Siendo este un segmento turístico con un alto valor para la industria de la hostelería al aportar una cifra de ingresos muy elevada y en constante crecimiento. La imponente oferta nacional de alojamientos y restauración, así como la relevancia del sector agroalimentario, han consagrado a España como una potencia muy competitiva en esta tipología turística. El estudio concreto del caso de León, como Capital Española de la Gastronomía 2018, supone el interés por conocer si la apuesta por consolidar a la ciudad como un destino gastronómico destacado, hace que los visitantes se sientan motivados por su potente oferta gastronómica de calidad, más allá del ya reconocido patrimonio cultural de la ciudad. Y pretende descubrir si se está aprovechando este reconocimiento para la exposición de la oferta de la zona con el fin de afianzar la industria turística como motor de crecimiento y, si los esfuerzos de promoción a lo largo del año tienen una efectiva reinversión económica. Book excerpt: Debido a la digitalización que se está viviendo actualmente, fuentes de información como libros, revistas o folletos físicos, entre otros, están perdiendo importancia y cada vez son menos utilizados para realizar consultas sobre el destino turístico al que se quiere visitar. Por ello, el presente Trabajo de Fin de Grado se centra en investigar una de estas fuentes, los folletos físicos, comparando a través de ellos, la imagen percibida e inducida tanto de los residentes como de los turistas de la ciudad de León, como destino turístico cultural y gastronómico. Se han consultado tanto fuentes de información secundarias, para realizar el marco teórico, como fuentes de información primaria, a fin de obtener datos que den respuesta al objetivo general. Las técnicas empleadas para su análisis han sido un pre-test, seguido de un experimento mediante eye-tracking y, por último, un post-test. Respecto a la imagen percibida se ha podido observar, que tanto turistas como residentes, comparten una percepción muy similar sobre esta ciudad ya que asocian a ella indicadores como: ambiente, calidad de vida y clima frío. En relación a la imagen inducida, las diferencias entre ambos públicos objetivo son más apreciables, ya que por una parte los turistas focalizaron más su interés en las imágenes de los folletos y, los residentes, lo hicieron más en el texto que éstos presentaban. Esto puede deberse a qu elos residentes conocen la imagen de los recursos culturales y gastronómicos de Leó n,dada su proximidad y, sin embargo, les interesa aprender más sobre ellos.
