Book excerpt: Excerpt from Oysters and Fish Would it not be beneficial, were the average American to substitute fish for the everlasting steak and chop of the breakfast-table? For the sake of variety, if for no other reason, we should eat more fish; and it need not always be fried or broiled. A well-made fish stew or a curry should be acceptable to the majority of us, and undoubtedly would be if appetizingly prepared. This little work does not by any means propose to exhaust the subject of sea-food, for the subject is almost inexhaustible; but it places within the reach of all a series of recipes and suggestions extremely valuable to the average housewife. The Oyster Season opens in the city of New York on the first day of September, and closes on the last day of April in each year. Book excerpt: Before New York City was the Big Apple, it could have been called the Big Oyster. Now award-winning author Mark Kurlansky tells the remarkable story of New York by following the trajectory of one of its most fascinating inhabitants–the oyster, whose influence on the great metropolis remains unparalleled. For centuries New York was famous for its oysters, which until the early 1900s played such a dominant a role in the city’s economy, gastronomy, and ecology that the abundant bivalves were Gotham’s most celebrated export, a staple food for the wealthy, the poor, and tourists alike, and the primary natural defense against pollution for the city’s congested waterways. Filled with cultural, historical, and culinary insight–along with historic recipes, maps, drawings, and photos–this dynamic narrative sweeps readers from the island hunting ground of the Lenape Indians to the death of the oyster beds and the rise of America’s environmentalist movement, from the oyster cellars of the rough-and-tumble Five Points slums to Manhattan’s Gilded Age dining chambers. Kurlansky brings characters vividly to life while recounting dramatic incidents that changed the course of New York history. Here are the stories behind Peter Stuyvesant’s peg leg and Robert Fulton’s “Folly”; the oyster merchant and pioneering African American leader Thomas Downing; the birth of the business lunch at Delmonico’s; early feminist Fanny Fern, one of the highest-paid newspaper writers in the city; even “Diamond” Jim Brady, who we discover was not the gourmand of popular legend. With The Big Oyster, Mark Kurlansky serves up history at its most engrossing, entertaining, and delicious.

Book excerpt: Excerpt from Fish and Shellfish of the Middle Atlantic Coast Atlantic fisheries are carried on by individual fishermen or by small associations of fishermen. In this respect they contrast sharply with the fisheries of New England and the Pacific Coast, where the typical operating unit is a large company, with financial stability and large re sources of material and equipment. The only important exceptions to the lack of organization in the Mid dle Atlantic area are the menhaden fishery, dominated by several large companies owning chains of fac tories and many boats, and the oyster industry of Long Island Sound and sections of New Jersey and Virginia. The pound net fish eries, as a rule, are carried on by fishermen organized into groups of some 8126. About the Publisher Forgotten Books publishes hundreds of thousands of rare and classic books. Book excerpt: Excerpt from Investigations for the Promotion of the Oyster Industry of North Carolina The following report is based upon a study of the physical and biological conditions of natural and planted oyster beds in various localities in North Carolina, and contains a record of experiments in oyster culture conducted in Newport and North rivers near Beaufort. The physical and biological investigations, which were conducted from the U. S. Fish Commission steamer Fish Hawk, were begun in October, 1899, and, after an interruption extending from the end of March to the first of November, were completed in December, 1900. The experimental work covered a period of three years, beginning in April, 1900. The objects of the work of the Fish Hawk were: (1) To ascertain the present extent and condition of the natural oyster beds in certain sections, for the purpose of comparison with determinations by Wins low on the same ground in 1886 - 1888; (2) to study comparatively the biological conditions of a number of good natural oyster beds and typical planted areas, with the object of determining the natural cause, if such exists, for the failure of the planted beds; (3) to study the physical and biological characters of the bottom and water of various localities for comparison with the conditions prevailing on good oyster producing localities of the North, and (4) to collect statistics bearing upon the value and extent of the oyster fishery of the State in the past and at the present time. Book excerpt: Excerpt from Food From the Sea: Fish and Shellfish of New England Millions of Americans are developing new wartime food habits trying foods they once neglected, turning to alternates for long familiar products. For every one of the ten fish or shellfish that make up more than four/fifths of New England's catch there are seven species little known or utilized, many of which could pro vide tasty and nutritious foods. Turning to these under/utilized species will conserve food resources by lifting the burden of over' exploitation from such fishes as cod and haddock and will augment dwindling supplies of protein foods. Exploring the seafood markets for unfamiliar species rewards the housewife and her family with delightful taste surprises, for scarcely any other class of food offers so great a variety, so rich an Opportunity for mealtime adventures. Book excerpt: Excerpt from Long Island Not so many of the population fish for a living as they did half a century ago. The reason is that more people come here to fish for fun. The whales are nearly all gone, and gas, electricity and kerosene have made the smoky whale oil effete anyway. Trout are raised in ponds belonging to clubs andenthusiasts. Off the coast menhaden are caught by the ton, but this has become a common-place industry. As to the oyster, scollop and clam fisheries they remain extensive and important. If there breathes a man with soul so dead, or stomach so rebellious and dyspeptic that he does not experience a thrill at the mention of Little Neck clams and Blue Point oysters, some good island missionary should take that man in hand and discover for him what delicious bivalves really are. Available in PDF, EPUB and Kindle. Book excerpt: A KID’S GUIDE TO THE OCEAN "Can you imagine a world without fish? It's not as crazy as it sounds. But if we keep doing things the way we've been doing things, fish could become extinct within fifty years. So let's change the way we do things!" World Without Fish is the uniquely illustrated narrative nonfiction account—for kids—of what is happening to the world’s oceans and what they can do about it. Written by Mark Kurlansky, author of Cod, Salt, The Big Oyster, and many other books, World Without Fish has been praised as “urgent” (Publishers Weekly) and “a wonderfully fast-paced and engaging primer on the key questions surrounding fish and the sea” (Paul Greenberg, author of Four Fish). It has also been included in the New York State Expeditionary Learning English Language Arts Curriculum. Written by a master storyteller, World Without Fish connects all the dots—biology, economics, evolution, politics, climate, history, culture, food, and nutrition—in a way that kids can really understand. It describes how the fish we most commonly eat, including tuna, salmon, cod, swordfish—even anchovies— could disappear within fifty years, and the domino effect it would have: the oceans teeming with jellyfish and turning pinkish orange from algal blooms, the seabirds disappearing, then reptiles, then mammals. It describes the back-and-forth dynamic of fishermen, who are the original environmentalists, and scientists, who not that long ago considered fish an endless resource. It explains why fish farming is not the answer—and why sustainable fishing is, and how to help return the oceans to their natural ecological balance. Interwoven with the book is a twelve-page graphic novel. Each beautifully illustrated chapter opener links to the next to form a larger fictional story that perfectly complements the text.
