Book excerpt: This volume commemorates the 50th anniversary of the appearance in Volume 4 in 1948 of Dr. Jeffries Wyman's famous paper in which he "laid down" the foundations of linkage thermodynamics. Experts in this area contribute articles on the state-of-the-art of this important field and on new developments of the original theory. Among the topics covered in this volume are electrostatic contributions to molecular free energies in solution; site-specific analysis of mutational effects in proteins; allosteric transitions of the acetylcholine receptor; and deciphering the molecular code of hemoglobin allostery.

Book excerpt: This book consists of a number of papers regarding the thermodynamics and structure of multicomponent systems that we have published during the last decade. Even though they involve different topics and different systems, they have something in common which can be considered as the “signature” of the present book. First, these papers are concerned with “difficult” or very nonideal systems, i. e. systems with very strong interactions (e. g. , hyd- gen bonding) between components or systems with large differences in the partial molar v- umes of the components (e. g. , the aqueous solutions of proteins), or systems that are far from “normal” conditions (e. g. , critical or near-critical mixtures). Second, the conventional th- modynamic methods are not sufficient for the accurate treatment of these mixtures. Last but not least, these systems are of interest for the pharmaceutical, biomedical, and related ind- tries. In order to meet the thermodynamic challenges involved in these complex mixtures, we employed a variety of traditional methods but also new methods, such as the fluctuation t- ory of Kirkwood and Buff and ab initio quantum mechanical techniques. The Kirkwood-Buff (KB) theory is a rigorous formalism which is free of any of the - proximations usually used in the thermodynamic treatment of multicomponent systems. This theory appears to be very fruitful when applied to the above mentioned “difficult” systems.

Book excerpt: Thermodynamic data of copolymer solutions are a necessity for industrial and laboratory processes and serve as essential tools for understanding the physical behavior of copolymer solutions, intermolecular interactions, and the molecular nature of mixtures. Scientists and engineers in both academic and industrial research need this data. This handbook compiles original data gathered from approximately 300 literature source and provides 250 vapor-pressure isotherms, 75 tables of Henry's constants, 225 data sets, and 70 PVT tables for more than 100 copolymers and 165 solvents. It is the first complete overview of this complex subject.

Book excerpt: Thermodynamics of Phase Equilibria in Food Engineering is the definitive book on thermodynamics of equilibrium applied to food engineering. Food is a complex matrix consisting of different groups of compounds divided into macronutrients (lipids, carbohydrates, and proteins), and micronutrients (vitamins, minerals, and phytochemicals). The quality characteristics of food products associated with the sensorial, physical and microbiological attributes are directly related to the thermodynamic properties of specific compounds and complexes that are formed during processing or by the action of diverse interventions, such as the environment, biochemical reactions, and others. In addition, in obtaining bioactive substances using separation processes, the knowledge of phase equilibria of food systems is essential to provide an efficient separation, with a low cost in the process and high selectivity in the recovery of the desired component. This book combines theory and application of phase equilibria data of systems containing food compounds to help food engineers and researchers to solve complex problems found in food processing. It provides support to researchers from academia and industry to better understand the behavior of food materials in the face of processing effects, and to develop ways to improve the quality of the food products. - Presents the fundamentals of phase equilibria in the food industry - Describes both classic and advanced models, including cubic equations of state and activity coefficient - Encompasses distillation, solid-liquid extraction, liquid-liquid extraction, adsorption, crystallization and supercritical fluid extraction - Explores equilibrium in advanced systems, including colloidal, electrolyte and protein systems

Available in PDF, EPUB and Kindle. Book excerpt: This book deals with a subject that has been studied since the beginning of physical chemistry. Despite the thousands of articles and scores of books devoted to solvation thermodynamics, I feel that some fundamen tal and well-established concepts underlying the traditional approach to this subject are not satisfactory and need revision. The main reason for this need is that solvation thermodynamics has traditionally been treated in the context of classical (macroscopic) ther modynamics alone. However, solvation is inherently a molecular pro cess, dependent upon local rather than macroscopic properties of the system. Therefore, the starting point should be based on statistical mechanical methods. For many years it has been believed that certain thermodynamic quantities, such as the standard free energy (or enthalpy or entropy) of solution, may be used as measures of the corresponding functions of solvation of a given solute in a given solvent. I first challenged this notion in a paper published in 1978 based on analysis at the molecular level. During the past ten years, I have introduced several new quantities which, in my opinion, should replace the conventional measures of solvation thermodynamics. To avoid confusing the new quantities with those referred to conventionally in the literature as standard quantities of solvation, I called these "nonconventional," "generalized," and "local" standard quantities and attempted to point out the advantages of these new quantities over the conventional ones.

Available in PDF, EPUB and Kindle. Book excerpt: Filling the gap for a reference dedicated to the characterization of polymer blends and their micro and nano morphologies, this book provides comprehensive, systematic coverage in a one-stop, two-volume resource for all those working in the field. Leading researchers from industry and academia, as well as from government and private research institutions around the world summarize recent technical advances in chapters devoted to their individual contributions. In so doing, they examine a wide range of modern characterization techniques, from microscopy and spectroscopy to diffraction, thermal analysis, rheology, mechanical measurements and chromatography. These methods are compared with each other to assist in determining the best solution for both fundamental and applied problems, paying attention to the characterization of nanoscale miscibility and interfaces, both in blends involving copolymers and in immiscible blends. The thermodynamics, miscibility, phase separation, morphology and interfaces in polymer blends are also discussed in light of new insights involving the nanoscopic scale. Finally, the authors detail the processing-morphology-property relationships of polymer blends, as well as the influence of processing on the generation of micro and nano morphologies, and the dependence of these morphologies on the properties of blends. Hot topics such as compatibilization through nanoparticles, miscibility of new biopolymers and nanoscale investigations of interfaces in blends are also addressed. With its application-oriented approach, handpicked selection of topics and expert contributors, this is an outstanding survey for anyone involved in the field of polymer blends for advanced technologies.
