Available in PDF, EPUB and Kindle.

Available in PDF, EPUB and Kindle. Book excerpt: Anthocyanins as Food Colors aims to assemble scattered information on anthocyanins pertinent to food coloration. Both basic and applied aspects of these pigments are discussed. Organized into nine chapters, this book begins with a discussion of the chemical structure of anthocyanins, followed by its copigmentation and biosynthesis. It then discusses the distribution of anthocyanin in food plants, as well as the compounds' stability in food. This work also looks into the analysis of anthocyanins and their presence in grapes and wine. Utilization of anthocyanins as food additives is addressed in the last chapter. This book will provide additional information in order to maximize the visual appeal of these pigments both in products in which they are naturally present and in products to which they may be added as colorants.

Book excerpt: Examine cultural tourism issues from both sides of the industry! Unique in concept and content, Cultural Tourism: The Partnership Between Tourism and Cultural Heritage Management examines the relationship between the sectors that represent opposite sides of the cultural tourism coin. While tourism professionals assess cultural assets for their profit potential, cultural heritage professionals judge the same assets for their intrinsic value. Sustainable cultural tourism can only occur when the two sides form a true partnership based on understanding and appreciation of each other's merits. The authors--one, a tourism specialist, the other, a cultural heritage management expert--present a model for a working partnership with mutual benefits, integrating management theory and practice from both disciplines. Cultural Tourism is the first book to combine the different perspectives of tourism management and cultural heritage management. It examines the role of tangible (physical evidence of culture) and intangible (continuing cultural practices, knowledge, and living experiences) heritage, describes the differences between cultural tourism products and cultural heritage assets, and develops a number of conceptual models, including a classification system for cultural tourists, indicators of tourism potential at cultural and heritage assets, and assessment criteria for cultural and heritage assets with tourism potential. Cultural Tourism examines the five main constituent elements involved in cultural tourism: cultural and heritage assets in tourism sites such as the Royal Palace in Bangkok, the Cook Islands, and Alcatraz Prison in San Francisco. tourism--what it is, how it works, and what makes it a success five different types of cultural tourists consumption of products, value adding, and commodification integrating the first four elements to satisfy the tourist, meet the needs of the tourism industry, and conserve the intrinsic value of the asset Though tourism and cultural heritage management professionals have mutual interests in the management, conservation, and presentation of cultural and heritage assets, the two sectors operate on parallel planes, maintaining an uneasy partnership with surprisingly little dialogue. Cultural Tourism provides professionals and students in each field with a better understanding of their own roles in the partnership, bridging the gap via sound planning, management, and marketing to produce top-quality, long-lasting cultural tourism products. Book excerpt: Nanophotonics is where photonics merges with nanoscience and nanotechnology, and where spatial confinement considerably modifies light propagation and light-matter interaction. Describing the basic phenomena, principles, experimental advances and potential impact of nanophotonics, this graduate-level textbook is ideal for students in physics, optical and electronic engineering and materials science. The textbook highlights practical issues, material properties and device feasibility, and includes the basic optical properties of metals, semiconductors and dielectrics. Mathematics is kept to a minimum and theoretical issues are reduced to a conceptual level. Each chapter ends in problems so readers can monitor their understanding of the material presented. The introductory quantum theory of solids and size effects in semiconductors are considered to give a parallel discussion of wave optics and wave mechanics of nanostructures. The physical and historical interplay of wave optics and quantum mechanics is traced. Nanoplasmonics, an essential part of modern photonics, is also included.

Book excerpt: Wine has been a beverage staple since ancient times, especially in Europe. Today's global wine business is thriving, and American consumption of wine has increased dramatically in recent years, with the health benefits touted in the media. More Americans are becoming interested in learning about wine, and they are taking winery tours and attending wine tastings. The Business of Wine: An Encyclopedia is a necessary part of wine education for everyone from the curious consumer to the oenophile or business student and industry professional. It appeals to even the casual browser who wants to be more informed about wine terminology such as terroir or varietal labeling or what constitutes a Pinot Grigio or a Cabernet Sauvignon. More than 140 entries illuminate the regions, grapes, history, wine styles, business elements, events, people, companies, issues, and more that are crucial to the wine industry. Today's wine industry is an unusually complex network of interrelated businesses that collectively serve to produce wine and get it into the hands of consumers all over the world. This A-Z encyclopedia shows how production, distribution, and sales segments work together to bring wine to the public and describes the trade in wine and its related subsidiary elements. Written by a host of wine professionals, this is the most up-to-date source to understand what goes into the enjoyment of a glass of wine. An appendix with industry data, sidebars, and a selected bibliography complement the A-Z entries.

Book excerpt: Corpus linguistics has now come of age and Corpus Approaches to Discourse equips students with the means to question, defend and refine the methodology. Looking at corpus linguistics in discourse research from a critical perspective, this volume is a call for greater reflexivity in the field. The chapters, each written by leading authorities, contain an overview of an emerging area and a case-study, presenting practical advice alongside theoretical reflection. Carefully structured with an introduction by the editors and a conclusion by leading researcher, Paul Baker, this is key reading for advanced students and researchers of corpus linguistics and discourse analysis.
