Book excerpt: Soybean protei ns are wi de 1 y used inhuman foods ina vari ety of forms, including baby formulas, flour, soy protein concentrates, soy protein isolates, soy sauces, textured soy fibers, and tofu. The presence of inhibitors of digestive enzymes in soy proteins impairs nutritional quality and possible safety of this impportant legume. Normal processing conditions based on the use of heat do not completely inactivate these inhibitors, so that residual amounts of plant protease inhibitors are consumed by animals and man. Inhibitors of digestive enzymes are present not only in legumes, such as soybeans, lima beans, and kidney beans, but also in nearly all plant foods, including cereals and potatoes, albeit in much smaller amounts. The antinutritional effects of inhibitors of proteolytic enzymes have been widely studied and can be ameliorated by processing and/or sulfur amino acid fortification. A more urgent concern is reports that rats fed diets containing even low levels of soybean-derived inhibitors, which are found in foods such as soy-based baby formulas, may develop over their lifespan pancreatic lesions leading eventually to neoplasia or tumor formation. On the other hand, recent stUdies suggest that certain enzyme inhibitors from plant foods may prevent cancer formation in other tissues. A key question, therefore, is whether inhibitors from plant foods constitute a human health hazard.

Book excerpt: The Physiology of Growth focuses on the physiological mechanisms underlying the growth of organs and tissues such as the epidermis, connective tissues, bone and cartilage, blood cells, and the heart. The atrophy and hypertrophy of muscle, adaptive plasticity of the nervous system, and neural regulation of salivary glands are also explored. Comprised of 24 chapters, this book opens with an overview of the nature of growth, ways to measure growth, and theories of growth. The discussion then turns to the renewal of epidermis; the growth of connective tissues such as collagen and keloids; physical regulation of bone growth and cartilage regrowth; and turnover of blood cells. The following chapters focus on the link between hypertension and heart growth; expansion of arteries and veins; muscle atrophy and hypertrophy; and intraocular regulation of lens development. The effect of lactation on the growth of the mammary glands is also considered, along with liver degeneration and experimental regulation of the testis. This monograph is intended for physiologists, developmental biologists, and students of histology.

Available in PDF, EPUB and Kindle. Book excerpt: The increased incidence of pancreatic cancer in the Western world and its grave prognosis has resulted in an urgency for research in this area. Until now the available data on toxicology of the pancreas has been few and fragmentary, scattered throughout the literature. A benchmark volume, Toxicology of the Pancreas pulls together information in this neglected area of toxicological research and highlights fundamental research performed in the last ten years. Leaders in the field discuss important structures, the detoxification and toxification process at the cellular and sub-cellular level, the distribution of phase 1 and phase 2 drug-metabolizing enzymes and their role in pancreatic disease, and the role of diet and toxicants on pancreatic disease. The book also covers the role of altered genes in the integrity of the pancreas and explores comparative toxicology in humans and in the lab species used in testing. Illustrated with histological, electron microscopical, and immunohistochemical formats, this book provides a comprehensive and novel presentation of biological and toxicological data. It stands alone as a reliable resource of information easily accessible to professionals in different disciplines.

Available in PDF, EPUB and Kindle. Book excerpt: Faba beans, formerly known as broad beans, are among the oldest crops in the world. It has in fact been claimed with some justification that the Pyramids were built on faba beans! They are today a major crop in many countries such as China, Egypt and the Sudan; and are widely grown for human food throughout the Me~iterranean region, in Ethiopia and in parts of Latin America. In recent years there has been a growing interest in faba bean production as a protein source for stock feed in parts of Europe, North America and Aus· tralia. The publication served by this preface arose from the first International Faba Bean Con ference, held in Cairo, Egypt, on March 7-11, 1981 which provided a suitable forum for the review of many scientifically important aspects of the improvement of the crop. Leading faba bean specialists from four continents who participated were able not only to contri· bute from their personal expertise in relevant subjects, but in return to gain from their ex perience of Nile Valley conditions and from close contact with so many of the world's faba bean scientists. The conference was supported in the main by the ICARDAjIFAD Nile Valley Faba Bean Project. Additional support was received from a number of other organisations and institutions whose help is gladly acknowledged. These included the Agricultural Research Council (ARC) of the Egyptian Ministry of Agriculture; G.T.Z. of Germany; IDRC of Canada; the National Research Center of Egypt; and Cairo University.

Book excerpt: In the years since the third edition of this indispensable reference was published, a great deal has been learned about the nutritional requirements of common laboratory species: rat, mouse, guinea pig, hamster, gerbil, and vole. The Fourth Revised Edition presents the current expert understanding of the lipid, carbohydrate, protein, mineral, vitamin, and other nutritional needs of these animals. The extensive use of tables provides easy access to a wealth of comprehensive data and resource information. The volume also provides an expanded background discussion of general dietary considerations. In addition to a more user-friendly organization, new features in this edition include: A significantly expanded section on dietary requirements for rats, reporting substantial new findings. A new section on nutrients that are not required but that may produce beneficial results. New information on growth and reproductive performance among the most commonly used strains of rats and mice and on several hamster species. An expanded discussion of diet formulation and preparationâ€"including sample diets of both purified and natural ingredients. New information on mineral deficiency and toxicity, including warning signs. This authoritative resource will be important to researchers, laboratory technicians, and manufacturers of laboratory animal feed.

This book examines the role of the chemical senses in nutrition. Organized into eight parts encompassing 24 chapters, this book starts with an overview of how taste can influence activity along the digestive tract, the character of secretions of the exocrine pancreas, and the level of circulating metabolic hormones. This text then explains the efficacy of external food-related stimuli to start and sustain an ingestion response. Other chapters consider the experimentally supported models of ingestive behavior, which generally emphasize energy relationships between the animal and its food. This book discusses as well how caloric intake is adjusted by modification to meal size, consumption rate, frequency, and duration of feeding. The final chapter deals with the gastronomic limits of an animal. This book is a valuable resource for nutritionists, psychophysicists, scientists, and researchers.

Available in PDF, EPUB and Kindle. Book excerpt: Protides of the Biological Fluids contains the proceedings of the 23rd Colloquium on "Protides of the Biological Fluids" held in Brugge, Belgium in 1975. The discussions were organized around three themes: proteinase inhibitors, clinical evaluation of plasma protein patterns, and affinity chromatography. Comprised of 117 chapters, this volume begins with an overview of carcinofetal proteins, followed by an analysis of proteinase inhibition. The reader is then introduced to the mechanism and structure of human alpha-1-proteinase inhibitor; some properties of a complex between ?2-macroglobulin and brinase; and the interaction of proteinase inhibitors with blastocyst proteinases involved in implantation. Subsequent chapters deal with the thermodynamics and kinetics of the interaction of trypsin with trypsin inhibitors; purification and characterization of acid-stable proteinase inhibitors from human seminal plasma; and the possible role of protease inhibitors in cartilage metabolism. The book also explores the structure and function of animal proteinase inhibitors as well as techniques and methods used in clinical evaluation of plasma protein patterns. This monograph will be of interest to biologists and research workers in biology.
