Book excerpt: The Story Behind This Project: When I was in college at the University of North Carolina, the only way for me to acquire the amazing soda Cheerwine(R) in the late 1960s was to stop in Salisbury, North Carolina, on the way home to and from school in Chapel Hill. The soda was a local specialty but universally loved. I bought several bottles each time from a big metal cooler at a gas station, occasionally using some Cheerwine in cooking just for fun. Now Cheerwine is 100 years old, with national distribution. Best soda in the world! Of course I don't drink it every day, but Cheerwine sure is fun to use in cooking and mixology. The Cheerwine syrup, unfortunately, is no longer available online. Wherever my book calls for the syrup, you may substitute my Cheerwine glaze (p. 19, omitting the butter), which will keep for at least a month in the fridge. I originally planned to make only a few copies of this book for my children and grandchildren, but then several other southerners heard about it and encouraged me to make my Cheerwine Recipe Book available to everyone. So here it is, some three dozen recipes for your enjoyment, including desserts such as cashew brittle, pralines, brownies, and gingerbread, plus several savory dishes and cocktails. I used Cheerwine in cans, which has high-fructose corn syrup, to develop these recipes. I assume that Cheerwine in glass bottles, made with cane sugar, would produce the same results. NOTE: If you purchase the Kindle version, my table of contents with page numbers might not apply. Also, be sure to ADD the Cheerwine for cooking your black-eyed peas! I omitted that crucial step in the first printing.
