerpt: Natural foods, like fruits and vegetables, represent the simplest form of functional foods and provide excellent sources of functional compounds. Maximizing opportunities to make use of and incorporate these compounds requires special processing. Fortunately, technologies available to produce food with enhanced active compounds have advanced significantly over the last few years. This book covers the fundamentals as well as the innovations made during the last few years on the emerging technologies used in the development of food with bioactive compounds.
Book Synopsis Microbiology of Fruits and Vegetables by : Gerald M. Sapers
Download or read book Microbiology of Fruits and Vegetables written by Gerald M. Sapers and published by CRC Press. This book was released on 2005-08-29 with total page 660 pages. Available in PDF, EPUB and Kindle. Book excerpt: Microbiology of Fruits and Vegetables presents a holistic view of the problem of produce contamination that examines both pre-harvest and post-harvest sources and practices. It addresses a number of topical issues relating to the microbiological quality and safety of fresh and processed fruits and vegetables and explores the linkage between microbial attachment, the state of microbial contaminants on produce surfaces, and the problem of decontamination. This volume focuses on five distinct areas, and within these areas, provides in-depth coverage of scientific issues important to an understanding of the field and technical issues of economic and public health significance.

Available in PDF, EPUB and Kindle. Book excerpt: This book represents the Proceedings of the Fifth International Workshop on Food Mycology, which was held on the Danish island of Samsø from 15-19 October, 2003. This series of Workshops c- menced in Boston, USA, in July 1984, from which the proceedings were published as Methods for Mycological Examination of Food (edited by A. D. King et al. , published by Plenum Press, New York, 1986). The second Workshop was held in Baarn, the Netherlands, in August 1990, and the proceedings were published as Modern Methods in Food Mycology (edited by R. A. Samson et al. , and published by Elsevier, Amsterdam, 1992). The Third Workshop was held in Copenhagen, Denmark, in 1994 and the Fourth near Uppsala, Sweden, in 1998. The proceedings of those two workshops were p- lished as scientific papers in the International Journal of Food Microbiology. International Workshops on Food Mycology are held under the auspices of the International Commission on Food Mycology, a Commission under the Mycology Division of the International Union of Microbiological Societies. Details of this Commission are given in the final chapter of this book. This Fifth Workshop was organised by Ulf Thrane, Jens Frisvad, Per V. Book excerpt: For millennia, the presence of fungi in food has been both boon and bane to food stores. Fungi can spoil large quantities of food and produce dangerous toxins that threaten human health; however, fungal spoilage in certain foods can produce a unique, highly prized food source and there are some very effective fungal derived medicines. A thorough un

Book Synopsis Viruses in Food by : Food and Agriculture Organization of the United Nations
Download or read book Viruses in Food written by Food and Agriculture Organization of the United Nations and published by Microbiological Risk Assessmen. This book was released on 2008 with total page 0 pages. Available in PDF, EPUB and Kindle. Book excerpt: This report draws attention to the threat of viruses as a risk to public health when they are present in food. Viruses require special attention because they behave differently from bacteria, and because currently used control measures typically either have not been validated and there is not a good understanding of their efficacy towards viruses, or are not effective in controlling virus contamination. Data from recent studies have shown that foodborne viral infections are very common in many parts of the world despite the measures already in place to reduce bacterial contamination.
Book Synopsis Foodborne Parasitic Protozoa by : Huw V. Smith
Download or read book Foodborne Parasitic Protozoa written by Huw V. Smith and published by Nova Science Publishers. This book was released on 2012 with total page 0 pages. Available in PDF, EPUB and Kindle. Book excerpt: The human burden of infection caused by food-borne protozoan parasites is enormous; billions of people are infected world-wide and the DALY (disability-adjusted life year) toll due to these infections is correspondingly huge. Whilst some infections may result in mild, relatively insignificant clinical disease, others may be seriously debilitating or even fatal. This book provides detailed insights into those protozoa who are currently most relevant regarding food-borne transmission. This book is intended to be of use and interest for a range of professionals, from researchers to regulators, from diagnosticians to parasitologists to food technologists; it should be read by those who work in academia, within the various branches of the food industry and food research associations, in government regulatory agencies, and in environmental health departments.
