Book excerpt: An incomparable culinary treasury: the definitive guide to French cooking for the way we live now, from the man the Gault Millau guide has proclaimed “Chef of the Century.” Joël Robuchon’s restaurant empire stretches from Paris to New York, Las Vegas to Tokyo, London to Hong Kong. He holds more Michelin stars than any other chef. Now this great master gives us his supremely authoritative renditions of virtually the entire French culinary repertoire, adapted for the home cook and the contemporary palate. Here are more than 800 precise, easy-to-follow, step-by-step recipes, including Robuchon’s updated versions of great classics—Pot-au-Feu, Sole Meunière, Cherry Custard Tart—as well as dozens of less well-known but equally scrumptious salads, roasts, gratins, and stews. Here, too, are a surprising variety of regional specialties (star turns like Aristide Couteaux’s variation on Hare Royale) and such essential favorites as scrambled eggs. Emphasizing quality ingredients and the brilliant but simple marriage of candid flavors—the genius for which he is rightly celebrated—Robuchon encourages the beginner with jargon-free, impeccable instructions in technique, while offering the practiced cook exciting paths for experimentation. The Complete Robuchon is a book to be consulted again and again, a magnificent resource no kitchen should be without.

Available in PDF, EPUB and Kindle. Book excerpt: The international success of Downton Abbey has led to a revived interest in period dramas, with older programs like The Forsyte Saga being rediscovered by a new generation of fans whose tastes also include grittier fare like Ripper Street. Though often criticized as a form of escapist, conservative nostalgia, these shows can also provide a lens to examine the class and gender politics of both the past and present. In Upstairs and Downstairs: British Costume Drama Television from The Forsyte Saga to Downton Abbey, James Leggott and Julie Anne Taddeo provide a collection of essays that analyze key developments in the history of period dramas from the late 1960s to the present day. Contributors explore such issues as how the genre fulfills and disrupts notions of “quality television,” the process of adaptation, the relationship between UK and U.S. television, and the connection between the period drama and wider developments in TV and popular culture. Additional essays examine how fans shape the content and reception of these dramas and how the genre has articulated or generated debates about gender, sexuality, and class. In addition to Downton Abbey and Upstairs, Downstairs, other programs discussed in this collection include Call the Midwife, Danger UXB, Mr. Selfridge, Parade’s End, Piece of Cake, and Poldark. Tracing the lineage of costume drama from landmark productions of the late 1960s and 1970s to some of the most talked-about productions of recent years, Upstairs and Downstairs will be of value to students, teachers, and researchers in the areas of film, television, Victorian studies, literature, gender studies, and British history and culture.

Available in PDF, EPUB and Kindle. Book excerpt: This book discusses the significance of late twentieth century and early twenty first century American fiction written in response to the AIDS crisis and interrogates how sexual identity is depicted and constructed textually. Pearl develops Freudian psychoanalytic theory in a complex account of the ways in which grief is expressed and worked out in literature, showing how key texts from the AIDS crisis by authors such as Edmund White, Michael Cunningham, Eve Sedgwick - and also, later, the archives of The ACT UP Oral History Project - lie both within the tradition of gay writing and a postmodernist poetics. The book demonstrates how literary texts both expose and construct personal identity, how they expose and produce sexual identities, and how gay and queer identities were written onto the page, but also constructed and consolidated by these very texts. Pearl argues that the division between realist and postmodern, and gay and queer, respectively, is determined by whether the experience expressed and accounted is mediated through the psychoanalytic categories of mourning or melancholia, and is marked by a kind of coherence or chaos in the texts themselves. This study presents an important development in scholarly work in gay literary studies, queer theory, and AIDS representation.

Available in PDF, EPUB and Kindle. Book excerpt: Years before she published her internationally celebrated first novel, Anne of Green Gables, L.M. Montgomery (1874-1942) started contributing short works to periodicals across North America. While these works consisted primarily of poems and short stories, she also experimented with a wider range of forms, particularly during the early years of her career, at which point she tested out several authorial identities before settling on the professional moniker "L.M. Montgomery." A Name for Herself: Selected Writings, 1891-1917 is the first in a series of volumes collecting Montgomery's extensive contributions to periodicals. Leading Montgomery scholar Benjamin Lefebvre discusses these so-called miscellaneous pieces in relation to the works of English-speaking women writers who preceded her and the strategies they used to succeed, including the decision to publish under gender-neutral signatures. Among the highlights of the volume are Montgomery's contributions to student periodicals, a weekly newspaper column entitled "Around the Table," a long-lost story narrated first by a woman trapped in an unhappy marriage and then by the man she wishes she had married instead, and a new edition of her 1917 celebrity memoir, "The Alpine Path." Drawing fascinating links to Montgomery's life writing, career, and fiction, this volume will offer scholars and readers alike an intriguing new look at the work of Canada's most enduringly popular author.

Available in PDF, EPUB and Kindle. Book excerpt: Welcome to Milton High School, where fear is a teacher’s best tool and every student is a soldier in the war on terror. A struggling public school outside the nation’s capital, Milton sat squarely at the center of two trends: growing fear of resurgent terrorism and mounting pressure to run schools as job training sites. In response, the school established a specialized Homeland Security program. A Curriculum of Fear takes us into Milton for a day-to-day look at how such a program works, what it means to students and staff, and what it says about the militarization of U.S. public schools and, more broadly, the state of public education in this country. Nicole Nguyen guides us through a curriculum of national security–themed classes, electives, and internships designed through public-private partnerships with major defense contractors like Northrop Grumman and federal agencies like the NSA. She introduces us to students in the process of becoming a corps of “diverse workers” for the national security industry, learning to be “vigilant” citizens; and she shows us the everyday realities of a program intended to improve the school, revitalize the community, and eliminate the achievement gap. With reference to critical work on school militarization, neoliberal school reform, the impact of the global war on terror on everyday life, and the political uses of fear, A Curriculum of Fear maps the contexts that gave rise to Milton’s Homeland Security program and its popularity. Ultimately, as the first ethnography of such a program, the book provides a disturbing close encounter with the new normal imposed by the global war on terror—a school at once under siege and actively preparing for the siege itself.

In its depiction of a Victorian London in the grips of the new and morally bankrupting power of speculative finance, this novel has more than a little to say about some of the governing obsessions of our own age. Available in PDF, EPUB and Kindle. Book excerpt: The apostle Paul wrote to the church in Thessalonica to encourage Christians to live in light of the gospel. In 1 and 2 Thessalonians, he addressed a number of topics, including the persecution they were enduring, the second coming of Christ, and how they were to live in difficult times. While the letters were written nearly two thousand years ago, pastor James H. Grant Jr. insists that Paul's audience includes us as well as the Thessalonians. Grant applies Paul's message to contemporary churches over the course of twenty-five chapters by leading readers systematically through the epistles—unpacking the gospel and its implications in light of Christ's second coming. Part of the Preaching the Word commentary series.
