Book Synopsis Microbiology and Biochemistry of Cheese and Fermented Milk by : B.A. Law
Download or read book Microbiology and Biochemistry of Cheese and Fermented Milk written by B.A. Law and published by Springer Science & Business Media. This book was released on 2012-12-06 with total page 381 pages. Available in PDF, EPUB and Kindle. Book excerpt: The first edition of Advances in the Microbiology and Biochemistry of Cheese and Fermented Milk was aimed at the gap in the literature between the many excellent technical texts on the one hand, and the widely scattered scientific literature on the other. We tried to present the state of the art in pre competitive research in a predigested, yet scientifically coherent form, and relate it to the marketable properties of fermented dairy products. In this way, researchers could use the book to mentally step back from their specializations and see how far they had progressed as a community; at the same time we hoped that R&D-based companies could use it to assess the utility (or lack of it) of the research output in setting out their research acquisition strategy for product improvement and innovation. In a sense, the first edition could claim to have initiated Technology Foresight in its limited field before Government caught the idea, and it certainly gave the science base an opportunity to display its talents and resources as a potential source of wealth creation, well before this became an 'official' function of publicly funded science and technology. Thus, the first edition was intended as a progressive move within the growing science and technology literature, and judged by its market success, it seems to have served precisely that purpose.

Book Synopsis Developments in Dairy Chemistry—3 by : P. F. Fox
Download or read book Developments in Dairy Chemistry—3 written by P. F. Fox and published by Springer Science & Business Media. This book was released on 2012-12-06 with total page 406 pages. Available in PDF, EPUB and Kindle. Book excerpt: This volume is the third in the series on the chemistry and physical chemistry of milk constituents. Volumes 1 and 2 dealt with the com mercially more important constituents, proteins and lipids, respectively. Although the constituents covered in this volume are of less direct commercial importance than the former two, they are nevertheless of major significance in the chemical, physical, technological, nutritional and physiological properties of milk. Lactose, the principal component of the milks of most species, is a rather unique sugar in many respects---it has been referred to as one of Nature's paradoxes. It is also the principal component in concentrated and dehydrated dairy products, many of the properties of which reflect those of lactose. The chemistry and principal properties of lactose have been thoroughly researched over the years and relatively little new information is available on these aspects; this new knowledge, as well as some of the older literature, is reviewed in Chapter 1.

Book Synopsis Microbial Products for Health, Environment and Agriculture by : Pankaj Kumar Arora
Download or read book Microbial Products for Health, Environment and Agriculture written by Pankaj Kumar Arora and published by Springer Nature. This book was released on 2021-09-21 with total page 381 pages. Available in PDF, EPUB and Kindle. Book excerpt: This edited volume discusses the role of various microbial products in healthcare, environment and agriculture. Several microbial products are directly involved in solving major health problems, agricultural and environmental issues. In healthcare sector, microbes are used as anti-tumor compounds, antibiotics, anti-parasitic agents, enzyme inhibitors and immunosuppressive agents. Microbial products are also used to degrade xenobiotic compounds and bio-surfactants, for biodegradation process. In agriculture, microbial products are used to enhance nutrient uptake, to promote plant growth, or to control plant diseases. The book presents several such applications of microbes in the ecosystems. The chapters are contributed from across the globe and contain up-to-date information. This book is of interest to teachers, researchers, microbiologists and ecologists. Also the book serves as additional reading material for undergraduate and graduate students of agriculture, forestry, ecology, soil science, and environmental sciences.

This book was released on 2020-06-04 with total page 388 pages. Available in PDF, EPUB and Kindle. Book excerpt: Physiological and Biotechnological Aspects of Extremophiles highlights the current and topical areas of research in this rapidly growing field. Expert authors from around the world provide the latest insights into the mechanisms of these fascinating organisms use to survive. The vast majority of extremophiles are microbes which include archaea, bacteria and some eukaryotes. These microbes live under chemical and physical extremes that are usually lethal to cellular molecules, yet they manage to survive and even thrive. Extremophiles have important practical uses.
