Book excerpt: Excerpt from Uruguay's Livestock and Meat Industry Uruguay is a major exporter of wool, meat, and hides and skins. After Argentina, it leads the countries of the Western Hemisphere in exports of beef and veal, even though with Argentina it tends to take either first or second rank among all countries each year in per capita consumption. When this meat enters the list of u.s. Imports, it does so in canned beef form. Uruguay's beef and veal exports have risen faster than production, the former nearly doubling by 1965 over the 5-year average level for 195 6-60, the latter increasing by a little over one-third. Uruguay usually ranks second only to Argentina among Western Hemisphere suppliers of wool in world trade, with the United States and the United Kingdom principal markets. Sinclair on the Hog-Raising and Pork-Packing Industry in the United States, and on the Live Stock and Frozen Meat Exportation of the Argentine Republic In some places it was stated that unthreshed wheat had been fed successfully to hogs. The ripe wheat had been cut, bound, and stacked, and the sheaves given to the hogs 111 open yards. The hogs in this way eating more slowly were able to digest itbetter. This was in the first stages of fattening. The hogs in this way received considerable exercise. Many farmers in Victoria could not fail to notice how hogs will thrive when turned into wheat stubbles which do not seem to furnish much feed for them, and it seems feasible to imagine that they would do excellently on sheaves of wheat fed to them. In feeding dry threshed wheat to hogs, farmers in the States stated they masticated it better when it was fed to them sprinkled on the grass, where the latter was not too long. In this way they ate slowly, not having the opportunity to bolt it the same as if given to them in a trough. An enormous consumption of wheat took place in the United States between July and December last in feeding to hogs and all farm animals, consequent on the partial failure in several states of the corn crop and the cheapness of wheat. Book excerpt: Excerpt from Foreign Agriculture Circular: Livestock and Meat; December 1981; Flm-7-81 Outside North America, the forecast for most regions, except Brazil, is for beef and veal production to remain at the 1981 level. Argentina and Australia, facing unfavorable prices in export markets and drought conditions in many of the grassland areas, are forecast to produce less beef again in 1982. New Zealand has not had serious weather problems but it does face the same export prices and it too is expecting another small decline. Beef production in the EC in 1982 should stabilize at the 1981 level, which was off 4 percent from the year before. Worldwide, beef has comprised around 53 percent of total red meat production in recent years, in the United States, roughly 60 percent; and in both instances, pork has followed with about 38 percent of to tal red meat output. Beef's relative popularity from region to region around the world is influenced by tradition as well as by various economic factors such as product availability, comparative prices and the consumer income with which to buy. Local customs and even religion play an important role in beef consumption habits. Annual per capita beef consumption is highest in Argentina (153-190 pounds in recent years), Uruguay (146 Paraguay (104 United States (94 Australia (85 and New Zea land (94 Each of these major beef-eating countries is characterized by extensive areas of grazing land and climatic factors conducive to the development of vast cattle industries. All but the United States are substantial net exporters' of beef. About the Publisher Forgotten Books publishes hundreds of thousands of rare and classic books. Book excerpt: Excerpt from Foreign Agriculture Circular: Livestock and Meat; April, 1976 A program of voluntary restraints With supplying countries eligible to export certain meats (primarily fresh, chilled, or frozen beef and veal) is being negotiated by the Department of State. Taking into account this program, beef and veal imports into the United States in 1976 are expected to be about 8no,000 tons (carcass weight equivalent)-5 percent or n0,000 tons above the 1975 import level. Meat production in Canada is expected to increase only slightly this year, with the increase spread about evenly over all categories. Imports of beef and veal are expected to increase to tons (carcass weight equivalent) but this increase will be offset by a return to more normal exports to the 'united States. This trade was interrupted during l97n and 1975 by import quotas on both Sides of the border. In the major exporting countries and areas - Australia, New Zealand, Central America, Argentina, and Uruguay-beef and veal production is expected to be up by about 6 percent tons in 1976. The four key commercial markets are forecast to take nearly tons of the increase. About tons are expected to be consumed domestically, leaving nearly tons for ex port to nontraditional markets. The most important of these might be the ussr. About the Publisher Forgotten Books publishes hundreds of thousands of rare and classic books. Book excerpt: Excerpt from Foreign Agriculture Circular: Livestock and Meat; April, 1981 Dominican Republic, which needed additional meat to offset its devastated swine industry; Saudi Arabia and Iraq, where oil money is being used to upgrade domestic diets; Egypt, the largest purchaser of all in 1980 with almost tons; and Japan, where the u.s. Share increased in what is traditionally the largest poultry export market. The 1981 growth is again expected to be distributed among traditional markets such as Japan, Hong Kong, and the Caribbean and newer markets such as those in the Middle East. Beef and veal exports by the major exporting countries are expected to decline 4 percent in 1981. Australia will lead this decline, dropping tons (15 percent) as a result of dry conditions, reduced cattle numbers, and weak international prices. On the other hand, Mexico is expected to boost beef and veal production, and may reinitiate exports to the United States. The Central American countries have the potential in 1981 to increase production and exports of beef and veal; however, civil unrest and high interest rates in these countries and low world prices may dim this prospect. Argentina will most likely see a decline in beef and veal production and a concurrent decline in exports partly as a result of government policies discouraging exports. Book excerpt: "Within a day of receiving this book, I had consumed it... Absorbing, moving, and compulsively readable."—Lydia Davis In this affectionate, heart-warming chronicle, Rosamund Young distills a lifetime of organic farming wisdom, describing the surprising personalities of her cows and other animals At her famous Kite's Nest Farm in Worcestershire, England, the cows (as well as sheep, hens, and pigs) all roam free. They make their own choices about rearing, grazing, and housing. Left to be themselves, the cows exhibit temperaments and interests as diverse as our own. "Fat Hat" prefers men to women; "Chippy Minton" refuses to sleep with muddy legs and always reports to the barn for grooming before bed; "Jake" has a thing for sniffing the carbon monoxide fumes of the Land Rover exhaust pipe; and "Gemima" greets all humans with an angry shake of the head and is fiercely independent. An organic farmer for decades, Young has an unaffected and homely voice. Her prose brims with genuine devotion to the wellbeing of animals. Most of us never apprehend the various inner lives animals possess, least of all those that we might eat. But Young has spent countless hours observing how these creatures love, play games, and form life-long friendships. She imparts hard-won wisdom about the both moral and real-world benefits of organic farming. (If preserving the dignity of animals isn't a good enough reason for you, consider how badly factory farming stunts the growth of animals, producing unhealthy and tasteless food.) This gorgeously-illustrated book, which includes an original introduction by the legendary British playwright Alan Bennett, is the summation of a life's work, and a delightful and moving tribute to the deep richness of animal sentience.
