Book excerpt: Emily’s Book of Health Without Drugs In your letters I see a continuing concern for maintaining good health without a lot of prescription drugs and doctor visits. And, I have been asked, over and over, what natural remedies are available for relieving pain. This book offers me the opportunity to share some ways to better health that you may not be familiar with. I hope to encourage each of you to be more aware of your body and how it works. Many of us grew up hearing words like these every day: “Clean up your plate or no dessert.” “You can have a cookie if you’re good.” We now know that when food is used as a reward, it can lead to poor eating habits. How many times do we use food to soothe frazzled nerves, calm fears, or relieve tension? Too much of this and we are overweight! This volume is not a diet book, but it IS a book about diet, because good eating habits are of value for much more than weight control. We have tens of thousands of cells in our bodies, all dependent on what we put into our mouths. Good health requires us to eat a balanced diet, drink plenty of water, and reduce the amount of caffeine, fat, nicotine, and overly processed foods we eat. It is also important, now and then, to slow down a bit and relax. We all need to take time to enjoy a bit of laughter and appreciate those around us who make life worth living. This brings needed balance to our lives.

Book excerpt: Apple cider vinegar has a long history as a folk remedy for a variety of health conditions and, as a result, has achieved something akin to cult status among natural health enthusiasts. But many people don’t realize that there is a whole world of options beyond store-bought ACV or distilled white vinegar. In fact, vinegar can be made from anything with fermentable sugar, whether leftover juicing pulp or brown bananas, wildflowers or beer. With her in-depth guide, Kirsten K. Shockey takes readers on a deep dive into the wide-ranging possibilities alive in this ancient condiment, health tonic, and global kitchen staple. In-depth coverage of the science of vinegar and the basics of equipment, brewing, bottling, and aging gives readers the foundational skills and knowledge for fermenting their own vinegar. Then the real journey begins, as the book delves into the many methods and ingredients for making vinegars, from apple cider to red wine to rice to aged balsamic. Along the way, Shockey shares insights into vinegar-making traditions around the world and her own recipes for making vinegar tonics, infused vinegars, and oxymels.

This book was released on 2024-04-02 with total page 419 pages. Available in PDF, EPUB and Kindle. Book excerpt: How to Use this Book This book is based on my desire to preserve vegetables in ways that my family will eat and do that as efficiently as possible. When possible, I preserve vegetables in a meal-ready way. Instead of canning a bunch of carrot slices in quart (1-L)-sized jars when I bring in a large carrot harvest, I’ll make a batch of Canned Spice Carrot Soup and a couple of jars of Fermented Mexican Carrots. Then, I’ll use the tops to make Frozen Carrot Top Pesto for the freezer. The carrot soup is the only time-consuming item; the other two can be put together while the soup is processing. The first part of this book is an overview of food preservation methods: canning, both water bath and pressure canning, dehydrating, fermenting and freezing. You’ll find the basics of how to use these methods to safely preserve vegetables, but you won’t find details for every scenario that could happen while preserving vegetables. I’ve written these chapters with enough information to get you started preserving the harvest, but not so much information that it leads to confusion and information overload. The rest of this book is focused on growing and preserving the most popular vegetables and herbs that are grown in the home garden. Each vegetable has its own chapter and, in that chapter, you’ll find instructions on how to grow, purchase, can, dehydrate, ferment and freeze that vegetable. You will also find recipes that highlight the vegetable; most of these recipes are for preserving the vegetable, but some recipes use the preserved vegetable. Most of the recipes are written so that you’ll preserve small batches at a time, simply because I find that adjusting recipes to scale up is easier than scaling down. If your family likes a recipe, or if you have enough of one vegetable to make two batches of a recipe, just double the ingredients and it will work out fine. The exception to this is any of the jam or jelly recipes; don’t ever double a jam or jelly recipe or you run the risk of it not setting up. I hope you read through the whole book to get a vision for how these different preservation methods can work together to stock your pantry with food your family will eat. Then, when a vegetable is in season, I hope you reread that vegetable’s chapter and make a plan for preserving all of the harvest in a variety of ways. Of course, I hope that some of our favorite preservation recipes become your family favorites, too.

Book excerpt: During the 1930s in the United States, the Works Progress Administration developed the Federal Writers’ Project to support writers and artists while making a national effort to document the country’s shared history and culture. The American Guide series consists of individual guides to each of the states. Little-known authors—many of whom would later become celebrated literary figures—were commissioned to write these important books. John Steinbeck, Saul Bellow, Zora Neale Hurston, and Ralph Ellison are among the more than 6,000 writers, editors, historians, and researchers who documented this celebration of local histories. Photographs, drawings, driving tours, detailed descriptions of towns, and rich cultural details exhibit each state’s unique flavor. Published in 1941, the WPA Guide to Arkansas splendidly exhibits the varied environment of the Natural State. From the densely forested land in the Ozark Mountains and Arkansas Timberlands to the Mississippi River and the Arkansas Delta, the guide to the Land of Opportunity provides several photographs of, history on, and driving tours through the state’s grand geography.

Book excerpt: Before the introduction of the Standard Western Diet to their culture, the natives of the South Pacific islands were among the healthiest people in the world. Heart disease and obesity were unknown, infectious diseases were extremely rare, and few people suffered from dementia. Swollen gums and dental cavities were uncommon as well. Most remarkable was that the majority of the calories consumed by the islanders were found to come from coconuts. Today, medical researchers have rediscovered the many health benefits of this tropical fruit. The coconut: !--[if !supportLists]--¢ !--[endif]--Reduces weight & belly fat !--[if !supportLists]--¢ !--[endif]--Raises good cholesterol !--[if !supportLists]--¢ !--[endif]--Lowers blood sugar levels !--[if !supportLists]--¢ !--[endif]--Boosts memory & brain function !--[if !supportLists]--¢ !--[endif]--Protects your gums & teeth !--[if !supportLists]--¢ !--[endif]--Fights bacteria, viruses & more In this new book, best-selling health writer Larry Trivieri Jr. has created a clear and simple guide to understanding how the nutrients in coconut work and how you can best employ the different coconut products now on the market. The book begins with a history of the coconut’s use. It then discusses the science behind the fruit’s beneficial effects on the body, including the latest research regarding its impact on brain function. The chapters that follow focus on specific health concerns, from heart disease to high blood pressure to memory loss. Each chapter presents a description of the problem, how coconut works to combat the condition, and important considerations during treatment. This is followed by recommendations regarding the most appropriate form of coconut and proper dosage. Also included is a resource section that guides you to available coconut-based products. History has taught us that certain foods can be a boon to good health. Both history and medical research have proven that the coconut is one of these valuable foods. With no side effects, coconut products provide an inexpensive and safe way to enhance your health and improve your everyday life.
