Book Synopsis Advances in Meat Processing Technologies: Modern Approaches to Meet Consumer Demand by : Daneysa L. Kalschne
Download or read book Advances in Meat Processing Technologies: Modern Approaches to Meet Consumer Demand written by Daneysa L. Kalschne and published by Bentham Science Publishers. This book was released on 2020-08-31 with total page 147 pages. Available in PDF, EPUB and Kindle. Book excerpt: Meat and meat-based products play an important role as foods in the diets of people around the world. However, environmental and social issues have posed a challenge to meat production processing plants, with the advent of more consumer conscious production values across the food processing industry and a changing attitude among some communities towards the consumption of products from animal origin. The development of meat science and technology has brought solutions that allow the consumption of meat in a greater proportion from the source. Traditional processes such as salting, smoking, and fermentation have been refined, and, more recently, processes such as emulsification, marinating, and tenderizing of meat, have further diversified meat products. Meat processing technology is also required to meet consumer expectations and demands for nutritious and safe food. Consumer requirements have pushed for need for adaptation and modernization of slaughterhouses, as well as the use of more suitable processing technologies for saving water, energy, and reducing waste production, all while trying to provide a high level of nutritional, sensory, and food-safety for consumers. Advances in Meat Processing Technologies aims to inform students, researchers, lecturers and others who are interested in the subject, about new meat and meat-based product processing technologies. The handbook covers a variety of meat processing technologies including dry fermentation, meat emulsification, curing, marinating, restructuring and processing of non-emulsified meat and meat analogues. Additional chapters cover the use of additives and ultrasound technology in meat processing as well as different strategies suitable for meat processing operations. The simple, topical presentation of the book, which covers a wide variety of products makes the book a key reference for informing students, researchers, lecturers, professionals and general readers who are interested in the subject of meat processing technology.
Book Synopsis Sugar and Civilization by : April Merleaux
Download or read book Sugar and Civilization written by April Merleaux and published by UNC Press Books. This book was released on 2015-07-13 with total page 321 pages. Available in PDF, EPUB and Kindle. Book excerpt: In the weeks and months after the end of the Spanish-American War, Americans celebrated their nation's triumph by eating sugar. Each of the nation's new imperial possessions, from Puerto Rico to the Philippines, had the potential for vastly expanding sugar production. As victory parties and commemorations prominently featured candy and other sweets, Americans saw sugar as the reward for their global ambitions. April Merleaux demonstrates that trade policies and consumer cultures are as crucial to understanding U.S. empire as military or diplomatic interventions. As the nation's sweet tooth grew, people debated tariffs, immigration, and empire, all of which hastened the nation's rise as an international power. These dynamics played out in the bureaucracies of Washington, D.C., in the pages of local newspapers, and at local candy counters. Merleaux argues that ideas about race and civilization shaped sugar markets since government policies and business practices hinged on the racial characteristics of the people who worked the land and consumed its products. Connecting the history of sugar to its producers, consumers, and policy makers, Merleaux shows that the modern American sugar habit took shape in the shadow of a growing empire.

Book Synopsis Food Security and Risk Reduction in Bangladesh by : Umma Habiba
Download or read book Food Security and Risk Reduction in Bangladesh written by Umma Habiba and published by Springer. This book was released on 2015-03-18 with total page 279 pages. Available in PDF, EPUB and Kindle. Book excerpt: This book draws examples from food security issues in Bangladesh. The book is structured around those issues and underlying causes of food security, the implications from different sectors, policy analysis, and the role and actions of various stakeholders from different sectors to ensure food security. Bangladesh is situated in a climatically vulnerable position and is impacted frequently by such climatic hazards as floods, cyclones, droughts, and salinity intrusion. Due to global atmospheric changes, abrupt shifts in climatic conditions severely affect Bangladesh’s agriculture. Although Bangladesh has made significant progress in increasing domestic production of food grain, if the production of major cereals is hampered due to climate change, food security will be in jeopardy. Most estimates show that a huge amount of additional food grain will be required to feed the growing population of the country. Ensuring food security for all is the overarching goal of Bangladesh’s national food policy. Therefore, ensuring food security in the future requires a great deal of additional effort in yield improvement, with limited scope for expanding the area under cultivation. The primary target readers for this book are students and researchers in the fields of environment, disaster risk reduction, and climate change studies. The book will provide them with a good idea of the current trend of research in the field and will furnish basic knowledge on this important topic. Another target group comprises practitioners and policy makers, who will be able to apply collective knowledge to policy and decision making.
Download or read book Sharing Economy written by Ming Hu and published by Springer. This book was released on 2019-01-11 with total page 536 pages. Available in PDF, EPUB and Kindle. Book excerpt: This edited book examines the challenges and opportunities arising from today’s sharing economy from an operations management perspective. Individual chapter authors present state-of-the-art research that examines the general impact of sharing economy on production and consumption; the intermediary role of a sharing platform; crowdsourcing management; and context-based operational problems. Sharing economy refers to a market model that enables and facilitates the sharing of access to goods and services. For example, Uber allows riders to share a car. Airbnb allows homeowners to share their extra rooms with renters. Groupon crowdsources demands, enabling customers to share the benefit of discounted goods and services, whereas Kickstarter crowdsources funds, enabling backers to fund a project jointly. Unlike the classic supply chain settings in which a firm makes inventory and supply decisions, in sharing economy, supply is crowdsourced and can be modulated by a platform. The matching-supply-with-demand process in a sharing economy requires novel perspectives and tools to address challenges and identify opportunities. The book is comprised of 20 chapters that are divided into four parts. The first part explores the general impact of sharing economy on the production, consumption, and society. The second part explores the intermediary role of a sharing platform that matches crowdsourced supply with demand. The third part investigates the crowdsourcing management on a sharing platform, and the fourth part is dedicated to context-based operational problems of popular sharing economy applications. “While sharing economy is becoming omnipresence, the operations management (OM) research community has begun to explore and examine different business models in the transportation, healthcare, financial, accommodation, and sourcing sectors. This book presents a collection of the state-of-the-art research work conducted by a group of world-leading OM researchers in this area. Not only does this book cover a wide range of business models arising from the sharing economy, but it also showcases different modeling frameworks and research methods that cannot be missed. Ultimately, this book is a tour de force – informative and insightful!” Christopher S. Tang Distinguished Professor and Edward Carter Chair in Business Administration UCLA Anderson School of Management

Download or read book Corn Meets Maize written by Lauren Baker and published by Rowman & Littlefield. This book was released on 2013 with total page 201 pages. Available in PDF, EPUB and Kindle. Book excerpt: This compelling book exploresthe intimate connections between people and plants, agriculture and cooking, and the practical work of building local food networks and transnational social movements. Lauren E. Baker uses corn and maize to consider central debates about food security and food sovereignty, biodiversity and biotechnology, culture and nature, as well as globalization and local responses, in Mexico and beyond. For the author, corn symbolizes the commoditization of agriculture and the cultural, spiritual, ecological and economic separation of people from growing, cooking, and sharing food. Conversely, maize represents emerging food movements that address contemporary health, environmental, and economic imperatives while rooted in agricultural and culinary traditions. The meeting of corn and maize reveals the challenge of, and possibilities for, reclaiming food from its commodity status in the global context of financial turmoil, food crises, and climate change.
