Book Synopsis Cookbook Politics by : Kennan Ferguson
Download or read book Cookbook Politics written by Kennan Ferguson and published by University of Pennsylvania Press. This book was released on 2020-05-01 with total page 161 pages. Available in PDF, EPUB and Kindle. Book excerpt: An original and eclectic view of cookbooks as political acts Cookbooks are not political in conventional ways. They neither proclaim, as do manifestos, nor do they forbid, as do laws. They do not command agreement, as do arguments, and their stipulations often lack specificity — cook "until browned." Yet, as repositories of human taste, cookbooks transmit specific blends of flavor, texture, and nutrition across space and time. Cookbooks both form and reflect who we are. In Cookbook Politics, Kennan Ferguson explores the sensual and political implications of these repositories, demonstrating how they create nations, establish ideologies, shape international relations, and structure communities. Cookbook Politics argues that cookbooks highlight aspects of our lives we rarely recognize as political—taste, production, domesticity, collectivity, and imagination—and considers the ways in which cookbooks have or do politics, from the most overt to the most subtle. Cookbooks turn regional diversity into national unity, as Pellegrino Artusi's Science in the Kitchen and the Art of Eating Well did for Italy in 1891. Politically affiliated organizations compile and sell cookbooks—for example, the early United Nations published The World's Favorite Recipes. From the First Baptist Church of Midland, Tennessee's community cookbook, to Julia Child's Mastering the Art of French Cooking, to the Italian Futurists' proto-fascist guide to food preparation, Ferguson demonstrates how cookbooks mark desires and reveal social commitments: your table becomes a representation of who you are. Authoritative, yet flexible; collective, yet individualized; cooperative, yet personal—cookbooks invite participation, editing, and transformation. Created to convey flavor and taste across generations, communities, and nations, they enact the continuities and changes of social lives. Their functioning in the name of creativity and preparation—with readers happily consuming them in similar ways—makes cookbooks an exemplary model for democratic politics.

In this book she includes recipes for everything from biscuits and breads to pies and cookies, soups and stews to ribs and roasts. Also included are instructions for making cheese, curing meats, canning and preserving, and much more. Organized by month to coordinate with a farmer’s calendar, cooks will find orange date bran muffins and old fashioned pot roast in January, hot spiced maple milk and fried cinnamon buns in March, mint mallow ice cream in July, Vermont cheddar onion bread in October, and almond baked apples with Swedish custard cream in December. Other recipes include grilled chicken with peach maple glaze, veggie tempura, raspberry chocolate chip cheesecake, and dozens of other breads, salads, drinks, and desserts that are fresh from the farmer’s kitchen.

Book Synopsis Liguria: The Cookbook by : Laurel Evans
Download or read book Liguria: The Cookbook written by Laurel Evans and published by Rizzoli International Publications. This book was released on 2024-09-10 with total page 0 pages. Available in PDF, EPUB and Kindle. Book excerpt: This book presents to an American audience the cuisine of Liguria—the Italian Riviera—full of dishes that are inventive, inherently seasonal, waste-conscious, plant-forward, and geared toward the home cook. Italian cuisine never goes out of style. Yet while many are familiar with various regional cuisines of Italy, one of its most gastronomically rich regions has been largely overlooked: Liguria, home of focaccia, pesto, and the Cinque Terre. Award-winning author and food writer Laurel Evans has been immersed in the cuisine of Liguria for 15 years, ever since her Italian boyfriend (now husband, and the photographer for this book) brought her to his family’s hillside villa in Moneglia on the Mediterranean coast. There, Evans immersed herself in kitchens, restaurants, and markets, building relationships with the chefs, shopkeepers, producers, and nonne who drive the local cuisine. This book showcases all that she discovered: a cuisine that is beautiful but humble, plant-based and waste-conscious at its core, with a particular spirit and history that she unravels for readers new to the region. From the ultimate pesto, to the definitive focaccia recipe coaxed out of local bakers, to recipes for lesser-known Ligurian specialties like Cappon Magro, Liguria: The Cookbook offers readers a personal journey into the heart of the cuisine of this timeless yet ever-evolving region.
Download or read book Listen to Your Bread written by Ann Haut and published by Wipf and Stock Publishers. This book was released on 2021-05-10 with total page 228 pages. Available in PDF, EPUB and Kindle. Book excerpt: A tough town like Olean offers a guy only so many job options: sweat in the stench of oil refinery crude, like his immigrant father does, suffer boredom in a factory job, or apprentice in a trade. Icky Haut chooses the latter and works his way up, one crumb at a time, in a commercial bread bakery. Haut loves everything about baking bread: the smell and taste of yeast, the softness of flour rubbed between fingertips, the intense heat of ovens, the anticipation of a loaf's rise, and the comfort of its promise of sustenance. But after his second child is born, he realizes he's been mixing, proofing, shaping, scoring, and baking dough half his life. Is this it? Maybe not . . . but then his great idea to expand the bakery jams him up with his boss, and he's toast. How Haut relies on family and faith to start his own bakery is the center of this real-life, local-guy-makes-good story set in the 1930s and 40s. Haut's boss calls bread the "staff of life" feeding his bottom line; the Hauts are nourished by their faith, and that shift in perspective recasts the story to hope in the "Bread of Life."
