These benefits included high milk prices and increased employment opportunities, and principally derived from the introduction of modern processing technology, such as ultra heat treated (UHT) milk processing plants. In the long run, however, milk prices plummeted, with the result that much of the milk produced was neither purchased nor processed, and some of the milk-processing plants had to close down."
