Book excerpt: Travellers to the southwestern French Mediterranean area will probably visit the well-known regional centres of Nimes, Montpellier, Carcassonne and Perpignan, which are the main cities of the Languedoc-Roussillon region, comprising the departments of Lozere, Gard, Herault, Aude and Pyrenees-Orientales. This sun-drenched place was the cradle of Roman Gaul, and spawned the wine co-operatives and denim, the world's staple clothing material. It is the birthplace of iconic singers such as Charles Treneet and Georges Brassens, and the poet-pholosopher Paul Valery. Its coast curves round towards Spain from where the Catalan influence springs. Collectively, this is France's largest and olest vineyard, and among the largest in the world. Here bulls and horses are a passion, local rugby clubs are among the best in the country, and the memory of rebels against northern French rule - Cathars, Protestant Camisards, rebelling wine-growers, Resistance fighters - is not forgotten. It is a strongly defined region: a place of contrasts and cultural heritage with its Occitan and Catalan-driven Mediterranean lifestyle. It is today the most attractive area in France, with a population of nearly three million, though it does have its economic problems. This book was inspired by the Author's former students of French, who wanted to learn more about the character and background of regional people. Consequently quotations from real-life Languedocians and Catalans in French, Occitan and English appear together with extracts from the literature of past and present writers. These examples offer an intriguing and educational insight into the area.

Available in PDF, EPUB and Kindle. Book excerpt: Terror and terroir investigates the Comité Régional d'Action Viticole (CRAV), a loose affiliation of militant winegrowers in the sun-drenched, southern vineyards of the Languedoc. Since 1961, they have fought to protect their livelihood. They were responsible for sabotage, bombings, hijackings and even the shooting of a policeman. Against the backdrop of European integration and decolonisation they have rallied around banners of Resistance and their strong Republican heritage, whilst their peasant protests fed into Occitan and anti-globalisation movements. At heart, however, the CRAV remain farmers championing the right of people to live and work the land. Between the romantic mythology of terroir, and the misguided, passionate violence of terror, this book unpicks the contentious issues of regionalism, protest and violence. It offers an insight into a neglected area of France's past that continues to impinge on its future, infused with one of the most potent symbols of French culture: wine.

The study of wine and beverages has become integral to hospitality education. The Wine, Beer, and Spirits Handbook demystifies the wine and wine-making process, examining not only the making and flavor profiles of wine, beer, and spirits, but also the business of wine service as practiced by a chef or sommelier. Unique to this book, is the strong emphasis on food and wine pairings, as well as food and beverage interactions. An entire chapter uncovers this broad, often intimidating, topic with detailed information on table wines, sparkling wines, fortified wines, beer and spirits. More importantly, The Handbook explains the responsibilities of a sommelier from both service and managerial perspectives. Readers explore their wine-related duties including: the developing of wine lists, identifying faulty wines, ordering, receiving, and storing wines, conducting inventory control, pricing, product research, cellar management, and the health and legal implications of wine consumption. A comprehensive, one-stop resource to the character and best use of beverages, The Wine, Beer, and Spirits Handbook will help every student, chef, sommelier and wine enthusiast confidently master the mysteries of wine and other beverages.
