Book excerpt: The Expert Maid-Servant By Christine Terhune Herrick A Classic Book on the Rules of Female Subservience The most common method of engaging a servant is through an intelligence office. There are nearly as many different kinds of these as there are types of domestics who patronize them. An office with a high standing should be selected. This is not only because a lower grade of employees is to be found at the other variety, but also on account of the methods followed in some of the cheaper offices. Such establishments occasionally have unscrupulous managers, who make a business of encouraging the maids they place to change often, in order that the renewed fee of the employer may come to the office. This practice has become common enough in some States to justify legislative intervention. In nearly every city or town there are reputable agencies, sometimes conducted as business enterprises simply, sometimes run in connection with church or benevolent societies, where a register is kept of the references of servants for whom places are secured. These references are usually held as confidential between the agent and the would-be employer, and the latter is thus enabled to learn with some certainty the qualifications of the maid she thinks of engaging.

Book Synopsis Fannie's Last Supper by : Christopher Kimball
Download or read book Fannie's Last Supper written by Christopher Kimball and published by Hachette Books. This book was released on 2010-10-05 with total page 241 pages. Available in PDF, EPUB and Kindle. Book excerpt: In the mid-1990s, Chris Kimball moved into an 1859 Victorian townhouse on the South End of Boston and, as he became accustomed to the quirks and peculiarities of the house and neighborhood, he began to wonder what it was like to live and cook in that era. In particular, he became fascinated with Fannie Farmer's Boston Cooking-School Cook Book. Published in 1896, it was the best-selling cookbook of its age-full of odd, long-forgotten ingredients, fascinating details about how the recipes were concocted, and some truly amazing dishes (as well as some awful ones). In Fannie's Last Supper, Kimball describes the experience of re-creating one of Fannie Farmer's amazing menus: a twelve-course Christmas dinner that she served at the end of the century. Kimball immersed himself in composing twenty different recipes-including rissoles, Lobster À l'AmÉricaine, Roast Goose with Chestnut Stuffing and Jus, and Mandarin Cake-with all the inherent difficulties of sourcing unusual animal parts and mastering many now-forgotten techniques, including regulating the heat on a coal cookstove and boiling a calf's head without its turning to mush, all sans food processor or oven thermometer. Kimball's research leads to many hilarious scenes, bizarre tastings, and an incredible armchair experience for any reader interested in food and the Victorian era. Fannie's Last Supper includes the dishes from the dinner and revised and updated recipes from The Boston Cooking-School Cook Book. A culinary thriller. it offers a fresh look at something that most of us take for granted-the American table.
Book Synopsis The Irish Bridget by : Margaret Lynch-Brennan
Download or read book The Irish Bridget written by Margaret Lynch-Brennan and published by Syracuse University Press. This book was released on 2014-06-05 with total page 266 pages. Available in PDF, EPUB and Kindle. Book excerpt: "Bridget" was the Irish immigrant servant girl who worked in American homes from the second half of the nineteenth century into the early years of the twentieth. She is widely known as a pop culture cliché: the young girl who wreaked havoc in middle-class American homes. Now, in the first book-length treatment of the topic, Margaret Lynch-Brennan tells the real story of such Irish domestic servants, providing a richly detailed portrait of their lives and experiences. Drawing on personal correspondence and other primary sources, Lynch-Brennan gives voice to these young Irish women and celebrates their untold contribution to the ethnic history of the United States. In addition, recognizing the interest of scholars in contemporary domestic service, she devotes one chapter to comparing "Bridget’s" experience to that of other ethnic women over time in domestic service in America.
