Book excerpt: I love corks so much. Whenever I pop open a bottle of wine, I write on the cork the date that I drank it and why. To me, corks are fun and they tell a story. They hold a special memory. They were part of an experience that meant something to you. They stand for something. As you hold a cork in your hand and look at it, the memories just come flooding back, a smile comes to your face, and you just can't throw it away. The fabulous wine or champagne that was sealed by this cork now tells a story: your first date; that really special restaurant; your wedding day; that summer when you went to Italy or France. So what are you doing with all those corks? Don't throw them out! Start collecting them! And open that drawer full of corks you've stashed away and finally do something with them. We save these corks like pictures, so isn't it time we start making a "photo album" of memories with them? Here within these pages you will find a fun "How-To" guide on making ornaments and crafts with corks. So get a glue gun, an x-acto knife and open a bottle of wine! And of course, don't throw that cork away!

Book excerpt: 165,321 corks 1 boat Most people have childhood dreams; few ever pursue them. At the age of 34, John Pollack quit a prestigious speechwriting job on Capitol Hill to pursue an idea he had harbored since the age of six: to build a boat out of wine corks and take it on an epic journey. In Cork Boat, Pollack tells the charming and uplifting story of this unlikely adventure. Overcoming one obstacle after another, he convinces skeptical bartenders to save corks, corrals a brilliant but disorganized partner, and cajoles more than a hundred volunteers to help build the boat, many until their fingers bleed. Hired as a speechwriter for President Clinton midway through construction, Pollack soon has the White House saving corks, too. Ultimately, he and his crew set sail down the Douro River in Portugal, where the boat becomes a national sensation. Written with unusual grace and disarming humor, Cork Boat is a buoyant tale of camaraderie, determination, and the power of imagination.

Available in PDF, EPUB and Kindle. Book excerpt: 2022 Winner of the OIV Award in the Oenology category An essential guide to the faults and flaws that can affect wine Written by the award-winning wine expert, Keith Grainger, this book provides a detailed examination and explanation of the causes and impact of the faults, flaws and taints that may affect wine. Each fault is discussed using the following criteria: what it is; how it can be detected by sensory or laboratory analysis; what the cause is; how it might be prevented; whether an affected wine is treatable, and if so, how; and the science applicable to the fault. The incidences of faulty wines reaching the consumer are greater than would be regarded as acceptable in most other industries. It is claimed that occurrences are less common today than in recent recorded history, and it is true that the frequency of some faults and taints being encountered in bottle has declined in the last decade or two. However, incidences of certain faults and taints have increased, and issues that were once unheard of now affect many wines offered for sale. These include ‘reduced’ aromas, premature oxidation, atypical ageing and, very much on the rise, smoke taint. This book will prove invaluable to winemakers, wine technologists and quality control professionals. Wine critics, writers, educators and sommeliers will also find the topics highly relevant. The wine-loving consumer, including wine collectors will also find the book a great resource and the basis for discussion at tastings with like-minded associates. Reviews I read this book avidly from cover to cover. I’ll dip into it for future reference as required, which is how many will employ it. Meanwhile, I learned a great deal, and it now influences how I think about wine evaluation. I commend this excellent new book to you. Consider it an investment. Paul Howard, Wine Alchemy

Book excerpt: Following up on his bestselling Winery Technology and Operations, physical chemist and winemaker Yair Margalit comes out with the successive, Concepts in Wine Technology, fully updated and revised to meet the advances of modern winemaking. Among the extended topics are fermentation, skin contact, acid balance, phenolics, bottling, the use of oak and quality control. He begins in the vineyard discussing proper maturation, soil and climate, bunch health, vineyard disease states, and grape varieties. Next he tackles the preharvest with a careful look at vineyard management and preparing the winery for harvest. Dr. Margalit then outlines the entire process of harvesting, from destemming, crushing, and skin contact as it applies to both red and white grapes to pressing, must correction, and temperature control. Fermentation is examined fully and includes a lengthy look at the factors affecting malo-lactic fermentation and its pros and cons. There is a chapter on cellar operations that deals with racking, stabilization, fining, filtration, blending, and maintaining winery hardware, followed by sections on barreling and bottling. The final chapter pulls together the more general aspects of wine technology, covering sulphur-dioxides, different forms of wine spoilage and ways to ward them off, legal regulations and, one of the most important and enigmatic compounds in wine, phenolics.

When the sommelier and blogger Madeline Puckette writes that this book is the Kitchen Confidential of the wine world, she’s not wrong, though Bill Buford’s Heat is probably a shade closer.” —Jennifer Senior, The New York Times Professional journalist and amateur drinker Bianca Bosker didn’t know much about wine—until she discovered an alternate universe where taste reigns supreme, a world of elite sommeliers who dedicate their lives to the pursuit of flavor. Astounded by their fervor and seemingly superhuman sensory powers, she set out to uncover what drove their obsession, and whether she, too, could become a “cork dork.” With boundless curiosity, humor, and a healthy dose of skepticism, Bosker takes the reader inside underground tasting groups, exclusive New York City restaurants, California mass-market wine factories, and even a neuroscientist’s fMRI machine as she attempts to answer the most nagging question of all: what’s the big deal about wine? What she learns will change the way you drink wine—and, perhaps, the way you live—forever. “Think: Eat, Pray, Love meets Somm.” —theSkimm “As informative as it is, well, intoxicating.” —Fortune

The concluding chapters focus on the manufacture and applications of cork products. This book will be of value to chemists and cork manufacturers.

Available in PDF, EPUB and Kindle. Book excerpt: In Judgment of Paris, George M. Taber masterfully chronicled the historic 1976 wine tasting when unknown California wines defeated top French ones, marking a major turning point in wine history. Now he explores the most controversial topic in the world of wine: What product should be used to seal a bottle? Should it be cork, plastic, glass, a screwcap, or some other type of closure still to be invented? For nearly four centuries virtually every bottle of wine had a cork in it. But starting in the 1970s, a revolution began to topple the cork monopoly. In recent years, the rebellion has been gathering strength. Belatedly, the cork industry began fighting back, while trying to retain its predominant position. Each year 20 billion closures go onto wine bottles, and, increasingly, they are not corks. The cause of the onslaught against cork is an obscure chemical compound known as TCA. In amounts as low as several parts per trillion, the compound can make a $400 bottle of wine smell like wet newspaper and taste equally bad. Such wine is said to be "corked." While cork's enemies urge people to throw off the old and embrace new closures, millions of wine drinkers around the world are still in love with the romance of the cork and the ceremony of opening a bottle. With a thorough command of history, science, winemaking, and marketing, Taber examines all sides of the debate. Along the way, he collects a host of great characters and pivotal moments in the production, storage, and consumption of wine, and paints a truly satisfying portrait of a wholly intriguing controversy. As Australian winemaker Brian Croser describes it: "It's scary how passionate people can be on this topic. Prejudice and extreme positions have taken over, and science has often gone out the window."

Book excerpt: William Kent Krueger’s gripping tale of suspense begins with a recurring nightmare, a gun, and a wound in the earth so deep and horrific that it has a name: Vermilion Drift. When the Department of Energy puts an underground iron mine on its short list of potential sites for storage of nuclear waste, a barrage of protest erupts in Tamarack County, Minnesota, and Cork is hired as a security consultant. Deep in the mine during his first day on the job, Cork stumbles across a secret room that contains the remains of six murder victims. Five appear to be nearly half a century old—connected to what the media once dubbed "The Vanishings," a series of unsolved disappearances in the summer of 1964, when Cork’s father was sheriff in Tamarack County. But the sixth has been dead less than a week. What’s worse, two of the bodies—including the most recent victim—were killed using Cork’s own gun, one handed down to him from his father. As Cork searches for answers, he must dig into his own past and that of his father, a well-respected man who harbored a ghastly truth. Time is running out, however. New threats surface, and unless Cork can unravel the tangled thread of clues quickly, more death is sure to come. Vermilion Drift is a powerful novel, filled with all the mystery and suspense for which Krueger has won so many awards. A poignant portrayal of the complexities of family life, it’s also a sobering reminder that even those closest to our hearts can house the darkest—and deadliest—of secrets.

Book excerpt: PREFACE THIS monograph is not an attempt to put before the reading public a scientific exposition of the merits and qualities of the Quercus Suber or Quercus Liber Linneus, and carry it up into the heights of learning where none but the learned may go but to set forth in as concise a manner as possible, the plain story of the corkwood stopper so well known to all. The corkwood as seen in the stopper and in many other articles of trade, has long been of service to man, and remained unnoticed in journals of science, but for a word here and there and in trying to acquaint myself with its gener- alities, found it most difficult to get even these. This rather impressed me as being singular, a material so largely used and so little to its credit, in literature, that I pressed my investigations only to find that the farther I searched the less I found. The few facts gleaned were of interest, and it occurred to me to put them together in some readable form, for future reference. But as I re- flected upon the unsuccessful attempt to get infor- mation, which was made in behalf of my studies, I promptly decided to go into the subject deep enough to cover all the facts and the result is this monograph Quercus Suber It is presented with the hope that it will help others who seek a knowledge of corkwood and is only intended as a resume of a very interesting sub- ject. I have endeavored to give credit to those to whom it is due and offer my results as a tribute to a material that stands in a class worthy of 4Jie scientists as well as the commercialists esteem. The mysticism does not encompass its utility and general uses nor its native land, as these are well known, but is more associated with its character, composition and chemical makeup. Its uses may be traced far back into the misty past that is dim to us, but from the faint scroll of history looms up in the minds eye as an epoch that we may have been glad to know, and although the references are few, by carefully analyzing them we may glean somewhat of its lineage.
