Su autor es José Hidalgo Togores, Doctor Ingeniero Agrónomo y Enólogo, en la actualidad uno de los mejores técnicos vitivinícolas españoles, con una gran experiencia como docente, proyectista de nuevas realizaciones y directivo en empresas del sector. Es autor de numerosos estudios y publicaciones: trabajos de investigación, libros técnicos, artículos y conferencias.
