Book excerpt: Until her recent death at 93, Carmela Cusumano was a cook of a vanishing breed. Daughter of Sicilian immigrants, Carmela took to her roles in the kitchen as chief cook, devoted wife to a husband (also son of Sicilian immigrants), and mother to ten children with a passion befitting a "performing" artist. In her eighties, Carmela, already a grandmother and great-grandmother nearly fifty times, decided to gather the recipes for her ever-growing family, including the traditional dishes they recalled with nostalgia and also the many baked goods Carmela loved to treat family and friends to. Carmela published those recipes in a spiral-bound book, La Cucina di Carmela. After Carmela's death, November 19, 2015, her ten children decided to re-publish her book and make it available for anyone who loves to cook and to make simple good food. This is a cookbook of Sicilian and American fare. As the children point out in the Foreword, Carmela, who studied home economics at an American high school where she graduated in the late 1930s, honed her skills in her Sicilian and American household of the 1940s through the 1960s. The recipes reflect her Sicilian heritage and the time and place (New Jersey) where she raised her family. Thus the recipes weave Carmela's simple fare that she had to stretch to feed her large family with her passion later in life for collecting new recipes from everyone, from her Hungarian sister-in-law to a Texas chef. You will find recipes for homemade pasta, sausage, and eggplant appetizer, for Hungarian cakes and cookies, and that Texan chef's crab claw appetizer. There are recipes for classics, like Wedding Soup and Sicilian cannoli and pizza and Carmela's treasured discoveries like strawberry cream cake and pineapple pie.

Available in PDF, EPUB and Kindle. Book excerpt: Italian-American dishes are what we crave and what we make, what we order and what we wax rhapsodic about. The last century has seen hundreds of inspired new dishes take their place at the table alongside traditional preparations, resulting in a cuisine that is as current as it is classic. At last, here is the place to look for the tastiest and most definitive renderings of Shrimp Fra Diavolo, Steak Florentine, Pasta alla Primavera, Linguine with Clam Sauce, Spinach with Pignol is, Tiramisu, and all the other treasures of the Italian-American table. In these pages, America's premier restaurant critic, John Mariani, and his wizard-in-the-kitchen wife, Galina Mariani, update and perfect all the classics in lighter, less creamy-and-cheesy versions made with the freshest of ingredients. The Marian is make a convincing case that Italian-American cooking, far from being a watered-down version of Italian cookery, is a full-fledged cuisine in its own right. In fact, as they show in a fascinating introduction, many elements of Italian cuisine in Italy today are actually imports from the Italian-American repertoire. In 250 recipes, they reveal not only how glorious that repertoire is but also how its basic elements may be used in innovative new ways - in a Risotto with Apples and Saffron, for example, or a Pork Roast with Fennel. This is a feast of food, from antipasti and soups through pastas and pizzas all the way to dessert, and also of history and folklore, in the dozens of sidebars and archival photographs that bring to life the family restaurants and home kitchens where these magnificent ethnic dishes are prepared and enjoyed.

Available in PDF, EPUB and Kindle. Book excerpt: The Sicilian Gentleman's Cookbook is a son's tribute to his the father, "The Old Man" -- an Old World gent renowned as much for his cooking as for his delightful stories and outrageous claims. By the time you've finished reading his book you may not be convinced that Sicilians are responsible for chicken soup, rice, and pasta (as the Old Man claims) but you may well believe they invented laughter. The writing style is relaxed and conversational. The recipes -- more than 160 -- combine Sicilian and American influences and include antipasto and salads; vegetables; soups and stews; pasta and sauces; seafood; poultry and meat; and sweets. The dishes are all simple, authentic, and delicious: A Meatloaf Like No Other (combines Italian sausage, pine nuts, olives and wine)- Shellfish Marinara 1, 2, and 3 (each a distinct version) Pasta with Polpette (Sicilian meatballs that have a flattened oval shape, much like a stepped-on football. Odd they may look, but they're never tough since you need brown only two sides) Pasta with Beans, Pasta with Artichokes, Pasta with Cauliflower, Pasta with Eggplant An abundance of recipes for chicken and for fish -- and one for chicken with fish (plus a handful of dried figs) Traditional veal dishes Desserts that include holiday pastries, a ricotta pie, and a Sicilian rice pudding Readers not familiar with Sicilian cooking are in for a treat. The food of the Mediterranean's largest island was influenced by the people who conquered it. From the Arabs and Moors come stuffed vegetables and the use of dried fruits and pine nuts. From the Greeks come olive oil and lemon. It is a simpler cuisine than that of the north, emphasizing leaner ingredients. For Sicilians, seafood is more important than meat, and lamb is more likely to be seen on the table than is pork. The Sicilian Gentleman's Cookbook is filled with all the warmth, love, and happiness of the home that the Old Man created. The recipes are generously garnished with anecdotes and old-world philosophy.

Book excerpt: The best recipes of two family traditions, by a favorite television actress and talented home cook. No matter how far from home we go, refining our palates, leaving behind family cooking for sophisticated fare, we all have a special place in our hearts--and stomachs--for our families' deliciously basic, home recipes. Born of the culinary traditions of actress Pamela Hensley Vincent's Jewish family and her husband Duke Vincent's Italian background, The Jewish-Sicilian Cookbook recaptures, with charm, and tasty and do-able recipes, the gastronomic nostalgia of two families. The sixty-four recipes run the gamut from typically Jewish (Yetta's Chicken Soup) to quintessentially Italian (Duke's Special Spaghetti), and represent the best of traditional modern American food, radiating a fifties sensibility that goes down as deliciously well today as it did then. The common ground of all family food traditions is "Food is Love," and this principle is irresistibly at play as Pamela Vincent recounts heartfelt anecdotes, describing memories of meals with loved ones. From a predawn breakfast of buttered matzoh and coffee with her grandfather to pasta night with Duke, The Jewish-Sicilian Cookbook will inspire readers to revisit fond food memories of their own as well as create new ones.

Available in PDF, EPUB and Kindle. Book excerpt: From one of America's most beloved chefs and authors, a road trip into the heart of Italian American cooking today—from Chicago deep-dish pizza to the Bronx's eggplant parm—celebrating the communities that redefined what we know as Italian food. As she explores this utterly delectable and distinctive cuisine, Lidia shows us that every kitchen is different, every Italian community distinct, and little clues are buried in each dish: the Sicilian-style semolina bread and briny olives in New Orleans Muffuletta Sandwiches, the Neapolitan crust of New York pizza, and mushrooms (abundant in the United States, but scarce in Italy) stuffed with breadcrumbs, just as peppers or tomatoes are. Lidia shows us how this cuisine is an original American creation and gives recognition where it is long overdue to the many industrious Italians across the country who have honored the traditions of their homeland in a delicious new style. And of course, there are Lidia’s irresistible recipes, including · Baltimore Crab Cakes · Pittsburgh’s Primanti’s Sandwiches · Chicago Deep-Dish Pizza · Eggplant Parmigiana from the Bronx · Gloucester Baked Halibut · Chicken Trombino from Philadelphia · authentic Italian American Meatloaf, and Spaghetti and Meatballs · Prickly Pear Granita from California · and, of course, a handful of cheesecakes and cookies that you’d recognize in any classic Italian bakery This is a loving exploration of a fascinating cuisine—as only Lidia could give us.

Book excerpt: Over the past century, hundreds of Italian-inspired dishes, influenced by American tastes, have taken their place at the table alongside traditional preparations. This results in a cuisine that is as current as the classic traditional preparations. These are dishes we all crave to eat. Italian American cuisine has been highly influential in the American diet. It is one of the top three cuisines in the United States, alongside Chinese and Mexican cuisines. Italian American food is based primarily on the culinary traditions of Southern Italian immigrants. However, a significant number of Northern Italian immigrants also came to the United States and influenced this style of cuisine to some extent. As a result, Italian Americans often identify foods with their regional heritage. For example, southern Italian staples include dry pasta, tomato sauce, and olive oil, whereas Northern Italian staples include foods such as risotto, white sauce, and polenta. Explore the depths of Italian American dishes with the over 50 recipes in the Italian American Cookbook. From Fig Bruschetta to Tuscan Fish Stew, Baked Meatball Casserole, Osso Buco, Mushroom Walnut Orzo, and to top it off for desserts, Triple Chocolate Biscotti, Lemon Ricotta Cake, and Deconstructed Tiramisu. Each recipe reveals not only how glorious each dish is but also how its essential elements may be used in innovative new, Americanized ways Get your copy of the Italian American Cookbook now and begin exploring the influences of these two cuisines!
