Book excerpt: JAMES BEARD AWARD NOMINEE • NAMED ONE OF THE TEN BEST BOOKS OF THE YEAR BY VOGUE • NEW YORK TIMES BESTSELLER “One of the great culinary stories of our time.”—Dwight Garner, The New York Times It begins with a simple ritual: Every Saturday afternoon, a boy who loves to cook walks to his grandmother’s house and helps her prepare a roast chicken for dinner. The grandmother is Swedish, a retired domestic. The boy is Ethiopian and adopted, and he will grow up to become the world-renowned chef Marcus Samuelsson. This book is his love letter to food and family in all its manifestations. Yes, Chef chronicles Samuelsson’s journey, from his grandmother’s kitchen to his arrival in New York City, where his outsize talent and ambition finally come together at Aquavit, earning him a New York Times three-star rating at the age of twenty-four. But Samuelsson’s career of chasing flavors had only just begun—in the intervening years, there have been White House state dinners, career crises, reality show triumphs, and, most important, the opening of Red Rooster in Harlem. At Red Rooster, Samuelsson has fulfilled his dream of creating a truly diverse, multiracial dining room—a place where presidents rub elbows with jazz musicians, aspiring artists, and bus drivers. It is a place where an orphan from Ethiopia, raised in Sweden, living in America, can feel at home. Praise for Yes, Chef “Such an interesting life, told with touching modesty and remarkable candor.”—Ruth Reichl “Marcus Samuelsson has an incomparable story, a quiet bravery, and a lyrical and discreetly glittering style—in the kitchen and on the page. I liked this book so very, very much.”—Gabrielle Hamilton “Plenty of celebrity chefs have a compelling story to tell, but none of them can top [this] one.”—The Wall Street Journal “Elegantly written . . . Samuelsson has the flavors of many countries in his blood.”—The Boston Globe “Red Rooster’s arrival in Harlem brought with it a chef who has reinvigorated and reimagined what it means to be American. In his famed dishes, and now in this memoir, Marcus Samuelsson tells a story that reaches past racial and national divides to the foundations of family, hope, and downright good food.”—President Bill Clinton

Available in PDF, EPUB and Kindle. Book excerpt: Lagom: n. just the right amount, balanced, harmonious. This beautiful, fresh cookbook offers genuine insight into how Swedes eat and cook – with recipes that fit around the seasons, occasions, times of day, and appetite. Eating and cooking in tune with 'lagom' means embracing food that is good for body and soul, unfussy, delicious and sustaining, and all in harmony. The Swedes understand that balance is everything – that you crave comforting food when a bitter wind is howling outside, that refreshing, lighter meals suit hot, hazy days, that a mid-morning bun is good for morale, and that a long, sociable lunch with friends and family on a Sunday is the most rewarding way to end the weekend. There is a time and place for every kind of food, and when everything is in equilibrium, you will be content and satisfied. Steffi Knowles-Dellner is a Swedish food stylist and blogger who will introduce you to the unique Swedish concepts that encapsulate lagom, in this her debut book. From the well-known smörgåsbord table of open sandwiches, and Fredags mys ("cosy Fridays") when hunkering down on a cosy sofa and tucking into tacos is a must, all the way to the irresistible idea of lördagsgodis – a single day for eating sweets to satisfy even the sweetest tooth.

This book was released on 2009 with total page 61 pages. Available in PDF, EPUB and Kindle. Book excerpt: Increasing frequencies of cataracts (i.e., opacities in eye lens) have been diagnosed in farmed salmonids during past years. Cataracts have proven a pronounced problem in fish farming because it leads to reduced eyesight and even total blindness of the fish. Norway has been leading research on cataracts because of the economic significance of Atlantic salmon farming. Other issues in respect of stocking and animal welfare have been considered. There are still knowledge gaps on the causes of cataract as well as on its consequences. Furthermore, quantitative information on the severity of the problem is still largely lacking. The report presents results from a number of case studies that have been conducted by the project group and collaborators. The project has shown cataracts to be relatively common in all the six salmonid species included in surveys from Finland and Sweden. The prevalence and severity (coverage of eye lens) were however variable often related to an exposure to Diplostomum spp. parasites that use fish as their intermediate hosts. The result contrasts with findings from Norway about the importance of nutritional imbalance and environmental (abiotic) factors in predisposing fish to cataract development.

Book excerpt: Ever wonder if there was compelling proof for the existence of God? If so, what would it look like and how would it be presented? Do you believe Christianity is true or do you take the skeptical view that all religions are man-made? What does human consciousness have to do with God? What's the difference between agnosticism and atheism? How does culture and the way we are raised impact our religious and spiritual beliefs? Best selling author and skeptic Tristan Vick covers a full range of subjects from philosophy to psychology to sociology, history, and science as he considers the the arguments for the existence of God, belief in the historical Jesus, and whether there is life after death. Then one by one he systematically deconstructs the arguments of contemporary Christian apologist Randal Rauser and offers a worthy critique from a different school of thought. Christians and nonbelievers alike will find more than enough to chew on in this book, and maybe even a lot to agree on as well.

Book excerpt: A ketogenic diet isn't something new that has been recently formulated; people have been on a ketogenic diet for virtually three million years in which our brains were nurtured and evolved. Now the human brain is not only shrinking, but brain atrophy is the norm as we age and get plagued with diseases such as dementia, Alzheimer's disease and Parkinson's disease. People mistakenly think that they need to eat less and exercise more to create a calorie deficit in order to lose weight. This is not how diet and exercise helps with weight loss. A well-formulated keto-adapted diet along with proper exercise builds muscle and muscle builds mitochondria. It is in the mitochondria where fat is oxidized so you can keep your cells and liver insulin sensitized. Weight loss and health is about healthy mitochondria and about controlling hormones and specifically insulin. This is not a diet, it is a lifestyle. By eating this way, you will begin to heal your cells and will keep evolving your body into the happy and healthy person you want to be. This book is filled with the most impeccable nutrition information to fuel your cells. Maria's passion goes beyond explaining the 'why', she is a master in the kitchen and loves food. Her keto-adapted recipes at the end of the book tie all the nutrition together so you can become keto-adapted faster than ever.

Book excerpt: A Finalist for the Los Angeles Times Book Prize National Bestseller Winner of the National Outdoor Book Award Longlisted for the Andrew Carnegie Medal for Excellence in Nonfiction A New York Times Notable Book One of TIME’s 100 Must Read Books of the Year One of The Washington Post’s 50 Notable Nonfiction Books of the Year One of Smithsonian Magazine’s 10 Best Science Books of the Year One of Publishers Weekly’s Best Nonfiction Books of the Year A New York Times Editor’s Choice Part H Is for Hawk, part The Soul of an Octopus, The Book of Eels is both a meditation on the world’s most elusive fish—the eel—and a reflection on the human condition Remarkably little is known about the European eel, Anguilla anguilla. So little, in fact, that scientists and philosophers have, for centuries, been obsessed with what has become known as the “eel question”: Where do eels come from? What are they? Are they fish or some other kind of creature altogether? Even today, in an age of advanced science, no one has ever seen eels mating or giving birth, and we still don’t understand what drives them, after living for decades in freshwater, to swim great distances back to the ocean at the end of their lives. They remain a mystery. Drawing on a breadth of research about eels in literature, history, and modern marine biology, as well as his own experience fishing for eels with his father, Patrik Svensson crafts a mesmerizing portrait of an unusual, utterly misunderstood, and completely captivating animal. In The Book of Eels, we meet renowned historical thinkers, from Aristotle to Sigmund Freud to Rachel Carson, for whom the eel was a singular obsession. And we meet the scientists who spearheaded the search for the eel’s point of origin, including Danish marine biologist Johannes Schmidt, who led research efforts in the early twentieth century, catching thousands upon thousands of eels, in the hopes of proving their birthing grounds in the Sargasso Sea. Blending memoir and nature writing at its best, Svensson’s journey to understand the eel becomes an exploration of the human condition that delves into overarching issues about our roots and destiny, both as humans and as animals, and, ultimately, how to handle the biggest question of all: death. The result is a gripping and slippery narrative that will surprise and enchant.
