Dans notre monde moderne, les sources de ce stress oxydant en pleines expansions et les mauvais comportements contribuent à son augmentation. La peau, première barrière contre ces agressions est donc la plus sensible à ces radicaux. Les établissements cosmétologiques ont donc supplémentés leurs produits en actifs antioxydants pour l'aider. Ces antioxydants nombreux et variés ont fait l'objet de notre étude qui a consisté à collecter des informations sur leur structure, leur activité antioxydante ou leur utilité en photoprotection. Ce travail met en évidence certaines difficultés concernant la collecte de données, notamment la nature et teneurs en anti-oxydants des produits cosmétiques. Notre conclusion soulève le problème d'une absence de standardisation des méthodes d'évaluation des activités antioxydantes et le manque d'études in vivo. Notre étude permet de dégager trois tendances dans le développement de produits cosmétiques à propriétés anti-radicalaires: l'association de plusieurs actifs, la recherche d'actifs inducteurs de systèmes enzymatiques et l'utilisation prépondérante d'actifs issus du monde végétal.

The Environmental Protection Agency's decision in the summer of 2001 to delay implementing a new, more stringent standard for the maximum allowable level for arsenic in drinking water generated a great deal of criticism and controversy. Ultimately at issue were newer data on arsenic beyond those that had been examined in a 1999 National Research Council report. EPA asked the National Research Council for an evaluation of the new data available. The committee's analyses and conclusions are presented in Arsenic in Drinking Water: 2001 Update. New epidemiological studies are critically evaluated, as are new experimental data that provide information on how and at what level arsenic in drinking water can lead to cancer. The report's findings are consistent with those of the 1999 report that found high risks of cancer at the previous federal standard of 50 parts per billion. In fact, the new report concludes that men and women who consume water containing 3 parts per billion of arsenic daily have about a 1 in 1,000 increased risk of developing bladder or lung cancer during their lifetime.

Although there have been many significant advances in this challenging field, many important problems remain unsolved. This second edition of Lipid oxidation follows the example of the first edition in offering a summary of the many unsolved problems that need further research. The need to understand lipid oxidation is greater than ever with the increased interest in long-chain polyunsaturated fatty acids, the reformulation of oils to avoid hydrogenation and trans fatty acids, and the enormous attention given to natural phenolic antioxidants, including flavonoids and other phytochemicals.
