This book was released on 2002-07-19 with total page 798 pages. Available in PDF, EPUB and Kindle. Book excerpt: This volume is the newest release in the authoritative series issued by the National Academy of Sciences on dietary reference intakes (DRIs). This series provides recommended intakes, such as Recommended Dietary Allowances (RDAs), for use in planning nutritionally adequate diets for individuals based on age and gender. In addition, a new reference intake, the Tolerable Upper Intake Level (UL), has also been established to assist an individual in knowing how much is "too much" of a nutrient. Based on the Institute of Medicine's review of the scientific literature regarding dietary micronutrients, recommendations have been formulated regarding vitamins A and K, iron, iodine, chromium, copper, manganese, molybdenum, zinc, and other potentially beneficial trace elements such as boron to determine the roles, if any, they play in health. The book also: Reviews selected components of food that may influence the bioavailability of these compounds. Develops estimates of dietary intake of these compounds that are compatible with good nutrition throughout the life span and that may decrease risk of chronic disease where data indicate they play a role. Determines Tolerable Upper Intake levels for each nutrient reviewed where adequate scientific data are available in specific population subgroups. Identifies research needed to improve knowledge of the role of these micronutrients in human health. This book will be important to professionals in nutrition research and education.

A short account of the history of the effort led to the Phosphate Workshops is appro priate and can be of interest to the reader. The idea for Phosphate Workshops was born in the early days of November, 1974. One of us (S. G. M. ) suggested the thought to a group of scientists gathered for a luncheon in one of the attrac tive small restaurants in Weisbaden, Germany. The purpose of the workshop was to bring together interested scientists to discuss the newer developments and the recent advances in the field of phosphate metabolism and the other related minerals. An Organizing Committee made of Shaul G. Massry (USA), Louis V. Avioli (USA), Philippe Bordier (France), Herbert Fleisch (Switzerland), and Eduardo Slatopolsky (USA) was formed. The First Workshop was held in Paris during June 5-6, 1975 and was hosted by Dr. Philippe Bordier. Its proceeding was already published. The Second Workshop took place in Heidelberg during June 28-30, 1976 and was hosted by Dr. Eberhard Ritz. Both of these workshops were extremely successful scientific endeavors, and the need for them was demonstrated by the great interest they generated among the scientific community. The Or ganizing Committee, therefore, decided to continue with the tradi tion to hold additional Workshops annually or every other year.

Identifying alternatives to the unique properties of gluten has proven a significant challenge for food scientists and for the 1% of the world's population suffering from the immune-mediated entropathy reaction to the ingestion of gluten and related proteins, commonly known as Celiac Disease. This book includes information on the advances in working with those alternatives to create gluten free products including gluten-free beer, malt and functional drinks. Food scientists developing gluten-free foods and beverages, cereal scientists researching the area, and nutritionists working with celiac patients will find this book particularly valuable. - Written by leading experts, presenting the latest developments in gluten-free products - Addresses Coeliac Disease from a food science perspective - Presents each topic from both a scientific and industrial point of view

Book excerpt: Food Fortification in a Globalized World outlines experiences over the past 50 years—and future potential—for the application of food fortification across a variety of foods in the industrialized and developing world. The book captures recent science and applications trends in fortification, including emerging areas such as biofortification, nutraceuticals and new nutrient intake recommendations, standards, policy and regulation. The book proposes a balanced and effective food fortification strategy for nations to adopt. In covering the most technical scientific details in an approachable style, this work is accessible to a range of practitioners in industry, government, NGOs, academia and research. Food fortification has become an increasingly significant strategy to address gaps in micronutrient intakes in populations with measurable impact in both industrialized and developing countries. While the positive impacts are well recognized there are new concerns in some countries that excessive fortification of foods, outdated nutritional labeling rules and misleading marketing tactics used by food manufacturers may result in young children consuming harmful amounts of some vitamins and minerals. - Presents the latest science on fortification for the prevention of micronutrient deficiencies - Includes emerging areas such as biofortification, nutraceuticals and new nutrient intake recommendations, standards, regulations, practices and policies from around the world - Summarizes evidence of application of food fortification and measured impact on public health - Discusses how public policy impacts fortification of foods and nutritional deficiencies - Considers the complex economics of and market for fortified foods

Available in PDF, EPUB and Kindle. Book excerpt: Probably more than any other element, iron markedly influences the chemical and physical properties of soils and sediments in the earth. Considering its transition metal status, with potential variation in electronic configuration, ionic radius, and magnetic moment, combined with its abundance and relatively large mass, little wonder that one sees its unique influence on every hand. Pre sentations at the NATO Advanced Study Institute (NATO AS!) on Iron in Soils and Clay Minerals reviewed and discussed the occurrence, behavior, and properties of Fe-bearing minerals found in soils and in the clay mineral groups kaolinite, smectite, and mica. Also discussed at the NATO AS! were the basic chemical properties of Fe, methods for separating and identifying Fe in minerals, and the role of Fe minerals in weathering and other soil-forming processes. The present publication is the reviewed and edited proceedings of that Advanced Study Institute. The sequence of chapters follows the general pattern beginning with introductory chapters which overview the general occurrence of Fe in the earth and its chemistry, both generally and in mineral environments, followed by identification and characterization methods for Fe and Fe phases in minerals. The properties and behavior of Fe oxides, Fe-bearing clay minerals, and other Fe minerals in soils are then described, and the text ends with a summary of the role of Fe in soil-forming processes. A Table of Contents and subject index are provided to assist the reader in finding specific topics within the text.
