Book excerpt: This experiment was designed to evaluate the effects of ractopamine hydrochloride (RAC) on muscle quality and sensory attributes of three genetic lines of swine. Berkshire (n = 76), Duroc (n = 81), and high-lean commercial crossbred (n = 75) barrows and gilts were fed either a standard commercial diet or a diet supplemented with RAC (10 ppm). The trial was conducted using a randomized complete block design, with animals blocked according to litter, gender, and starting weight. Pigs were started on the experimental diet at approximately 85.1 kg and remained on test for 28 d. Pigs were harvested at a commercial abattoir and muscle quality measurements taken at 24 and 48 h post-mortem. Quality traits measured were visual firmness and wetness (24 h), pH (24 h and 48 h), visual marbling and color (48 h), Minolta color scores (24 h and 48 h), and water-holding capacity (48 h). Sensory attributes of the loin were assessed by a three-person trained sensory panel to subjectively evaluate juiciness, tenderness, and chewiness (sustained tenderness). Objective measurements of tenderness (Instron), percentage cooking loss, and chemically separated loin lipid content (intramuscular fat, IMF) were also obtained. The inclusion of RAC in the diet had no significant effect on muscle quality assessments, sensory attributes, or objective measures of palatability. Differences were observed between genetic lines for most quality and sensory traits, with Berkshire pigs generally being superior. Loins from barrows were firmer (P

Book excerpt: This study evaluated the impact of feeding ractopamine (RAC) on the economically important traits of three genetically diverse lines of growing pigs. A total of 232 pigs consisting of purebred Berkshire, (n = 76), purebred Duroc (n = 81), and a crossbred line (PIC, n = 75) were randomly allocated within breed and litter to one of two treatment groups. Pigs were allowed to consume a 17.6% crude protein, 1.02% lysine, corn-soybean meal based diet containing 0 or 10 ppm RAC (Paylean[Superscript Registered Trademark Symbol]). Pigs were placed on treatment diets for 28 d at a pen mean weight of 85.1 kg. Growth and feed utilization were monitored on a weekly basis while carcass characteristics were collected at a commercial abattoir at the end of the 28-d treatment period. Pigs fed RAC had improved (P

Book excerpt: Animal Agriculture: Sustainability, Challenges and Innovations discusses the land-based production of high-quality protein by livestock and poultry and how it plays an important role in improving human nutrition, growth and health. With exponential growth of the global population and marked rises in meat consumption per capita, demands for animal-source protein are expected to increase 72% between 2013 and 2050. This raises concerns about the sustainability and environmental impacts of animal agriculture. An attractive solution to meeting increasing needs for animal products and mitigating undesirable effects of agricultural practices is to enhance the efficiency of animal growth, reproduction, and lactation. Currently, there is no resource that offers specific knowledge of both animal science and technology, including biotechnology for the sustainability of animal agriculture for the expanding global demand of food in the face of diminishing resources. This book fills that gap, giving readers all the necessary information on important issues facing modern animal agriculture, namely its sustainability, challenges and innovative solutions. Integrates new knowledge in animal breeding, biotechnology, nutrition, reproduction and management Addresses the urgent issue of sustainability in modern animal agriculture Provides practical solutions on how to solve the current and future problems that face animal agriculture worldwide

This book was released on 2015-06-17 with total page 340 pages. Available in PDF, EPUB and Kindle. Book excerpt: How we produce and consume food has a bigger impact on Americans' well-being than any other human activity. The food industry is the largest sector of our economy; food touches everything from our health to the environment, climate change, economic inequality, and the federal budget. From the earliest developments of agriculture, a major goal has been to attain sufficient foods that provide the energy and the nutrients needed for a healthy, active life. Over time, food production, processing, marketing, and consumption have evolved and become highly complex. The challenges of improving the food system in the 21st century will require systemic approaches that take full account of social, economic, ecological, and evolutionary factors. Policy or business interventions involving a segment of the food system often have consequences beyond the original issue the intervention was meant to address. A Framework for Assessing Effects of the Food System develops an analytical framework for assessing effects associated with the ways in which food is grown, processed, distributed, marketed, retailed, and consumed in the United States. The framework will allow users to recognize effects across the full food system, consider all domains and dimensions of effects, account for systems dynamics and complexities, and choose appropriate methods for analysis. This report provides example applications of the framework based on complex questions that are currently under debate: consumption of a healthy and safe diet, food security, animal welfare, and preserving the environment and its resources. A Framework for Assessing Effects of the Food System describes the U.S. food system and provides a brief history of its evolution into the current system. This report identifies some of the real and potential implications of the current system in terms of its health, environmental, and socioeconomic effects along with a sense for the complexities of the system, potential metrics, and some of the data needs that are required to assess the effects. The overview of the food system and the framework described in this report will be an essential resource for decision makers, researchers, and others to examine the possible impacts of alternative policies or agricultural or food processing practices.
