Book excerpt: According to the 2008 Pediatric Nutrition Surveillance Survey, low-income Hispanic children aged 2-4 years have the highest prevalence for overweight at 18.4 % compared to non-Hispanic Whites at 12.6 % and non-Hispanic Blacks at 11.8 %. Current research has found that sugar-sweetened beverage (SSB) intake may be a major factor contributing to the over consumption of calories among children. Food preferences can also develop as early as the first of year of life. Therefore, if SSBs become part of a regular diet as early as the first year of life it has the potential to reinforce the preference for sweet tasting foods for which infants are biologically predisposed. The objective of this was to look at how sweetened-beverage intake impacted overall energy intake and weight status among 12-month-old infants from low-income Hispanic households. Participants were divided into non-SSB consumers and SSB consumers. It was found that non-SSB consumers ingested significantly more fluid ounces of plain milk, consumed significantly less carbohydrate (grams/day), had a significantly higher percentage of calories come from fat, and ingested significantly less vitamin C than the SSB consumers. For participants above the 85th percentile for weight for length, the non-SSB consumers ingested significantly more calories from plain milk/formula Consumption of high-energy dense foods, such as sugar-sweetened beverages, is still an important aspect of the diet to target among Hispanics who are high risk for becoming overweight or obese.

Book excerpt: Serving larger portion sizes and energy-dense foods and beverages has robust effects on preschool childrens intake, and these factors are often implicated as the primary drivers in the obesity epidemic. Experimental studies have shown that variations in portion size and energy density (ED) have substantial, independent effects on childrens energy intake. The available data demonstrate that continuing to serve large portions has effects that persist for up to 24-hours in children, and for ED, the effects continue for up to 2 days. Since children are exposed to large portions of higher-ED foods, it is essential to investigate how these factors combine to influence preschool childrens intake, but the studies that have been conducted report inconsistent results. Furthermore, in these studies the main dish at the meal was the only item varied by portion size and ED, which does not represent the current eating environment in which other foods and beverages also vary in these properties. For this dissertation, two studies were designed to test the effect of varying both the portion size and ED of an entire meal (Study 1) and of milk (Study 2) on preschool childrens intake. Investigation of these effects will aid in the development of strategies to counter these environmental food cues and moderate energy intake.In Study 1, the effect of varying the portion size and ED of a meal of commonly consumed foods on childrens intake was evaluated. In a crossover design, lunch was served in 3 childcare centers once a week for 6 weeks to 120 children aged 3-5 years (14% overweight or obese). For the 6 meals, all items were served at 3 levels of portion size (100, 150, or 200%) and 2 levels of ED (100 or 142%). Lunch items were either lower- or higher-ED commercially available versions of chicken, macaroni and cheese, vegetable, applesauce, ketchup, and milk. Childrens ratings of the foods showed that the lower-ED and higher-ED items were equally well liked. Varying the ED of food and milk did not affect the total weight consumed across meals; however, serving larger portions significantly increased the weight eaten at both the lower- and higher-ED meals (P

There is a crucial need to identify environmental factors that either encourage or prevent obesogenic behaviors. The home food environment is one of the primary environments in which children are exposed to food. Therefore, it is crucial to study how the home food availability influences dietary intake and weight status. Objective: This study examines parental report of household food availability of fruits, vegetables, and milk, and its association with child weight status and child dietary intake of these foods. Methods: This is a cross-sectional study, based on surveys from 489 students in grades 3-12 their parents in 2009. Child participants were Destination ImagiNation® finalists. Child data collection included surveys based on the Youth Risk Surveillance Survey and anthropometric measurements of height and weight used to calculate child z-BMI. Parents self-reported their heights and weights and home food availability. Descriptive statistics were conducted and multiple linear regression was used to predict whether or not a relationship existed between home food availability, child weight status, and dietary intake of fruits, vegetables, and milk. Results: Overall, 12.5% of participants were overweight and 6.7% were obese. Approximately26% of participants consumed 5 or more servings of fruits and vegetables per day and 17% consumed 3 or more glasses of milk per day. However, a no significant relationship was found between home availability of fruits, vegetables, and milk and the reported intake of these foods. Although a significant association was also found between parent and child weight status, no significant association was found between home food availability and child weight status. Conclusions: Compared to national data, a larger proportion of this sample was classified as normal weight and consumed the recommended intake of fruits and vegetables and milk. Parents reported high availability of fruits, vegetables, and milk products. However, no significance was found between the reported availability of these foods and weight status or dietary intake of fruits, vegetables, or milk.

Book excerpt: Although most eating occurs in a social context, little is known about the developmental trajectory of the effects of social influences on children' and adolescents' eating behavior. In fact, the literature on the influence of parents and friends on children's and youth's food intake and food selection have developed in virtual isolation from each other. The present experiment compared the effects of mothers and friends on food intake in 5 and 6, and 13 and 14 year old youth. Participants had access to a variety of healthy and unhealthy meal, snack and beverage options and were invited to share a meal with their mother and with a friend on two separate occasions. Participants had a greater total energy and greater intake of high-calorie for nutrient (HCFN) foods with their friend than with their mother. Mother's verbal encouragement negatively predicted participants' intake of HCFN foods, but not their consumption of low-calorie for nutrient (LCFN) foods. Age and condition predicted the participant's intake of LCFN foods. Participants consumed more LCFN foods when eating with their mother than when eating with their friend. Adolescents consumed more HCFN and LCFN foods than children most likely due to the difference in energy requirements for the two age groups. Males consumed more total energy than females. These findings suggest that friends operate in a different way than mothers on children and adolescents' eating behaviors.
