Mais l'accès à l'eau n'est pas seulement un facteur important de santé publique, il conditionne aussi le développement socio-économique des populations : agriculture, élevage, industrie, commerce et vie quotidienne sont dépendants d'un accès à l'eau en quantité et en qualité suffisantes. Le manque d'eau se décline aussi en pauvreté et en retard au développement. Par leur implication préventive dans la santé publique et leur rôle incontournable dans la sécurité alimentaire, les programmes " Eau et Assainissement " d'Action Contre la Faim s'inscrivent dans la prévention de la malnutrition, de la morbidité, ainsi que de la mortalité en général, qui représentent l'objectif principal des interventions de l'organisation. Ces interventions, qui concernent aujourd'hui simultanément plus de 40 pays parmi les plus défavorisés, défendent le respect d'une gestion intégrée de la ressource, prenant en compte l'environnement et les populations ainsi qu'une assistance prioritaire aux populations les plus démunies - déplacées, réfugiées, exclues, victimes des conflits et des désastres naturels. Ce défi humanitaire ne s'improvise pas. Il se base, pour Action Contre la Faim, sur plus de 25 ans d'expertises techniques s'appuyant sur des recherches opérationnelles et sur la mise en œuvre d'un savoir-faire intégrant les bénéficiaires des projets depuis leur définition jusqu'à leur évaluation. Ce livre est un résultat de cette expérience partagée, le fruit de cette rencontre.
