Available in PDF, EPUB and Kindle. Book excerpt: The Bad Bug Book 2nd Edition, released in 2012, provides current information about the major known agents that cause foodborne illness. Each chapter in this book is about a pathogen—a bacterium, virus, or parasite—or a natural toxin that can contaminate food and cause illness. The book contains scientific and technical information about the major pathogens that cause these kinds of illnesses.A separate “consumer box” in each chapter provides non-technical information, in everyday language. The boxes describe plainly what can make you sick and, more important, how to prevent it.The information provided in this handbook is abbreviated and general in nature, and is intended for practical use. It is not intended to be a comprehensive scientific or clinical reference. The Bad Bug Book is published by the Center for Food Safety and Applied Nutrition (CFSAN) of the Food and Drug Administration (FDA), U.S. Department of Health and Human Services.

Available in PDF, EPUB and Kindle. Book excerpt: The first book to address the subject, Microbial Stress Adaptation and Food Safety emphasizes the implications of stress adaptation and its consequences for food safety. It covers the basic science, kinetics, mechanisms, assessment, and control of stress adaptation and its impact on the safety of foods produced by minimal processing or non-thermal technologies. World renowned experts in the field provide detailed accounts of problems associated with stress adaptation and suggest practical solutions for overcoming these problems.
Book Synopsis Biology of Salmonella by : Filipe Cabello
Download or read book Biology of Salmonella written by Filipe Cabello and published by Springer Science & Business Media. This book was released on 2012-12-06 with total page 456 pages. Available in PDF, EPUB and Kindle. Book excerpt: Salmonella infections of man and animals continue to be a distressing health problem worldwide. Far from disappearing, the incidence of typhoid fever in developing countries may be far higher than we had imagined. Salmonella food poisoning has increased to one of the major causes of gastroenteritis in the developed world, in itself also an indication that animal salmonellosis is still a major cause for concern. The situation requires a concerted multidisciplinary research effort in order to generate the new information and technology needed to assist in the control of these diseases. This concept was the driving force behind the NATO Advanced Research Workshop on "Biology of Salmonella" held at Portorosa, Messina, Italy, May 11-15, 1992. With additional support from the University of Messina, Medeva Group Research (UK) and the Swiss Serum and Vaccine Research Institute, the meeting brought together epidemiologists, microbiologists, molecular biologists, immunologists and clinicians. All the participants were actively working on different but related aspects of Salmonella and salmonellosis, with most of the leading laboratories worldwide being represented. The workshop provided an excellent opportunity for interdisciplinary consultation; it is not often that the topic of Salmonella and salmonellosis is covered to such breadth and depth in one extended meeting. Keynote addresses by invited speakers were interspersed with offered papers, many by younger members of the scientific community, and this volume presents the collated manuscripts of the lectures and extended summaries of the offered papers.

Book Synopsis Inhibition and Destruction of the Microbial Cell by : W Hugo
Download or read book Inhibition and Destruction of the Microbial Cell written by W Hugo and published by Elsevier. This book was released on 2012-12-02 with total page 835 pages. Available in PDF, EPUB and Kindle. Book excerpt: Inhibition and Destruction of the Microbial Cell focuses on the effects of various classes of toxic chemical agents on microbial cell. This book is organized into 14 chapters that cover the topics from two points of view: the agent and the target (the microbial cell). The introductory chapters are devoted to the inhibitory effects of elevating temperature and to the lethal effect of environmental thermal energy supply restriction on growing bacteria. A chapter focuses on the effect of various classes of antibacterial compounds, such as 4-amino-quinaldinium and 8-hydroxyquinoline derivatives, chlorhexidine, amidines, halogens, dyes, and nitrofurans. The subsequent chapters examine the effects of other chemical agents on microorganisms, including toxic gases, solutes, ions, and radiations. The book goes on examining the inhibition and destruction of specific microorganisms, such as Pseudomonas aeruginosa, Enterobacteriaceae, Mycobacteria, Cocci, bacterial spores, molds, yeasts, and viruses. The last chapter discusses the effect of the cultural prehistory of microorganisms upon their response to inhibition and destruction. This book is an invaluable resource for graduate research workers and scientists in pure and applied microbiology. This will also be a good reference for undergraduates reading specialized courses at honors level in microbiology or applied courses in food science and agriculture. Furthermore, it will be of interest to the medical profession, especially those involved in public health and pathology, as well as to scientists in the pharmaceutical industry.

This book was released on 2012-12-06 with total page 630 pages. Available in PDF, EPUB and Kindle. Book excerpt: Microbiology of Foods 6: Microbial Ecology of Food Commodities was written by the ICMSF, compris ing 19 scientists from II countries, plus 12 consultants and 12 chapter contributors. This book brings up to date Microbial Ecology of Foods, Volume 2: Food Commodities (1980, Academic Press), taking account of developments in food processing and packaging, new ranges of products, and foodborne pathogens that have emerged since 1980. The overall structure of each of the chapters has been retained, viz. they cover: (i) the important properties of the food commodity that affect its microbial content; (ii) the initial microbial flora at slaughter or harvest; (iii) the effect of harvesting, transportation, processing and storage on the microbial content; and (iv) the means of controlling processes and the microbial content. The section on Choice of Case has not been included in this 2nd edition, reflecting the changed emphasis in ensuring the microbi ological safety of foods. At the time of publication of Microbial Ecology of Foods, Volume 2: Food Commodities, control of food safety was largely by inspection and compliance with hygiene regulations, coupled with end-product testing. Such testing was put on a sound statistical basis through sampling plans introduced in Microorganisms in Foods 2: Sampling for Microbiological Analysis: Principles and Specific Applications (2nd edition 1986, University of Toronto Press).
